25.01.2022 inSports member Lynda Smoothey has been completing 10,000 steps a day for the past 300 days so we took some time to catch up with her and ask about her experience with this challenge. What inspired you/motivated you to start this challenge? With COVID and the gyms closing, walking and running everyday has been a great way to stay active. I can easily track my progress on my Garmin watch and app on my phone. I started park run 5 years ago so in place of that, this year I hav...e used Run Down Under to visually track how far I’ve come. What physical, mental, emotional benefits have you experienced? It helps clear my mind, to just compete with myself and grow strength as I go. How has Mount Warren Sports Centre assisted you or helped you continue this challenge? I am always greeted with friendly, smiling faces which makes it a pleasure coming in every time. Having supportive staff and friends check in and see how you are doing is always nice. How long have you been a member? I have been a member for 20 years. What is your favourite thing about Mount Warren Sports Centre? The people here staff, friends, and gym instructors. I come here to be active and keep moving and to enjoy a coffee with my friends and stay social.

Chicken Tortillas... 8 corn tortillas (no-preservatives are best) 3 medium tomatoes, diced 4 medium avocados, diced 3 tbsp red onion, finely chopped 1/4 cup cilantro, finely chopped 1 tsp cumin 1 tsp chili powder 3/4 tsp salt Squeeze of lime juice 15 oz can black beans, drained & rinsed 3 cups shredded or chopped chicken 1/2 cup feta cheese Instructions 1. Cook tortillas as per packet 2. Make an easy guacamole salsa by combining tomato, avocado, red onion, cilantro, cumin, chili powder, salt and lime juice. Get other ingredients ready. 3. To assemble tortillas top each with guacamole salsa, beans, chicken and cheese.

Chicken, Haloumi and Avocado Salad Ingredients Chicken Marinade 500 g | 1lbs chicken breast or chicken tenderloins , sliced 2 cloves garlic , minced (or 2 teaspoons minced garlic) 2 teaspoons vegetable stock powder (MSG free) 1/4 cup | 4 tablespoons sweet chilli sauce (sugar free is fine) 2 tablespoons freshly squeezed lime juice salt to season Salad 180 g (1.8oz) packet Haloumi cheese (salt reduced), cut into strips 1 punnet grape or cherry tomatoes , halved 2 bunches baby cos salad , washed and shredded 1 avocado , sliced Salt to season Dressing: 2 tablespoons garlic olive oil 2 tablespoons lime juice 1/2 tablespoon brown sugar salt to season Lime wedges (to serve) Instructions 1. Whisk all chicken marinade ingredients together in a bowl until combined. Add chicken and set aside for 1-2 hours in the refrigerator (or overnight for extra flavour). Alternatively, cook without marinading. 2. In a large frying pan/skillet, fry the marinaded chicken until browned and cooked through. Set aside and keep warm. In a separate smaller pan, fry the haloumi cheese until golden on both sides (about 1 - 2 minutes each side). While cheese is cooking, combine salad dressing ingredients in a small bowl or jug until combined. Serve chicken and Haloumi over prepared salad leaves, tomatoes and avocado slices, and drizzle with the salad dressing. Nutrition Serving: 1 | Calories: 291kcal | Carbohydrates: 15.6g | Protein: 29g | Fat: 12.4g | Fibre: 4.8g
