24.01.2022 This is a regular weekend breakfast at our house, everyone loves it. It's a healthy waffles recipe that packs plenty of nutrition. The bananas provide potassium, fibre, vitamin B6 and vitamin C. The oats provide stacks of health benefits due to fibre content, beta glucans, antioxidants, manganese, phosphorus, magnesium, copper, iron, zinc, and B vitamins. The eggs are a great source of complete protein. Chia seeds which provide fibre, protein, zinc, B vitamins and an array o...f minerals. Cinnamon is a great source of antioxidants, is anti-inflammatory, regulates blood sugar, is antidiabetic due to its regulation of insulin resistance, and it also has antimicrobial properties. It's a super easy recipe, just throw the ingredients in a blender and then spoon or pour the mix into a hot waffle maker (I usually oil the waffle maker with either a neutral olive or coconut oil. Vegetable and seed oils are dodgy for many reasons and I recommend avoiding them like the plague, I'll cover this in another post). . . . Makes 3 and a half waffles . 2 cups of oats (if you're organised you can soak them in a bit of water or milk overnight for better consistency of the final product) 3 eggs 2 large bananas 40g chia seeds 1 teaspoon of ground cinnamon Splash of vanilla essence Pinch of salt 1 teaspoon of baking powder . 21.01.2022 Last night we had some barramundi (great Australian source of omega 3s), sweet potato (great for beta carotene which converts to vitamin A, fibre and plenty of other vitamins and minerals), I also grabbed some salt bush from the garden (source of protein, calcium and other minerals and is a great source of antioxidants), some spring onions and some rosemary. I decided to do a 'one pan dinner' by frying off the sweet potato pieces in some olive oil until they brown up a bit..., once they started to cook a bit I put the lid on the pan for a minute or two, and then threw in the rosemary and spring onion and a bit of garlic (antimicrobial, reduces blood pressure and boosts the immune system) and some button mushrooms (chopped into small pieces to hide them from the kids) . Then I threw in the broccoli heads and put the lid back on the pan to let it steam through for about a minute. Then I set this aside in a bowl and while the pan was still hot - sear off the seasoned barramundi skin side down on high heat. I generally do this with a bit of olive oil for about a minute before lowering the flame to a low flame. This gets a bit of colour on the skin and keeps it crispy without making it too brown. The flip it over for about another minute or two (I did pop the lid back on the pan for a bit to make sure it cooked through too). Serve the vegetables on the plate with half an avocado and a decent drizzle of olive oil (fat isn't the enemy we used to think it was!), the fish on top with some good quality sea salt. 15.01.2022 I have a LOT of rocket in the garden at the moment, it actually grew by itself from seeds from last year. I deliberately let a plant go to seed and pulled it up and let it sit to dry out so I could keep the seeds for the next year. If you eat adequate fibre in your diet (majority of Australians aren't getting anywhere near enough) you'll need about half the amount of toilet paper you usually use... Then you won't need to be buying two years of toilet paper and there'll be enough for everyone ;)

This lets me keep my own organic seeds for the next growing season for that plant and it also helps to attract bees to your garden. But to be completely honest this broccoli plant has been more or less abandoned lately due to my busy life at the moment juggling kids, work and all the other little things that go along with that. 05.01.2022 Be careful of the food, health and nutrition advice you come across online. Most importantly, you should know who is writing the content and their qualifications (or lack of). Some things should be taken with a metaphorical 'grain of salt.' Some posts just been made to look pretty with nice images and clever lighting, talking about the latest fad diets to catch your attention but their blogs may not actually have any real science based substance to them and may actually cause... harm. Ultimately, what should be taken into account that each individual is different and should be treated as such. A 'one size fits all' just doesn't work, and sometimes seeing a qualified nutritionist for personalized advice is the best way to go.
