22.01.2022 HOMEMADE ORANGE AND VANILLA ICE BLOCKS Ingredients * cup freshly squeezed orange juice * cup soda water... * 1 cup plain Greek yoghurt * 3 tablespoons Beerenberg Orange Marmalade * 1 teaspoon vanilla extract Method In a pouring jug, mix the orange juice and soda water. Pour into 6 ice block moulds, and place in the freezer for 1 hour. Place the yoghurt, Beerenberg Orange Marmalade and vanilla in the pouring jug. Stir to combine before pouring into the ice block moulds. Add a pop stick to the centre, and place in the freezer for at least 4 hours to set. 13.01.2022 TAKA TALA TUESDAY BBQ AFRICAN SPICE TAKA TALA CHICKEN WITH GRILLED CORN SALSA Ingredients... * 8 chicken thigh fillets * bottle Beerenberg African Spice Taka Tala Sauce & Marinade * 3 corn cobs, husks removed * 3 tomatoes, diced * red onion, diced * continental cucumber, diced * bunch coriander, diced * juice of 1 lime * 2 tablespoons Beerenberg olive oil * salt Method Fire up the BBQ on medium heat. In a large bowl mix together the chicken and Beerenberg African Spice Taka Tala Sauce & Marinade. Set aside to marinate. Place the corn on the BBQ and cook until lightly charred on each side. Slice all of the kernels off of the corn and place in a large serving bowl. Add the diced tomato, onion, cucumber, coriander, lime juice, olive oil, and a pinch of salt. Toss to combine. Place the chicken on the BBQ. Cook with the lid closed for 5-7 minutes on each side until cooked through. If the chicken begins to burn too quickly, turn the heat to low. Once cooked, place the chicken on top of the grilled corn salsa to serve. 05.01.2022 SPICED RISOTTO WITH BEEF MEATBALLS TAKA TALA TUESDAY Ingredients For the meatballs:... * 500g beef mince * brown onion, diced * bottle Beerenberg African Spice Taka Tala Sauce & Marinade * 1 egg * cup breadcrumbs * Salt For the risotto: * 2 tablespoons butter * 1 onion, diced * 2 cloves garlic, chopped * 1 cups arborio rice * 1 cup white wine * bottle Beerenberg African Spice Taka Tala Sauce & Marinade * Salt * 1 litre vegetable stock * Small handful parsley, chopped * cup shaved parmesan Method Preheat the oven to 180C and grease a baking dish. Place all of the meatball ingredients into a mixing bowl and mix until well combined. Roll into 12 even-sized balls and place in the prepared baking dish. Place in the oven for 30 minutes, or until cooked through. Heat a large skillet or frypan over medium heat. Add the butter, onion and garlic and cook for 3 minutes, or until beginning to soften. Add the rice and cook for 2 minutes, whilst stirring. Add the wine and cook until the rice has absorbed the liquid. Add the Beerenberg African Spice Taka Tala Sauce & Marinade, a pinch of salt, and 1 cup of stock. Simmer the rice, stirring often, until the rice has absorbed the liquid. Continue to add the stock 1 cup at a time, until rice is almost cooked. If the rice is still firm after all of the stock has absorbed, add a splash of water and continue to cook. Once the rice is cooked, stir through the parsley and parmesan. Divide between bowls and top with meatballs to serve.



03.01.2022 CHEESY POTATO HASH BROWNS WITH STICKY FIG CHUTNEY Ingredients * 2 large floury potatoes... * 1 egg * salt and pepper * 2 tablespoons oil * 100g cubed cheddar cheese * jar Beerenberg Sticky Fig Chutney * fried eggs, to serve * crispy bacon, to serve Method Coarsely grate the potatoes into a clean tea towel. Twist the tea towel to squeeze out any excess liquid. Place the potato into a large bowl with the egg and a big pinch of salt and pepper. Mix to combine. Place a large frypan over medium heat and add half of the oil. Add four separate spoonful’s of potato to the fry pan and spread into a thin patty shape. Add a few cubes of cheddar and a dollop of Beerenberg Sticky Fig Chutney. Top each with another spoonful of potato so the cheese and jam are enclosed. Turn the heat to low and cook for 4 minutes on each side, or until crispy and cooked through. Repeat with the remaining potato. Place on a serving plate with the fried eggs and bacon to serve.
