25.01.2022 Hi Guys Just a small note , I forgot to add one main ingredient from yesterday’s Apple Cranberry Recipe - 1/4 cup pure maple syrup.... Recipe has been amended If you change this particular ingredient to sugar free maple, it will significantly alter the taste of the finished muffin - however you can if you choose to. So sorry for the error, I do make mistakes sometimes Being Human



25.01.2022 Very simple lunch today with just what I had in the pantry & fridge, I so need to go shopping , I’ve literally had very little time, but I find that with just some basic ingredients you can still make something nourishing. Bacon Broccoli & Rice Slice Serves 8... 1 packet sunrise organic steamed brown rice pouch 6 eggs 1 Tbls Masterfoods tuscan seasoning 1/4 cup grated Parmesan cheese 200g bergs 97% fat free bacon 1.5 cups fresh raw broccoli chopped finely 1 small red onion diced 1 cup frozen corn Salt & Pepper Mix all ingredients together, pour into a lined square deep baking dish. Bake at 180c for 25-30 mins Cut into 8 6 sp 3p 1sp I served it with salad including olives for an extra smart point on all plans. This slice is deeper than the picture shows and very filling

25.01.2022 My very first Brand NEW COOKBOOK recipe Id like to share with you all are these delicious little Cinnamon Apple Tartlets. A simple way to enjoy little bites of apple cinnamon and sugar together that taste like apple pie. The bases can be pre made and stored until youre ready to use them, they keep very well.... Change these up by making them banana banoffee flavour as well! Fill the cups with banana, salted caramel & plain yoghurt. The only limits are your own imagination when it comes to food and flavours! But apple & cinnamon sugar will always be my first love. 23.01.2022 Apple & Walnut Muffins Some of you would remember the last Cooking At Home Demo I did with WW was a Pear & Walnut Slice (recipe on the app) Id like to showcase a couple of variations to that slice.... Today Ive made them into muffins and used fresh sweet pink lady apples instead of pears. These muffins are refined sugar free and because Im using pink lady apples + Medjool dates, the sweetness is perfect. You can also use over ripe banana and of course the original pears. Tinned fruit is perfectly fine, but when you use fresh fruit, the flavour is much more intense. These freeze AMAZINGLY well. 1 cup All Bran 1 cup unsweetened vanilla almond milk 1 cup chopped medjool dates 1 cup of Fresh Pink Lady Apple (or 2 bananas) 1 Tbls pure maple syrup 1 egg 1 cup self raising flour 1 tsp vanilla essence 1/3 cup chopped walnuts Add bran, Apple or banana, dates, maple syrup & egg into a bowl, pour over milk, let steep for 15-20 mins. Add 1/2 the walnuts, and 1/2 the flour, fold in, add the other half of flour, fold in. Spoon into a lined rectangle slice pan or muffin tin or WW loaf pan, sprinkle over remaining walnuts. Bake at 160c fan forced 20-25 mins Can use WW loaf silicone form cut into 8 - or make into a slice - 4sp all plans makes 10 normal sized muffins - 3sp All Plans

23.01.2022 My lightened up version of Delicious Chicken Caesar Salad Cafe salads can cost you high smart points, so I love recreating my favourites at home! Today its a warm salad I wanted I had some precooked chicken breast grilled on the BBQ left over, and pre boiled eggs in the fridge as I always do , I bought some sourdough bread that has gone stale so I cut up a slice and tossed it in 1tsp of garlic oil salt & pepper, and air-fried them until crunchy. PERFECT LUNCH... 100g cooked grilled chicken breast 1 hard boiled egg 1 Tbls Parmesan cheese 25g berg trimmed bacon grilled 1 x 25g slice sourdough bread 1 tsp garlic olive oil Salt/pepper Cos lettuce + Thinly sliced onion + Fresh parsley sprigs Dressing 1tbls plain Yopro yoghurt Salt/pepper 1/2 tsp djon or French mustard 1/4 clove grated garlic A squeeze of Lemon juice 8sp G 4sp B 4sp P

22.01.2022 Chicken Waldorf Salad -Repost- One of my favourite salads that comes in second to Chicken Caesar is Chicken Waldorf. A springtime favourite. ... At cafes or restaurant takeaway, its quite heavy on Smart Points. I enjoy my lightened up version regularly, and on this beautiful Spring day, its just what I feel like. Ive updated the Smart Points for all plans. Serves 1 150gms cooked chicken breast -grilled or poached- 2 medjool Dates chopped 1 small red apple sliced 2 sticks celery chopped 2 Tbls flat leaf parsley chopped 4 cherry Tomatoes halved 15gms walnuts 25g Sliced red onion Dressing 3 Tbls plain 99% fat free yoghurt - I use Yopro plain high protein - 2 Tbls lemon juice 1 tsp wholegrain mustard Salt & Pepper (Water to thin mix if needed) Mix all dressing ingredients together and set aside. Shred, or chop chicken, add all other ingredients and toss together. Add dressing and toss again, spoon mixture over a bed of fresh rocket & spinach. 3 WW SP 7 WW SP

