25.01.2022 You cant go wrong with Pork Ribs on a Sunday night - especially when theyre marinated with ginger and hoisin! 1.5 kg rack of pork ribs 1 small onion, roughly chopped 8 garlic cloves, peeled... 15 cm piece of ginger, peeled & roughly chopped 160 ml hoisin sauce zest of 1 orange 4 tablespoons fresh orange juice 2 tablespoons sesame oil 2 tablespoons Shaoxing rice wine or dry sherry 2 tablespoons light soy sauce 1 tablespoon dark soy sauce 1 tablespoon tomato pure 1 teaspoon sherry or white wine vinegar 1 teaspoon whole black peppercorns Slice the racks of ribs into segments with 3 or 4 bones on each. Place all of the remaining ingredients into a food processor and whizz until you have a smooth consistency. Place the ribs into a large ziplock freezer bag and pour the marinade into the bag. Use your hands to make sure the ribs are completely coated in the marinade. Take the ribs out of the fridge and let them come to room temperature (this will take about 20-30 minutes). Preheat the oven to 200C. Line a large roasting tray with foil and place a roasting rack over it. Pour some boiling water into the tray, but the water should not touch the meat when on the rack. Otherwise, if your rack is not high enough, you can skip adding water to the tray (which helps to create steam to cook the meat without drying it out too much). Place the ribs onto the rack, but reserve the marinade. Roast for 30 minutes, and then turn the oven temperature down to 160C. Roast for a further hour, turning the ribs once or twice during this time to get an even colouring. Meanwhile, pour the reserved marinade into a small saucepan and bring it to the boil. Let it simmer at medium heat for about 5 minutes and until it has reduced and thickened slightly. Serve the ribs with the sauce drizzled on top. All you need: 170 g salmon fillets, skin removed... 2 tablespoons minced garlic 2 tablespoons fresh chopped parsley cup freshly squeezed lemon juice Olive oil cooking spray 1 teaspoon salt teaspoon cracked black pepper 4 bunches asparagus, woody ends removed 1 lemon, sliced to garnish All you have to do: Preheat oven or grill to high heat. Line a baking sheet with aluminium foil. Arrange oven shelf to the second top shelf. Place the salmon on a large baking tray. Rub each fillet evenly with the garlic and parsley to evenly coat; pour over the lemon juice. Spray with a light coating of olive oil spray and season with salt and pepper. Arrange the asparagus and greens around the salmon in a single layer, and place the lemon slices over the top. Broil (or grill) for 8-10 minutes, or until salmon is cooked through to your liking! All you need: Leg of lamb... 1/4 cup olive oil 1 tablespoon chopped fresh rosemary leaves 2 garlic cloves, crushed 2 cups good quality white wine vinegar cup sugar cup finely chopped fresh mint leaves All you have to do: Lamb: Preheat oven to 200C/180C fan-forced. Place lamb in pan. Combine oil, rosemary and garlic in a bowl. Rub half the oil mixture over lamb. Season with salt and pepper. Roast for 15 minutes. Reduce oven temperature to 180C/160C fan-forced. Roast lamb, basting with remaining oil mixture every 20 minutes, for 1 hour 15 minutes until cooked to your liking. Mint Sauce: In a heavy-bottomed saucepan, combine the sugar and vinegar. Bring to a boil over medium heat, then lower to a simmer and cook until the liquid has reduced by half. It should have a thick, syrupy consistency. Turn off the heat and let the sauce cool for five minutes before adding the mint leaves. Give it a stir and then pour into a bowl. Serve at room temperature. All you need: 1 tbsp sunflower oil 1 shallot finely chopped 2 garlic cloves, finely chopped... 1-2 tbsp Thai green curry paste, or to taste 125ml coconut milk 75g sugar snap peas, thickly sliced diagonally 85g cooked prawns 1 tsp soy sauce 1 tsp lemon juice Small handful coriander, chopped, to serve Noodles, to serve All you have to do: Heat the oil in a wok or large saucepan. Add the shallot and garlic, and stir-fry for 1-2 mins. Add the curry paste, coconut cream and 50ml water, and bubble for 2 mins. Add the sugar snap peas and cook for 1-2 mins until just beginning to soften. Add the prawns, soy sauce and lemon juice and heat through. Stir in the coriander and serve straight away with noodles.
