16.01.2022 Check out this beautiful, one-pan, Ponderosa halloumi and tomato bake by @flavouristakate The PERFECT hump-day meal! Serves 4... 1 x tbsp Roasted Garlic Smash Olive Oil 4 x cloves of garlic, chopped 2 x tsp Ponderosa Spice 1 x tbsp Garlic Divin-o! Balsamic 2 x 400gm tins Mutti cherry tomatoes 1 x 400gm tin white beans, drained 1 x large zucchini, diced 1 x 250gm block of halloumi, sliced Preheat oven to 200C. Heat the olive oil on the stove top in an oven proof pan. Add the garlic and cook until slightly brown. Pop the Ponderosa into the pan and stir until fragrant. Add the tomatoes, zucchini and balsamic to the pan and cook for five minutes until slightly thickened. Take off the heat and stir through the beans. Arrange the halloumi on top and put into the oven for 15 minutes or bubbling. Turn the oven to grill function for the last five or so minutes to brown the halloumi.