21.01.2022 Another Of My Cookbook Recipes Id love to share with you today are my easy lunch or snack fritters. These freeze well too, so batch cooking fritters are always a big plus. Cheesy Chickpea and Sweetcorn Fritters ... 1 x 400g size can, chickpeas drained 120g White self-raising flour 2 medium Eggs Almond milk unsweetened cup(s), (60ml) Carrot 1 medium, Brown onion grated small, diced 97% fat-free cottage cheese cup(s), (80g) MasterFoods Seasoning, Roast Vegetable Sprinkle 1 tbs Fresh flat-leaf parsley cup(s), plus extra to serve Corn kernels, (200g) (1 cup) 1 Tbls Light sweet chilli sauce 100g 99% fat-free plain yoghurt Lemon 1 medium, wedges to serve Instructions Process chickpeas, flour, eggs, milk, carrot, onion, cottage cheese, vegetable sprinkle and parsley in a food processor until smooth. Add corn and pulse until well combined, keeping some texture. Heat a large non-stick frying pan over mediumhigh heat. Drop cup (60 ml) amounts of batter into pan to make 4 fritters. Cook for 3 minutes each side or until golden and cooked through. Repeat to make 12 fritters in total. Meanwhile, combine sweet chilli sauce and yoghurt in a small bowl. 20.01.2022 Pimms Cranberry Crush Tis the season to be Jolly ... have a couple of these to fa la la your Christmas Day! Or in my case ... week I don’t drink alcohol often at all, I’m not a fan of the taste, but Pimms .... I do love! I fell head over heals for Pimms when I was in London & this delish drink I enjoy as a mixer for Christmas.... It’s subtle and absolutely refreshing, which is why it’s easy to drink! I hope you enjoy is as much as I do! Cheers Everyone Merry Christmas 300ml Pimms 1 ltr diet lemonade 400ml light cranberry juice 1 large orange sliced 2 apples sliced (1 green one red) 2 cups frozen cranberries - available only this time of year in supermarkets freezer section- 1/2 bunch fresh mint Pour everything into a jug, add fruit & mint, stir & chill. 20.01.2022 Im Seriously in love with our newest little family member. Hes just so adorable I wanted to share him with you all. Everyone Meet Teddy ... Hes my parents new puppy and imma gonna squish and love him soo much! Hes going to be my new walking buddy when he gets older and help me stay active fur-ever. I am Absolutely besotted by him Teddy is a very much loved little boy Our last little dog (Marvin)was my sisters , we inherited him after she passed away at the young age of 24 from cancer, when we lost Marvin, it felt like we lost the last bit of her. Its taken 3 years after his passing for my Mum and Dad to want another fur baby to love. And Teddy has filled the hole that was left in all our hearts. Welcome to our family little one. - Teddy is a pure bred miniature Poodle-

20.01.2022 Spinach & Ricotta Stuffed Field Mushrooms These bad boys are ready for the oven & smell amazing before they even get cooked! I think these would make a great meal on their own with a side salad as a light lunch, and Id eat two.... But these tonight will go alongside some steak and other roasted veg, and will have just one. If you omit the bacon, these are completely vegetarian and just as delish. 6 field mushrooms peeled and centre stalks removed 2 cups of baby spinach finely chopped 1/4 cup grated Parmesan cheese 2 tsp fresh lemon zest 1 egg 3 spring onions finely diced 1/2 cup semi sundried tomatoes (no oil) 200g reduces fat ricotta (from the deli) 30g Berg bacon 97% fat free (Aldi bacon) 1 tsp tuscan seasoning 1/4 cup fresh flat leaf parsley chopped Salt/pepper + 1 x 3 second oil spray Preheat oven 180c Combine all ingredients into a bowl -minus mushroom- and mix well. Stuff the mixture evenly into the mushrooms, spray with oil spray and cover with foil. Bake for 15 mins, remove foil and bake a further 15-20 mins or until mushrooms are tender. 1 for 2sp 2 for 3sp All plans

19.01.2022 Salmon Buddha Bowl Its pretty trendy to call a simple salad a Buddha bowl these days, but this meal is simply that. If you dont like salmon, then absolutely swap it out for some chicken breast, equally delicious, and the smart points may reduce depending on how much you have, and it may remain the same smart points on some colour programs. ... This is such a beautiful Spring dish that I hope you may like to try and enjoy. 50g Slendier Pasta, Edamame Bean Spaghetti cup(s), (75g), diced pumpkin cup(s), (60g) frozen green peas 50g Skinless salmon fillet 1 cup (20g) Baby spinach leaves 1 Boiled egg 1 medium, hard boiled, halved 6 individual, cherry tomato halved 75g Chickpeas, canned, rinsed & drained tsp, black sesame seeds Instructions Cook spaghetti in a saucepan of boiling salted water, following packet instructions. Drain. Meanwhile, steam pumpkin, peas and salmon until vegetables are tender and salmon is cooked to your liking. Drain. Season vegetables with salt and pepper. Arrange spinach, pasta, steamed vegetables, egg, tomatoes and chickpeas in a bowl. Flake salmon and add to bowl. 19.01.2022 A Day On My Plate I do love sharing with you what I eat in a day, it’s been a busy week again, but I had an Italian Rice Bake (I’ve included the recipe below for everyone again) in the feeezer I pulled out last night so dinner was sorted yesterday for today. Batch cooking as much as I can really helps during the week. ... Breakfast Choc Weet-Bix Mug muffin Cookbook recipe page 40 G 6 B 3 P3 Lunch Salmon Salad Bowl G 9 B 7 P 3 Dinner Italian Rice Bake Recipe below G 8 B 8 P 8 Dessert Vanilla Yoghurt Panna cotta with Berries Cookbook recipe page 179 G 3 B 2 P 2 26/30 G 20/23 B 16/16 P Italian rice bake A great bake and freeze dish as well to double batch make. 500gms Lean Pork mince 1 cup uncooked arborio rice 400gm Chopped tin tomatoes 1 1/2 Tbls balsamic vinegar 1 Tbls tomato paste 2 tsp dried Italian herbs 1 onion diced 2 cups beef stock 3 garlic cloves grated 1/4 cup fresh flat leaf parsley chopped 1 cup shredded mozzarella cheese Salt & pepper Heat a nonstick pan, cook onion, mince & garlic until browned. Add all other ingredients minus the cheese. Bring to the boil and simmer for a few minutes. Transfer mixture into a Pyrex dish (2.6lt capacity) sprinkle with cheese. Cover with foil and Bake at 180c for 45 minutes Remove foil for the last 10 minutes of cooking Serves 6 8 SP serve all Plans Note you can use half lean pork mince and half lean veal mince in this recipe sp remain the same.

