25.01.2022 What is life about - a conversation I had with husband during a bonfire today, seeing our kids play freely admiring the stars. This is a subject that I can go on and on about hey... but I rather feel very emotional today as I finish putting together one of the most beautiful cakes I have ever made, and I’m still teary (I know.... how come someone can cry over sugar.... ). While we were throwing our thoughts out there, one that very much stuck to me was a phrase from Simon... - what is life about.... to give more than you take - a positive sum in life overall. Yeah hubby, you nailed it: we come from nothing, we will go back to be part of the Earth when its our time, and beautifully put into words by you, and I will steal it now.... What I wish to all of us today is a positive sum in life.... for all of us to give more than we take. For hearts full of passion, for pure peace in being what we are meant to be, with clocks that don’t tick, with our full attention to the moment we live in! My heart is full to the brim guys, with joy and love, and gratitude for the opportunity given to me to be alive! 24.01.2022 A little something for this Friday!!! This cake is packed with incredible techniques!!!! And I am so deep into the search of new techniques and new designs in my kitchen these days! And today is the day that I officially fell in love with chocolate modelling paste - I made my own and it is so pliable and yuuuuum! So.... cheers to more cake discoveries and cheers to an amazing weekend!!!!

24.01.2022 This cake is to remind myself that when things don’t go according to plan, it means an opportunity door slammed right opened, rather than failure! You see, with enough time on our hands, not having a solution, or not ticking off the list planned, gives us an opportunity to try something different to get there! And that is what happened today..... I planned mediums, planned half way through design, and things just went different ways. It’s frustrating, oh heck it is! But, it i...s my choice to - or stay stuck on frustration not moving on to a better place, or to be proud of myself for accepting the challenge and finding a way to achieve a wow design that I will be super proud of. I choose the latter!!!! And this cake is an example of it, I made it by mistake actually. I was planning on something else and ended up on a fairytale place called hand made wafer paper land! So... My foundation, my happiness, who made me become a mum - one of the most rewarding and also most challenging roles in my life. I love every bit of us and I wouldn’t change a thing! 23.01.2022 This time of the year is always confusing, at least for me. It’s a limbo situation.... you want to enjoy but you want to get going with all the plans for the year to come. But this year has been far different than any other year hey - hi COVID! So, I have one wish, one, so pretty please, make it happen! I would like a world completely cured and clean from covid. We have been very very lucky in Queensland u til now, touch wood! - but I really feel for All the areas and countri...es that have been affected still by the virus! So, my heart is with you all ! And, in case my wish does not come true, I would like to make another wish instead: I wish that we are blessed with enough mental support and strength to deal with whatever is to come.... actually..... scrub the first wish and stick to the last one as it is bloody empowering and will get us through whatever is to come! 22.01.2022 The perfect cake for today! If you follow my stories, you know already I am pretty stoked with the result of some of my experimentations in the kitchen (go to my stories and have a sneaky peek if you dare!). Today, I finalised the main body of a cake that I have been making for a while, from the sculpted plasticine master (my hubby sculpted it and I’m so very proud of him!), to making my own mold and creating a torso cake! I am beyond excited!!! So, I’m just going to put it ...out there: my aim is to keep pushing boundaries, the ones I created throughout my entire life that I am about to challenge. Concepts that were rooted in my brain by the messages that a capitalist society pushed into my head and I simply bent over to them throughout life. Challenges... I want more and I want it bad!!! So.... get ready.... because there is a lot more to come and it will be intense and passionate and full of new discoveries! This is my journey through edible art as the path to self discovery. 20.01.2022 Oh no guys! I was driving back home from a delivery today... and a kangaroo jumped in front of my car! So sad! After 8 years living in Australia, never thought it would happen to me.... and it did! Poor kangaroo! I was very blessed with a couple that came and helped me! 18.01.2022 MEGAN & TOBY || I wanted everything for you! Everything I could fit in and on a cake. I wanted so much, that I screwed it up (it has been a long time without getting it wrong!)