17.01.2022 Pina Colada Sorbet from our Fruity Frozen Summer Hamper Ingredients: 1 cup Creative Gourmet Frozen Pineapple pieces (defrosted) 1/3 cup Creative Gourmet Coconut Water... 4 tablespoons sugar 1/3 cup light canned coconut milk 75ml coconut cream Juice of lime Pinch of salt Method: Add all of the first 3 ingredients into a blender and blend until smooth. Add coconut milk and coconut cream in a bowl and stir with a whisk. Refrigerate the mixture until chilled (1-2 hours). Pour the mixture into an ice cream maker. Freeze the sorbet according to the manufacturer’s instructions. Store the sorbet in an airtight freezer safe container in the freezer until ready to serve #ChriscoHampers

05.01.2022 John West Thai Tuna Salad from @tablefortwo Ingredients: 3 x 70 gram cans of tuna, drained 1 medium red bell pepper, diced... 1/2 red onion, diced 1 cucumber, sliced thinly and diced 2 tablespoons sesame oil Juice of 1 lime Salt and pepper, to taste Sesame seeds, as garnish Method: In a large bowl, break up the tuna into smaller pieces. Mix in the red bell pepper, red onion, and cucumber. Pour the sesame oil on top and stir to combine everything. Lastly add the juice of 1 lime and stir again to combine. Salt and pepper to taste and garnish with sesame seeds before serving #ChriscoHampers

For the Ice Cream Cake Vegetable oil, for brushing the bowl 2L tub Peters Original Neapolitan 1 cup chocolate wafer crumbs (about 17 crushed wafers) 1 loaf pound cake For the Meringue 1 cup egg whites (about 6 large), at room temperaturePinch of cream of tartar 1 cup sugar Method: Make the ice cream cake: Brush a 3L metal bowl with vegetable oil; line with plastic wrap. Fill the bowl with scoops of vanilla & strawberry from Peters Neapolitan ice cream, alternating small and large scoops to create a mosaic of colours and shapes. Place a piece of plastic wrap on top of the ice cream; press down to close the gaps between scoops and even out the surface. Remove the plastic wrap, sprinkle the ice cream with the wafer crumbs and re-cover with the plastic wrap, pressing gently. Freeze until set, about 30 mins. Remove the wrap and spread the remaining chocolate ice cream in an even layer on top of the crumbs. Cut the pound cake into 12 inch-thick slices; completely cover the ice cream with the slices, trimming as needed (you’ll use about 23 of the cake). Cover with fresh plastic wrap and freeze until firm, at least 2 hours or up to 2 days. Make the meringue: Whip the egg whites and cream of tartar in a large bowl with a mixer on medium-high speed until foamy, about 2 mins. Gradually beat in the sugar on high speed until the whites are glossy and hold stiff peaks. Remove the top layer of plastic wrap, then invert the cake onto a parchment-lined baking sheet. (If necessary, let the cake stand overturned until it slips out.) Remove the rest of the plastic wrap and cover the ice cream completely with the meringue, making the dome-shaped top slightly thicker than the sides. Form swirly peaks in the meringue using the back of a spoon. Freeze for at least 3 more hours. Preheat the oven to 260oC. Bake the cake until the meringue peaks are golden, about 4 mins, or brown the meringue with a blowtorch. Let the cake soften at room temperature for 5 to 10 mins before slicing. Freeze any leftovers #ChriscoHampers

01.01.2022 John West Salmon Macaroni Salad from @simplyrecipes Ingredients: 1/2 pound (about 2 cups) dry macaroni pasta Salt... 2 (7-ounce) cans salmon 1/2 cup mayonnaise (plus more to taste or for added smoothness) 1 teaspoon mustard 1 teaspoon lemon zest 1 Tbsp lemon juice 1/3 cup chopped shallots, red onions, or green onions (with onion greens) 2 Tbsp chopped fresh parsley 1 Tbsp chopped fresh dill (or 1/2 teaspoon dried dill) 2 stalks celery, chopped Tabasco to taste (we used about 10 drops) Freshly ground black pepper Method: Boil the macaroni pasta: Bring a pot of water (2 quarts) to a boil. Add 1 Tbsp salt. Add the dry macaroni pasta and cook, uncovered, in a rolling boil for about 10 minutes, or until the macaroni is al dente (slightly firm). Remove from heat, drain, rinse briefly in cold water (macaroni should be still warm after rinsing) and drain again. Mix salmon and other ingredients in a large bowl: In a large bowl mix the salmon, mayonnaise, mustard, lemon zest, and lemon juice. Mix in the shallots, parsley, dill, and celery. Stir in drained, warm macaroni: Mix in the cooked macaroni while it is still warm. Add Tabasco and freshly ground black pepper to taste. As the macaroni absorbs the mayonnaise, you may need to add some water to the salad to keep it from being dry. Adjust seasonings. Chill before serving #ChriscoHampers