19.01.2022 Crispy Panfried Pumpkin Gnocchi with Bacon & Asparagus Have you ever tried pan frying gnocchi? It’s delicious and crispy on the outside and pillow soft on the inside, perfect paired with crispy bacon & asparagus. This dish isn’t saucy but sprinkled with Parmesan cheese -optional but not in my house - it’s definitely a winner.... You can certainly add ingredients to this one like mushrooms or broccoli , keep it vegetarian by omitting the bacon. This is tonight’s dinner 500g Grand Italian Pumpkin Gnocchi [available from the dairy section in Coles or woolies - fresh pasta] 2 tsp garlic olive oil - you can use plain 1 garlic clove grated 2 tsp tuscan seasoning 1 Tbls flat leaf parsley 2 bunches fresh asparagus diced 100g Bergs short cut bacon 97% fat free diced [Bacon available from Aldi] Heat a non stick pan over medium heat, add olive oil, diced bacon [ pan should slightly sizzle] & asparagus, cook until bacon is crisp, season with pepper and tuscan seasoning, add garlic and stir for 30 seconds, add gnocchi straight into the pan from the packet and toss for 5-6 minutes, take off the heat and sprinkle with flat leaf parsley - this is optional - Serve hot. - for extra zing, add 2 tsp of lemon zest over the top of the cooked warm gnocchi before serving. Serves 4 7sp all plans

18.01.2022 Apple Pancakes for a breakfast Win I made my apple recipe to make bigger pancakes today because well ... HUNGRY Normally Id get 8 pancakes but today I made 5, bit higher in smart points but worth it.... You can find my apple pancake printable recipe on my website www.feedmehealthy.com.au or Original recipe Soft fluffy Apple Pancakes Serves 2 3 Tbls self raising flour 1 tsp baking powder 2 eggs 1/4tsp Cinnamon 1/2 cup mashed cooked apple (I used tin apples) Pinch of salt . Whisk together and make pancakes using 2 level Tbls batter for each pancake, flip when bubbles just start to appear on top. Dont overcook them, they only need a minute on each side Makes 8 Serve with plain no fat yoghurt, fruit and maple syrup of choice. 5sp 2sp

17.01.2022 Chicken Nourish Bowl For me this meal is as balanced as it gets , protein, good fats, carbs, vegetables and deliciousness. Fresh healthy flavour bowl.... Sometimes I grill the chicken , sometimes I poach its, sometimes I roast the pumpkin and sometimes I steam it, you can add a variety of seasonings to flavour the chicken or pumpkin. Today Ive kept it simple and plain and I might add a dressing. Best of all its very simple to custom your bowls to what you like to make it your own! Mine is yummy but it may spark some ideas for what you might like in yours. 1 cup steamed butternut pumpkin 150g cooked grilled or steamed chicken breast 1 1/2 cups baby spinach & rocket leaves 3 radishes sliced thin 1/2 baby Lebanese cucumber sliced thin 1/3 cup edamame beans 1/3 cup boiled brown rice 40g Avocado Salt + Pepper 1/2 tsp black sesame seeds Steam or grill chicken using a microwave steamer or griddle pan. Steam Butternut pumpkin using a microwave steamer, & boil rice as per packet directions. Assemble your bowl by adding spinach & rocket to a bowl, then arranging all other elements on top. -Generally i have steamed or grilled Chicken, pumpkin & rice already cooked and in the fridge as part of Sunday prep day, I reheat as I need - You can however make everything fresh. When using a microwave, meals are quick enough to do from fresh. Serves 1 8SP 6SP3SP

17.01.2022 Hi Everyone Ive noticed quite a few new followers lately, so I thought Id give you a big warm welcome and explain a bit about How WW works for me? @ww_aunz My Name is Anna and i am a ... [WW Ambassador AUNZ] I used to be a Size 28 now I am a Size 12 I have gone from 142kg to 74kg [current weight] I chose to Make small habit changes a little at a time & set small goals and tick them off as i conquered them. I set myself 5kg mini goals, it wasnt as overwhelming as looking at the big picture! Losing half my body weight, was a big task. Setting mini goals made it achievable. Patients Consistency and Perseverance is what got me to goal. It took 4 years of active weight loss doing that. I knew I didnt have to be perfect 100% of the time, I just had to be consistent, I made mistakes but I tried to learn from them. The reason Ive been able to maintain my weight loss is because I am still consistent in everything I do. Tracking , moving & making good choices most of the time. Here are a few examples I do to help keep me living a healthy lifestyle. I track my food intake and eat a balanced diet . I weight train 3 days a week & walk for mental health & rest 2 days . I prep & eat most of my own meals . I drink at least 2-3ltrs water daily . I try to get enough sleep . I never cut out any food group . I enjoy treat food working it into my plan which avoids binge eating . If I go away, I enjoy my time, but get straight back on track when I get home . I weigh in monthly . I enjoy living a healthy lifestyle . Consistency is the key . I love sharing my journey, my wisdom, my encouragement to you and my recipes to make all our journeys achievable, and enjoyable. Giving back to the community is my way of saying thank you for all the support I continue to get. . Always remember - You can do anything you put your mind to. You got this - You can absolutely achieve your own goals too, were all here to help, especially me. 16.01.2022 I couldn’t imagine doing life with anyone else but this guy!! Today is our 21st Wedding Anniversary. He’s the best support I could ever ask for.... The best day of my life was the day I said I DO. We had it all in front of us that day, witnessed by all the people we loved. What a journey we’ve been on so far, we’ve loved and lost along the way, we’ve made a beautiful son together, we’ve laughed and cried both sad and happy tears. I can’t wait to see what lies ahead for us, whatever comes our way, we’ve always faced it together. I’m just so happy and blessed to be growing old with him. When you find someone special you find your why!

