14.01.2022 Adam, When we opened Dovetail on Overend in 2014, Rejoice and I could see there was a big gap in the market. Brisbane already had a lot of great cafes, but we found that often cafes were either food focused or coffee focused. It was really hard to find cafes that were equally focused on both. As a coeliac, I had a deep understanding of all the challenges people like me were faced with when visiting new cafes. There were so many times that I paid extra for a smaller and... lesser quality dish, plain GF friand, or ended up feeling unwell due to a cafés poor handling or understanding of GF principles. We felt we could do much better! We decided long ago that we would offer next level quality gluten free options with generous sized servings and we would never charge extra for gluten free, ever. We’re not 100% gluten free with our food menu (although we are with the amazing treats that Rejoice bakes). But we knew from experience that if the venue can’t cater properly for dietary needs, then it can potentially ruin the whole experience for everyone. Conversely, when everyone in a group enjoys there experience, there's a really good chance they'll come back again. So one of our core philosophies from Day 1 was that we would really cater for coeliacs (a constantly growing community) as well as other food intolerances and dietary preferences, and we would make the process simple and unobtrusive. That way we can just allow our guests to relax and enjoy their experience. After 6 years of loving our Norman Park family, we’re preparing to open our second location in Highgate Hill in mid-November! We’ll be able to offer more seating, a bigger menu, gluten free high tea and so much more! Stay tuned for launch details coming soon

09.01.2022 Rejoice, Growing up in the Philippines, my family loved to both cook and eat out. My Dad was a great cook and, whenever I cook now, I always think of him, our home and the dishes I enjoyed in my childhood But I only learned how to cook and bake when I came to Australia in 2007. When I married Adam, I had to learn how to cook as he is coeliac and I wanted him to experience the food I enjoy eating, especially my favourite Filipino dishes. One winter night I decided to... make him a gluten free apple pie. When I served it to him for the first time, his eyes started to well up because he never thought he would be able to enjoy apple pie again From that day on I vowed that I would learn how to make more gluten free food and desserts! I was self-taught and finally in 2015, one year after we opened Dovetail on Overend, I went to Patisserie school to become a qualified pastry chef. Since then, we’ve gradually added more Filipino influences to our food and dessert menus, and I get a special kick out of seeing our customers really enjoy something completely new to them that I’m able to prepare gluten free!
