25.01.2022 The Pils is kegged. Gorgeous aroma from Saaz dry hop. Look forward to a tasting in about a month. Meanwhile in storage at 5c.



25.01.2022 Next brew in the fermenter. A lovely Wheat Beer ready for those hot summer days. Fermenting at 23c so should be ready for kegging early next week.

25.01.2022 Injected CO2 intp second fermenter and transfer hose. Connected to the two taps and turned on. Filled okay to about 12 litres then it was just too slow. I then put the sanitised hose to the bottom of the secondary and continued. Dont know if I will do it again ???? Secondary now in fridge with Saaz dry hop for 2 days at 3c then I will keg it and cold lager at 3c for a month then try it. I believe it will be a very good Dortmunder.

24.01.2022 English Pale Ale update. 31c outside and a steady 21c in my coolroom/hotbox, brilliant.



24.01.2022 Just returned home from two weeks in the sunshine. I had a Pils lagering at 3c while I was away. Tomorrow is the day for kegging then a month or so maturing and ready for the warmer weather. APA is my next brew this Sunday when I will be teaching my nephew to brew.

24.01.2022 Just organising a starter for my next brew, an English Pale Ale. Going to use White Labs 023 Burton Ale yeast. Briess light malt extract and 150g of fuggles. Mini mash of course with some Crystal, Caramalt and flaked Barley.

22.01.2022 Brew day today teaching nephew to brew. Hoppy APA with 50g Galaxy for 60minutes, 50g Amarillo for 30 minutes, 30g Citra for 5 minutes then dry hop for last 2 days with 20g Citra. Brewed it before and it is delicious. Just ask Rusty.



22.01.2022 Just preparing my next brew. It is going to be an English Pale Ale. I am trying Northern Brewer for the bittering hops, Goldings and a small amount of Simcoe for flavouring then Goldings for aroma. 32.5 IBUs. 1.5kg amber and light malt extract plus 1kg of dextrose and 100g each of crystal and torrified wheat should give me around 5.5%. I also add a teaspoon of calcium sulphate to the fermenter to give the hops a bit more complexity. Using Saf SO4 yeast at 20c.

21.01.2022 Woohoo !!! Dortmunder kegged plus 8 bottles. Lets hope my first brew with proper lagering facilities works. No reason why not. I will try a bottle in about three weeks and see how it is maturing.

20.01.2022 Just skimmed the English Bitter. Bubbling away at 20c and smelling quite nice.

17.01.2022 English Pale Ale is bubbling away nicely. Good hop aroma from fermenter when skimming. I am going to dry hop with Goldings a day before I add the finings.



17.01.2022 Hooray !! I am off on holiday for two weeks. My Dortmunder and Wheat Beer will be ready for drinking when I return. Nice homecoming present I reckon.

17.01.2022 Brew done and fermenting. Was heading for 1057 so i think I did okay.

17.01.2022 Just brewed another American IPA with 50g Galaxy , 50g Amarillo, 30g Citra plus I will dry hop at SG 1012 with 20g Citra. Beautiful citrus aroma. I have done this one before and it is a great beer and very well received by my boozy mates.

15.01.2022 As I have been brewing now for over 30 years I no longer do many experimental brews. I know what I like. I have around 8 beers that satisfy my needs so brew day from now on looks like this :-

14.01.2022 I dont normally knock products, especially ones that I have used successfully before. I have got a Pilsener fermenting at present on 11c. For the second time I started with a White Labs that didnt work. The first was an ale yeast and I did a starter. The second was a Pils yeast and I followed the instructions and pitched at their recommended temperature. Neither worked so I reverted to the Saf range with no problems. I have been brewing for over 30 years and I think I know what I am doing. Has anybody else had problems with White Labs ???

14.01.2022 Well no more brewing for a month. Off to New Zealand north island. I suppose I will find a few breweries to visit. Pilsener to be brewed when I return.

14.01.2022 Hi all. Just brewed an English Bitter using SO4 yeast. Pitched at 25 and will have average of 20. SG was 1048 using 1.5kg Amber ME, 500g light ME and 1kg dextrose. Bittering hops were Willamette and Nth Brewer. Flavour hop Nth brewer and finishing was Willamette. I will dry hop at 1012 with 10g of Willamette. I have had too many Pale Ales lately so i thought a lower alc bitter should be next. I am heading for New Zealand early April and returning May 11th to tap my Belgian Dubbel that has been in the keg for 12 months. Really looking forward to that tasting.

13.01.2022 Finally got the production line on the go. Just bottled and kegged the American IPA at 1008, 6.7%. Now I have just finished brewing an English Pale Ale with heaps of Goldings. My stocks needed replenishing!!

12.01.2022 I think I have mentioned this before but I will post it again. I have just bottled and kegged the English Ale and after one day it is clear as a bell. My process now is very simple. When FG is attained take off heat and put fermenter into a cool place. One teaspoon of finings blended with cold water for 5 seconds then spread over the op of the brew, airlock and leave for TWO days before bottling. It really makes a difference that I can spot.

12.01.2022 What is my reaction to NZ beers ? Very very good, especially Tuatara pale ales and their very hoppy Pils. Didnt bother with any mainstream beers just stuck to the smaller breweries. All in all a very good range with pale ales being at the fore.

11.01.2022 Well the APA is kegged and maturing, I normally leave it for about a month before tapping. I thought I would do a session beer so Ordinary Bitter is fermenting at 22c. Mini mashed with Dark Crystal, Caramalt and Flaked Barley. Will be around 3.8%. Good session beer for the approaching warmer weather. All 6 kegs will be in use when this one is kegged. Going away again in the caravan in early November so I should get another couple of IPAs brewed before then plus a spirit fermentation. Dont want to run out do we !!!!!!!!

11.01.2022 One of the most important parts of brewing is temperature control. Doesnt matter how you do it just do it. The American IPA I brewed yesterday is sitting in 22 in a shed at 26 with outside at 31.5. I use a coolroom that is not switched on but it still seals out the heat.

10.01.2022 Thinking of brewing an ESB when I come home. Lots of Vienna Gold and Goldings hops would be nice with an SO4 yeast. Yummo.

10.01.2022 Macs bar on Wellington warfe. Wheat beer and an IPA. Both very nice beers. Good range on draught.

07.01.2022 Well another keg of English Pale Ale has just finished. Do I panic ? No sir !!!! I have a keg of American IPA just about ready and a keg of English Pale ale about a week away from being ready to drink. Woohoo. Timing is all important eh ???

07.01.2022 UK Pale Ale down to 1014 yesterday so I put finings in this morning. I have found that leaving for two days instead of one gives me a slightly clearer beer. Should finish around 1012 to give plenty of body. Goldings aroma is very good.

06.01.2022 Just skimmed the brown trub off the Wheat Beer. Open fermenting as suggested by the experts at 21c. I have stretched a muslin hop bag over the fermenter and it is in my coolroom so very well protected. Same system as I used last time.

01.01.2022 Just added finings to a Cascade Pale Ale and I noticed that I had three empty kegs. Great time to strip them down and give them a thorough clean and change some seals. These jobs can pass us by but they do need doing regularly. Looking forward to brewing an English pale ale next week with heaps of Fuggles.

01.01.2022 Well just to prove that I am human I have tipped my keg and 6 bottles of Wheat Beer down the drain. Tried to figure the problem but all I can think of is a bug in the fermenter. I am so meticulous but something has got through. First stuff up for many years. I believe that it pays to strip down ALL your brewing equipment and sanitise everything. Put that one down to experience and be more careful next time.