16.01.2022 This is a perfect example of a throw together lunch with what I have in my fridge pre prepared so it took me all of 5 mins to make. Pumpkin - Steamed yesterday Brown Rice - 1/2 cup - cooked Mini Sweet Chilli meatballs - 6... Broccoli - Steamed yesterday Cherry tomatoes Halved Fresh Spinach leaves 5sp 4sp 0sp Mini Sweet Chilli Meatballs 500g chicken breast mince 1 Tbls light sweet chilli sauce 1 Tbls mixed herbs -dry or fresh- 1 small red onion finely diced 1 tsp garlic olive oil Combine all ingredients minus the oil. Using a cookie scoop , or wet hands roll mix into 30 mini balls - the mixture is quite delicate, I prefer to just scoop straight into a pan heated with oil and cook for 2 mins either side, carefully flipping. You can also bake these and spray with oil. 0sp 1sp for 6 on

16.01.2022 Jube Jelly Lollies 0 Smart Points - All Plans It’s been a hot minute since I made a batch of these! My all time special Jube treats and just in time for Halloween ... They have the texture similar to Gummy Bears, maybe just a little firmer. Great little treat for Zero Smart Points, easy to make! So easy the kids can get involved and with only 3 ingredients. Here’s How To 1 Sachet of diet Jelly - I use aeroplane jelly lite- -any flavours you like - 5 gms of powdered gelatine 1/2 cup boiled kettle water Mix ingredients together with a whisk, then fill silicone chocolate moulds. Refrigerate for 1-2 hours before popping out of moulds. Store in the fridge - can be eaten straight from the jar, or at room temp. I bought my Moulds from Kmart

16.01.2022 Loaded Breakfast Tortilla Pockets I found these new Old El Paso Tortilla Pockets in the supermarket this week. They would typically hold taco or borrito filling, but I decided to make breakfast ones, and let me tell you they didnt disappoint!... Perfect! To stuff them, I stood the warm tortillas - microwaved for 20 seconds - in a tall glass to fill them as it was easier than trying to hold them! - clever idea that worked a treat - The tortillas themselves are 3sp each (28g serve) - weigh them just in case! Ive filled them with - 1 slice of bergs 97% fat free short cut bacon - from Aldi - Fresh spinach Fresh Tomato Grilled mushrooms 2 x Medium eggs + 2tbls water whisked & scrambled mixed with more spinach - cooked with no oil - Layer the tortilla starting with spinach, then fill the rest with bacon on the side, add eggs, top with mushrooms + fresh tomato - or you can cook the tomato too. So Delicious for something different 3sp 6sp Each includes fillings

14.01.2022 Cabbage Rainbow salad with Vegetable Gyoza & Dressing I absolutely love dumplings, and found these ones in the dairy section at Woolworths, so I don’t need to fuss with defrosting or making them because you know, time saving is a real thing these days! Making your own will definitely bring the points down but these are so filling I’m happy to spend the smart points on the ready made ones. So delicious 1 cup red cabbage sliced finely... 1 cup Chinese cabbage sliced finely 1 cup snow peas sliced lengthways 1 carrot thinly sliced 1/2 tsp black or white sesame seeds 15g salad edamame beans 4 x Chan’s Yum Cha vegetable vegan Gyoza Dressing 1 Tbls soy sauce 1 tsp sesame oil 1 tsp white vinegar 1/2 tsp pure maple syrup Assemble salad, steam Gyoza according to packet instructions, I used my Tupperware steamer and cooked for 5 mins. Place over the salad and sprinkle with sesame seeds. Mix together dressing components, pour over the top. Serves 1 8sp all plans

13.01.2022 Fancy a Friday Quick Bake for the week end? Apple Cinnamon Oat Bars/Slice These bars are a SOFT BAKE BAR and absolutely deliciously cinnamony !... Not overly sweet but sweet enough for my taste. Zero Smart Points on Purple but still low smart points on green & blue. Lovely with a cuppa. 2 cups rolled oats 2 tsp cinnamon 1/2 tsp baking powder Pinch of salt 2tsp queens pure maple syrup 1/2 cup pureed cooked apples (Cannned is fine) 1 fresh pink lady apple diced finely 1 egg 1/2 cup Unsweetened Vanilla Almond milk (or equivalent sp choice of milk) Add 1 cup of rolled oats into a mini food processor and blitz into quick oats. Add to a bowl with remaining oats and all dry ingredients. In a jug whisk together all wet ingredients, add it to dry ingredients and fold in diced apple. Place batter into a rectangle silicone form , I use my Tupperware one, or baking dish (lined) Bake at 180c for 30-35 minutes Cool. Cut into 10 2 SP 0 SP each

11.01.2022 Chargrilled lamb open sandwiches Such a delicious lunch today. I pulled out the Griddle pan to whip these up , you can also use a BBQ. It was so very tasty for something a bit different.... Ive made 2 and its pointed for one serve, double the quantity for 2 people. 1 slice (25g) sourdough bread toasted 1 medium (80g) lamb leg steak 1 Tbls hummus -mines homemade- 1 x thick sliced eggplant grilled 25g Roasted capsicum -store bought- & not in oil Cucumber ribbons made with a vegetable peeler + rocket leaves 1/2 tsp Masterfoods lamb seasoning 1/2 tsp mixed herbs 1 tsp garlic olive oil Slice eggplant, season with mixed herbs. Season lamb. Heat a non stick griddle pan, add garlic oil, spread the oil around the pan with a pastry brush, cook the eggplant on both sides until tender, remove from pan, & set aside. Add lamb to the pan and cook on both sides for 2 minutes -let rest- In the meantime, toast bread, then spread with hummus, top with eggplant, capsicum strips, lamb, rocket + cucumber. Salt & Pepper 6sp 5sp each Serve with a zero sp side salad

