25.01.2022 In the pantheon of great Puligny-Montrachet estates Etienne Sauzet is the Kaiser. With their enviable vineyard lineage, these wines hold court. Perfectly balancing power and elegance, they boldly stand alongside Leflaive, Carillon and Jobard as favourites of this great village. Meticulous work in the vines, means plants here achieve low yields with small berries, vital to ensuring the dense concentration of flavour for which these wines are known. Oak never goes beyond 4...0% new barrels, so as not to overpower this gloriously captured fruit. Sleeping in our cellars, weve uncovered a small parcel of these special wines. The 2016 Champ-Canet 1er cru ($372) and 2016 Les Combettes 1er Cru ($483) are the two finest 1er crus in the line up. Vineyards on the border with Meursaults Perrières and Charmes-Dessous, respectively. Both showing richness of fruit, minerality and precision, the Les Combettes is a triumph with its more exotic, densely honeyed generosity. Their rosé is loved worldwide, and it was lulu’s favourite. So if you’re lucky enough to have a bottle of Tempier, there’s never been a better moment to open it and honour this doyenne. To Lulu!

21.01.2022 And just like that our spring weather turns, calling for a legendary dark beer. Chimay Blue ($18, 750ml) is a beer by every definition. However if you've never experienced some of the great trappist tipples the flavour may be foreign to you. Brewed by Monks since 1862 in the eponymous town in south west Belgium. It tastes like dark rye toast with the faintest hint of Vegemite all highlighted with subtle aromas of dried flowers and ripe stone fruit. Best served at 10 c in a wide rimmed glass to enhance the flavour and texture. you need to taste this, at least once in your life. We’ve got a few bottles, let us know if you’d like one.

More smoky and robust in its flavour, its produced by Verde, a maker in the ultra-traditional style. Located in Tlacolula in the south-west corner of Oaxaca, their Mezcal is made entirely from Espadin Agave. ... 04.01.2022 While we are elated to have opened the doors to see you all again, one of Spring Street's best will be missing. Our loyal and beautiful friend, Elizabeth Alexander has passed away, aged 92 years. Her tenacious spirit for life and a hot coffee were indefatigable. She could talk stock prices and current news events effortlessly - you knew not to get in the way of a copy of the Fin Review (or a handsome man) when she was around. She lived her life with courage and convict...ion, and would offer a measured opinion on most things (and you didn't even need to ask her). We loved her company, quirk and sense of humour. We'll miss her terribly, as we're sure many of our other regulars will too. Our deepest sympathies go out to her many children, grandchildren and great grandchildren, who she used to gather round her at CWS and The European. She was hands down the finest teetotaller we know. So here's to you Elizabeth - you're a true testament to a life well lived. See more
