21.01.2022 Bay of Fires Clothbound Cheddar. One of Australia's great cheeses. With any great cheese there is usually a great history and story behind it. And Ian Fowler's Cheddar is no exception. The Fowler Family dates back to the early 1600 making them one of the oldest documented cheese makers in England, Ian’s brother Adrian still runs the family farm and cheese making facility to this day. ... Ian moved to Australia 10 years ago basing himself in the picturesque East Coast of St Helens Tasmania, and this is where his small herd of specially bred cows graze on lush green grass. Cheesemaking starts immediately after milking, the freshness and quality is an imperative part in all cheese making. The age old recipe and techniques are implemented with care and experience. The cloth bound cheese is rubbed with lard and the cheddar is maturated for anywhere from 12 months to2 years on pine boards uniquely permeating the cheese. The buttery yellow colour is dominant and the taste is what a true cheddar should be sharp, rounded, slightly salty and crumbly in texture. 14.01.2022 Fleur de Maquis. The beautiful ewe's milk cheese from th French island of Corsica. This classic cheese has been made on the island for over a thousand years. This handmade whole milk cheese is drained for three days in traditional baskets then salted and coated with aromatic wild local herbs, such as rosemary, thyme and fresh sweet chillies, all picked from the local maquis (shrubland).... It has a melt in the mouth texture and a sweet nutty taste. 07.01.2022 A couple of stunning new arrivals today. Petit Sainte Maure - a classic French goats cheese. Shaped as a log with it's wonderful ashed wrinkly geotrichum rind, inside is a citrusy, tangy, creamy cheese. And La Tur by @caseificioaltalanga an amazing mixed cow's, sheep and goats milk cheese from the Piedmont region of Northern Italy. It's a type of cheese called a Robiola, a bit like a brie but slightly funkier. These are looking utterly divine at the moment, open the containe...r, take a spoon and attack! Very reminiscent of a Tomme de Chevre from the Savoie in France, but made in the Yarra Valley. A pressed cheese with a thin, mottled, funky rind. 03.01.2022 Colston Bassett's Shropshire Blue. Isn't she pretty?! Made by @colstonbassettdairy who are one of the great Stilton producers, this is a wonderfully balanced, richly flavoured medium strength blue. The only major difference between Stilton and Shropshire Blue is the addition of natural annato coloring (annato is derived from a South American shrub) that gives the cheese a very mildly spicy flavor and a slightly softer texture than Stilton. Funded by a group of local milk prod...ucers and local cheese lovers, Colston Bassett and District Dairy was built in 1913 specifically to make Stilton in the Vale of Belvoir, Nottinghamshire, England. Colston Bassett are also one of the smallest Shopshire Blue dairies in the country. An absolutely delightful cheese made from ewe's milk that have been grazing on spring rye grass. Also we have Challerhocker (pronounced Haller Hocker). A Swiss hard cheese that's been brine and wine washed and matured in cellars for 12 months. ... Caveman blue selected by @willstudd from @roguecreamery A fantastic organic cow's milk blue from one of the world's great blue cheese producers in Oregan. And also another Will Studd selected. The Soumaintrain from Burgundy. A milder creamy cheese, which has been washed with Marc de Bourgogne to give it just the right level of funk. Seriously good.