11.01.2022 Hi Everyone It’s been a particularly busy time for me at the moment so I’ve not been sharing too much, I’m working and trying to answer all the beautiful messages I get daily - big thank you to everyone for their patience- If I miss your message, it’s not on purpose I promise. ... It’s Beautiful Spring Day here in WA and so it called for a Beautiful Spring Platter for 1 for lunch! And I thought I’d share it with you! Went a bit fancy - not really - with making Parmesan crisps today instead of the normal laughing cow or babybel light cheese for a change and I can confirm it was absolutely WORTH IT and Uber delicious. So on my very late lunch plate today 2 x bliss balls (my salted caramel & coconut ) 1 x hard boiled egg 50g 97% fat free shaved ham Carrots + Cucumber + Snow Peas Grapes + Blueberries 4 x Parmesan Crisp Crackers 6sp 6sp 8sp - To make the crackers - 1/4 cup grated Parmesan cheese And a good non stick pan Heat the pan until quite warm, place a teaspoon and a half ish of Parmesan cheese in the pan and flatten , cook on one side until the bottom is melted and quite set, meaning the cheese will start to harden (approx 1 - 2 mins), before flipping and setting on the other side for another half a minute. Transfer to a plate to Cook & harden. This makes 3-4 depending on the size you want! Trust me they are so delicious, and a fab treat!!

11.01.2022 Vegetarian Nourish Bowl Every now and then I like meatless meals, chickpeas are full of protein and if you flavour them they are beyond delicious. Even though theres no meat, make no mistake, this is an extremely filling and satisfying meal to eat as well as delicious. ... 1/2 tin (120g) chickpeas 1/2 cup cooked brown rice 20g reduced fat feta cheese 2 cups baby spinach leaves 5 cherry tomatoes halved 1 cup pumpkin steamed or roasted 1/2 tsp paprika Salt + Pepper Pinch of chilli flakes 1 tsp garlic olive oil Steam or roast the pumpkin. Dice and season with Salt + Pepper, toss onto a baking tray and cook at 180c for 20-30 mins or steam in the microwave for 8-10 minutes. Cook rice as per packet instructions. Drain chickpeas really well, add 1 tsp garlic olive oil to a non stick pan. Add chickpeas to the pan with paprika, salt + pepper (and chilli flakes if using), toast the chickpeas, for 2-3 minutes. Let cool. Assemble the bowl by adding spinach leaves first , then add all other components on top, sprinkling with feta cheese over the top. - add fresh herbs for a flavour boost- Serves 1 9 G 6 B 2 P

11.01.2022 Dukkah Crusted Baked Salmon with Mini King Mushrooms, Rice & Steamed Veg My salmon took 10 minutes to bake, and while that was cooking, I steamed the vegetables in the microwave, reheated my rice that got pulled from the freezer that was precooked and portioned, and pan fried my mushrooms so it was all cooked at the same time! 10 minutes. Not bad for a mid week meal. ... 115g skinless salmon 1 serve (7g) table of plenty lemon dukkah 1/2 cup cooked basmati rice 1 tsp garlic olive oil steamed butternut pumpkin + Steamed Broccoli + mini king mushrooms panfried in 1tsp garlic olive oil - you can use normal button mushrooms - 1/2 tsp black sesame seeds -option- Preheat oven to 180c. Press dukkah into salmon, line a baking tray, bake for 10 minutes. While salmon cooking, steam veg in a microwave steamer. Heat a small non stick pan, add garlic olive oil, toss mushrooms, cook on medium - high heat, avoid stirring too much and over crowding the pan to avoid the mushrooms releasing moisture and stewing as opposed to frying. Cook until golden brown -approx 10 minutes- Reheat rice in the microwave. Delicious + Filling + Healthy Meal full of good fats, flavours and nutrition. 11sp 5sp - If youre not a salmon fan, replace with Chicken breast -

09.01.2022 Air Fryer Crispy Chicken Nuggets I love me some nuggets! These paired with my honey mustard dipping sauce is MAGIC! 500gms Chicken Breast Cut into Chunky Cubes... 3/4 Cup Panko Breadcrumbs 1 Tbls Masterfoods tuscan seasoning Salt & Pepper 2 eggs whisked Whisk eggs in a bowl, add all the cut chicken and mix, in a seperate bowl mix salt pepper, tuscan seasoning & Panko breadcrumbs. Drop half the chicken cubes in the breadcrumb mix and toss, , place on a plate, add the remaining chicken & toss, add to the plate. Seriously this is the easiest and quickest way of doing it, you can also add the breadcrumb mix to a zip lock bag and throw in the chicken & shake the bag. Cook chicken in batches in an airfryer 200c for 9 minutes , I did it in 3 batches. No need to oil spray the chicken. Its so crispy and delicious. Serves 4 3 WW SP Serve 6 WW SP Serve (Serve = 125gms per person) Yes these can absolutely be cooked in the oven. Honey Mustard Dipping Sauce - Serves 4 - not pictured 100 gms No Fat Yoghurt - I use Yopro plain- 35 gms English Mustard 3 tsp Honey 1 Clove Garlic Small Mix together 2sp per serve all plans

07.01.2022 Apple Cranberry Muffins Cafe tasting muffins at half the smart points?! Yes please! These are soft sweet & moist, definitely worth a treat. Best of all, Most of you will have the ingredients on hand as food staples and they take 5 mins to whip up and cook in 25. Easy bake for the week.... I don’t compromise too much with sweets, they are a treat, and if I’m going to have it, I’m going to have it - and enjoy it! My house smells absolutely amazing after baking these, ones already missing 250g self raising flour 2 large (300g) pink lady apples finely chopped 2 eggs 1 tsp mixed spice 1 tsp cinnamon 1/4 cup pure maple syrup 1 tsp vanilla essence 50g ocean spray 50% less sugar craisins 1 Tbls canola or vegetable oil 1 cup unsweetened almond milk 3 tsp cinnamon sugar Add dry ingredients to a bowl, minus cinnamon sugar, stir together with a whisk. Add wet ingredients to a jug, minus apple, whisk together. Gently combine wet into dry, & fold apples through the batter. Spoon batter evenly into silicone muffin moulds. Sprinkle tops with cinnamon sugar. Bake at 160 for 25 mins Makes 12 4SP all plans

07.01.2022 Whether your child is 9 months old or 19 years old a mother’s love will never change, it’s only the years that pass. I still can’t believe that today Ethan is 19 years old. And as much as I love watching him grow into a beautiful human and fine young man ... yes Man ... my heart aches for the days where I could hold him in my arms like this ...... Today’s holds include standing on the stairs to reach him ( he’s so tall) so I can throw my arms around him and still tell him every single day how much I love being his Mum, And I will continue to do so until the day I take my last breath. Heres another new recipe from my book for you all to enjoy.... -Anna xo- My 3 ingredient pizza dough with Prosciutto Rocket & Feta Cheese - Cookbook Recipe - We all know the latest food trend is making pizza dough with yoghurt. Well, being Italian, I do love my pizza, and I was doubtful this three-ingredient recipe would match the taste and texture of traditional yeast dough. But this is absolutely amazing! It works like magic with no compromise on taste, and best of all, it's so easy that anyone can do it. Ingredients ~ White self-raising flour 1 cup(s), (150g) Dried herbs 1 tsp, mixed variety 99% fat-free plain yoghurt 1 cup(s), (240g) Polenta, dry 1 tbs, for sprinkling Canned diced tomatoes cup(s), (80ml) Mozzarella 50 g, grated Prosciutto fat trimmed 4 slice(s), (4 x 12.5g slces) Cherry tomato 8 individual, halved Rocket 1 cup(s), (30g) Reduced fat feta cheese 25 g, crumbled Fresh basil 2 tbs, leaves Instructions ~ Preheat oven to 200C. Combine flour, dried herbs, teaspoon salt and yoghurt in a medium bowl, stirring until a soft dough forms. Transfer dough to a lightly floured surface and knead for 5 minutes or until smooth. Roll dough out between 2 sheets of baking paper, lightly dusted with flour, to approximately a 30 cm diameter circle. Sprinkle a large pizza tray with polenta. Peel top sheet of baking paper from dough and invert onto prepared tray. Peel remaining sheet of baking paper. Spread diced tomato over base and sprinkle with mozzarella. Bake for 1015 minutes or until golden and base is crisp. Serve topped with prosciutto, cherry tomatoes, rocket, feta and basil. Cut into slices to serve. Classic at Home Fakeaway Serves 4 7sp on all plans

06.01.2022 Tonight’s easy dinner I’ve made many times when I’m time poor, I thought I’d share again as it’s a favourite in our house. It’s not only delicious but I also prepare this in the morning ready to bake at night while I’m doing other things. Sweet Chilli Maple Chicken Bake... 1kg Diced Chicken Breast 8 small baby potatoes 4 carrots sliced thick 2 red onions chopped thick 1 punnet of Baby Brussel sprouts -Add in whatever other veg you have in the fridge or whatever veg you like - Salt & Pepper 2 Tbls soy sauce 2 Tbls Ayam light sweet chilli sauce 2 Tbls Sugar Free Maple 2 Tbls liquid chicken stock Fresh herbs of choice -I like flat leaf parsley- 3-4 cloves of grated fresh garlic -or as many as you like- Combine everything in an oven proof dish, mix it together, cover with alfoil, pierce with a knife for vent holes to allow steam to escape. Bake at 200c fan forced for 35-40 minutes (oven times will vary), take the foil off in the last 15 minutes of cooking. -Allowing this to marinade for a while will impart more flavour- Serves 4 2 SP 3 SP

05.01.2022 Easy Mediterranean Pasta Salad This one I made yesterday would be a great party salad as it makes a huge amount. However also fantastic as either a main meal or a side dish. It can be served cold or warm.... To make it gluten free, swap out the pasta to a GF option, and to reduce the smart points on purple, swap the pasta to wholemeal. You can definitely add a protein to this for a main meal or keep it vegetarian. I also cooked pasta & pumpkin/broccoli separately in the microwave to save time! Worked a treat because it took 25 mins from cook to finished salad. 250g uncooked macaroni 2 cups cooked butternut pumpkin diced 2 cups cooked broccoli florets 1 small red onion diced 1 medium red capsicum diced 1 cup cherry tomatoes halved 80g reduced fat feta crumbled 2 Tbls store bought pesto (I used Jamie Oliver green pesto) Zest of 1 lemon + 2 Tbls juice Salt & Pepper 2 Tbls fresh flat leaf parsley (optional) My utensils to cook this was -microwave steamer -microwave pasta cooker Cut all vegetables plus parsley, and place in a large salad bowl. Cook pumpkin + broccoli in a microwave steamer, or as you like, roasting would be lovely too, if steamed run under cold water to cool the veg down, drain well, add to salad bowl. Add macaroni to a microwave pasta cooker , fill with water and cook for 15 mins. -alternative cook pasta on stovetop- Once cooked, drain well, run pasta under cold water. Add pasta to the salad bowl. Mix together the pesto, seasoning, lemon zest and juice, mix together. Pour dressing over the top and mix your salad together with a wide spoon, add crumbled feta and lightly mix again, season with more salt and pepper to taste - seasoning is flavour - Serves 6-8 people 6 - 6sp all plans - generous main meal 8 - 4sp all plans

05.01.2022 All the Sunday Comfort Feels of Breakfast in my Super Soft Thick Fluffy Apple Waffles. This is my Apple pancake recipe and I make it into a big waffle! Its super moist and fluffy and tastes absolutely Amazing. ... Serves 1 3 Tbls self raising flour 1 tsp baking powder 2 eggs 1/2 tsp Cinnamon 1/2 cup mashed cooked apple (I used tin apples) Pinch of salt Whisk together and pour into a ore heated waffle maker, then cook as dark or light as you like - mine takes roughly 5 mins in my Kmart waffle maker- Serve with plain no fat yoghurt, fruit and maple syrup of choice. 4sp 7sp To revert them into pancakes, make 8 out of the mix 4 pancakes are a Serve 2sp 4sp

05.01.2022 Baked Japanese Katsu Chicken I tried out McCormick Katsu Seasoning tonight and really quite liked it, I found it in Woolworths in the spice section. 2 sp for the packet of spice mix.... Typically katsu chicken is fried but I baked it and it worked beautifully saving a bucket load of smart points. 4 x 200g chicken breast 1 packet of McCormick katsu spice Place seasoning mix in zip lock bag, add seasoning and shake. Place coated chicken on a lined baking tray, spray lightly with oil and bake for 20-25 mins. I served ours with 1/2 cup cooked rice + steamed veg and optional kewpie Japanese mayonaise. 6sp4sp (Extra sp for mayo if using)

I learned very early in in my own journey to treat a week end no different than a week day! Saturday is the same as a Tuesday, we still track, we still move, we still hit those goals we are aiming for. ... Week ends are for relaxing yes but not stop tracking! This can make a difference. Tracking is habitual , make it part of everyday not just a week day. And remember what we do today will affect our tomorrow Happy Week End x

Not only does it taste Authentic it’s quite low on the Smart Points so it’s keeping me happy! Obviously Fresh Pesto is always best, but Jamie’s comes up a close second. 1 SP for 1 Tsp across all plans ... Available at Woolworths So what am I using it for? 03.01.2022 YesterdaysDay On My Plate Breakfast Apple & Date Overnight Oats -Recipe posted below-... I have many overnight oat recipes but this one is by far my favourite. I just love the apple and cinnamon flavours together, it’s just delicious, the addition of dates, gives you a chewy caramel surprise when you’re eating them. Overnight Oat breakfasts are Filling, Delicious, Healthy & best of all EASY to make for a grab and go ready made breakfast. Serves 2 1 cup rolled oats 1 cup almond breeze vanilla unsweetened almond milk 2 apples grated 2-3 medjool Dates chopped 1 Tbls Sugar Free Maple Syrup 1/2 tsp cinnamon 160gms Yopro Plain yoghurt or any 99% fat free plain yoghurt. Mix all ingredients together and halve for 2 VERY GENEROUS serves. 02.01.2022 Ricotta Cream Tart This recipe didnt quite make my new Cookbook, as there was too many recipes, BUT its one of my favourites! Ive taken my humble bliss ball mix and turned it into a tart base.... When baked, it goes crispy and delicious. Filled with ANY filling its a wonderful base alternative to pastry, that happens to be gluten free, I also love Ricotta, so Ive filled it with a delicious creamy filling. Base 200gms unsalted roasted almonds 24 Medjool Dates (pitted) 1/2 tsp salt 1 tsp cinnamon 1 tsp mixed spice Zest of 1 large orange Filling 270gms Reduced fat Ricotta Cheese (from the deli, not a tub) 200gms plain fat free yoghurt (yopro) 1 tsp cinnamon 3tsp pure maple syrup Zest & juice of 1 large orange Assemble the base. Add almonds to a food processor & pulse until chunky. Roughly chop dates & add to the processor along with salt, spices & zest. Process until tough & chunky. The dough will be slightly sticky, but will press into the tart tin perfectly. Empty the mix into a fluted rectangle tart tin and push the dough evenly on the base, up the sides and into the corners. Cover with baking paper and fill the shell with rice or baking weights and blind bake for 40 minutes at 180c. Take the paper & weights away and cook for a further 5 minutes. Let the base completely cool before removing from the tin. Clean the food processor and add the filling ingredients. Process until thick smooth & creamy. Pour the filling into the tart shell, and decorate with fruits of choice. Serves 12 4 WW SP per serve all plans

02.01.2022 Sweet Mango Overnight Oats Breakfast jars of delicious So I did a little meal prep yesterday that I’m most definitely paid for in pain but worth it because I’ve made my week much easier.... Starting with a few days worth of overnight oats- Mangos are sooo cheap at my green grocers atm $2 each so I’ve made the most of them. I also did some slow cooker pulled chicken - it cooked itself, so no real effort and I’ll get 2 meals out of that, also a potato topped meatloaf - amazingly good , and pasta sauce for later in the week. In my oats Serves 4 4 very ripe mangos 1 1/2 cups rolled oats 1 Tbls pure maple syrup 1 cup @yoproau plain yoghurt 1/3 cup unsweetened vanilla almond milk (add more if you like runnier oats) 1 tsp vanilla essence Dice one mango and add to the bottom of each jar. Dice the rest of the mango straight into a bowl and mash them with a fork or potato masher, add rest of ingredients and stir, evenly distribute between jars. Place in the fridge - up to 4 days. These are really filling and generous serves. And if you love mango as much as I do ABSOLUTELY DELICIOUS!!!! 6G 5B P1

02.01.2022 4 years TODAY I hit goal weight with WW. It took me 4 years of active weight loss to lose 70kg, half my body weight, and 4 years of living a healthy lifestyle to maintain my weight! Sure, I still fluctuate and have ups and downs weight wise and sometimes even mentally, but WW have given me the education I needed, and the tools that have taught me how to stay healthy.... A healthy journey is never ending but it’s made easy by creating healthy habits and keeping positive about most things. When life throws curve balls, I’ve now learned how to adapt and readjust rather than throwing in the towel! If there’s a will, there is always a way! I’m celebrating being healthy everyday not just today! If I can .... you can too @ww_aunz

The year that changed the world It was a year of challenge, but also so much gratefulness, missing people and loving people. It was the year I took helping others to a new level - 2020 will go down in history for so many reasons both personally and worldwide - I released my first cookbook with Pan McMillan and @ww_aunz And I turned fifty years old. Two major milestones in my life. A year of sadness and happiness not just for me but for the many. I learned that whatever curb balls life throws out, I can absolutely deal with it with a little help from my friends - all of you- So 2021 is a blank page, it’s 365 days just waiting to be written - a new chapter, another story - I can’t wait to see what lies ahead for us all - positivity, hope, love, success and most importantly happiness Stay Safe my friends you are all AMAZING each and every one of you. 01.01.2022 Natures Easter Eggs This year for our Easter Celebrations, I’ve gone back to my childhood and made dyed hard boiled eggs. My sister and I along with my mum, grandmother and great grandmother made these traditional Greek eggs together years ago. It was a tradition that we did often but through the years has slipped through the cracks and I’ve decided to bring it back into our family.... My Mum helped me make these this year, and they are stunning. Very easy to make and edible. Natures Easter Eggs. There’s 2 ways to do it - Different colours of powdered dye. Or with liquid dye. Powdered Dye method - 1/2 tsp powder colour 200ml warm kettle water 3 Tbls vinegar Already hard boiled eggs Mix the powder & vinegar with water, in a deep container , the eggs need to be fully submerged. Drop the eggs in and leave until desired colour. Remove eggs with a slotted spoon - -do not rinse the eggs - Lay them on a tray to dry, shine with a little oil rubbed over them once completely dry. I’ve made a few different colours. The second way is with liquid dye. Same process, replace the powder with 10-20 drops of liquid dye. The longer the eggs stay in the dye, the deeper the colour. Use WHITE eggs if you can for better results, brown eggs are good for Red dye and some of the darker colour dyes. Have fun with it, the kids will love doing these and they are healthy to eat. 01.01.2022 Hot Cross Bun Bliss Balls As we head into Easter Week I’m going to reshare with you all my most favourite bliss ball recipe of all time! Big call I know - BUT I absolutely love the flavour of hot cross buns, not just this time of year, but ALL YEAR! And I know I can have these at anytime. They seriously have the flavour profile of a hot cross bun and I happily eat them in the lead up to Easter Sunday when I indulge in a real bun with butter - cause that’s how I roll! If yo...u’ve never made bliss balls before and love buns, give these a go, even just once! Makes 20 12 big juicy medjool Dates pitted 100gms dry roasted almonds Zest of 1 orange 1 Tbls of the juice 2 tsp pure maple syrup 1/2 tsp salt 1/2 tsp mixed spice 1 tsp cinnamon 1/2 tsp ginger 1/2 tsp nutmeg 25gms (2tbls) currants Add all ingredients into a food processor (minus currants) and pulse until chunky. Then process on low speed until a soft dough ball forms, add currants and pulse until just mixed through dough. Roll into 20 even sized balls. I use a small cookie scoop to do this, (15ml scoop) Refrigerate or Freeze to store. 1SP All Plans

My CHOCOLATE HAZELNUT BLISS BALLS give you a taste of chocolaty heaven for 2 SmartPoints on all plans. ... 150g hazelnut meal 12 big fresh medjool dates, pitted & chopped roughly 1.5 tbs cocoa powder chocolate hazelnut spread 65 g 1.5 tbls maple syrup 2.5 tbls desiccated coconut 1/2 tsp salt Add all ingredients to a food processor minus the coconut. Blitz to form a dough. Place coconut into a bowl. Roll 25 balls using 1 Tbls scoop measure. 01.01.2022 Bruschetta Wonton Cups Serves 15 1 sp each all plans ... These crispy crunchy little morsels of Joy were enjoyed during the holiday period. Such a delish little snack or wonderful addition to any grazing board . 15 x wonton wrappers 2 cups de seeded and diced tomatoes 1/4 medium red onion finely diced 1/4 cup fresh basil chopped 1/4 cup fresh flat leaf parsley chopped 1 Tbls balsamic glaze 25 g reduced fat feta cheese crumbled Salt + Pepper Press each wanton wrapper into a silicone mini muffin mould. Bake at 180c FF oven for 8-10 mins In the meantime Finely dice, tomatoes, onion & fresh herbs. Add do a bowl along with pepper only. Mix together. Let wrappers cool on a wire baking rack before salting the tomato mixture and spooning 1 heaped tablespoon into each cup. Drizzle with balsamic vinegar and scatter crumbled feta over the top of each one. - wonton cups can be pre baked and stored in an airtight container for up to 1 month - - Tomato mixture can be made a day ahead, without salt, in a sealed container in the fridge - - Make crumbled feta by placing diced feta into a mini food processor and pulsing. - Assemble the cups just before serving