! And even then, on your wedding day, you teach me something, effortlessly - wanting and feeling are rather different concepts. Then, I decided to feel... I stripped off what I have done, shut everything else down... and just allowed myself to feel.... and I discovered that all I wanted for you both, wa...s to walk with you through a Spring Renaissance Flower Garden, and smell the floral scents, pick some flowers, and bathe in the sunshine smiling away. You guys are one of a kind and if I had to give back to you what you taught me until now, which is a whole heap of empowerment .... I would need a battalion of chefs to help me to make a gigantic cake for you. But again... feeling is the key, and when I look at this cake, I see you - a cake that conveys so many messages of effortlessly delicate personalities, with such soft touches and yet, as powerful as it can be and ready to reach the stars in a beautiful journey towards happiness. I was meant to sit down today and get cake planning for new designs that I am to bring to life... and all I could think of was the swirl of this cyclone cake... sweeping the leaves up with ferocity! It’s funny how I relate to this cake so much, when I am in a inner developmental process, about to break through, but just not yet, still dealing with the struggles of getting there. It’s almost like I look back at this cake as a reminder that the fear that comes with moving forward should be welcomed, so we can always move forward to the next step which is to find the beauty on evolving, on evolution. 15.01.2022 From our fam to yours (and my fam in Brazil that I miss so much) a very merry Christmas! We ate like no tomorrow, we laughed, we shared giggles with the kids, oh what an amazing time!!!! Definitely making memories with loved ones and I got some serious savoury cooking out of my system! I so needed it! The bottom tier was the so yummy caramel mudcake with beurre noisette buttercream, lind milk chocolate and hazelnut praline ganache and salted caramel sauce, and the top tier... dark chocolate cake with pecan and coconut paste, salted caramel ganache and vanilla and chocolate textured buttercream!!! But, one thing I could not make up my mind with, was about adding the spirally detail I made for it. I put it on, I felt like taking it off. I took it off, I felt like putting it back on. 07.01.2022 Oh this cake! It sings to my soul so much!!! Samantha and Bret were very set on a stunning ruffled cake! When we met at @victoriasbyronbay for a meeting with @hausofheraevents and @bowerbotanicals , all I could think of was to try to incorporate some texture to the design as I really wanted to use a beautiful cake stand @hausofheraevents had just incorporated to her inventory - a stunning cake stand... stunning! I wanted to connect the textural vibe of the cake stand to the b...ottom of the cake and while the ruffles would show its movement, the texture would become more and more scarce until a soft feminine finish would be the last touch of the design: almost like a big blow of wind, washing it all away, from bottom to top, while dancing around the cake with the ruffles, and turning it from clutter and mess into beauty and mellow. The colour palette, accompanying the journey of the wind, from earthy tones and mixes of browns translating into muted soft pinks and latte. Then, comes @bowerbotanicals , grounding my work with all the beauty that orchids can come up with! And then comes Shelley from @ivyroadphotography and captures it all in a very breathtaking way!!!! I am so lucky to be surrounded by amazing people that connects to me, that sees beauty and understands my craft and my love to what I do, and put their heart and soul with me into every creation, every event.... 07.01.2022 Let’s start the week with style!!!!!!!! ! And I’m telling you right now - you better get ready because it will be an aaaaawesome weeeeeeek! Let’s get pumped!!!!!!

07.01.2022 I’m not sure if I told you the story of this cake - the sculptural cake. I designed this cake for a shoot with @the_lane and this was one of 9 designs. When I started making this cake, I actually had nothing in mind... NOTHING! It was my first cake that I went full on no planning, no idea in mind.... and don’t ask me how I got there! For me, one of the most important things in cake design is to plan for enough time, extra time to be honest, to be able to play, to get many thi...ngs wrong, until I get it right, until I am happy to step back, look at it, and feel proud and satisfied. When the cake touches my soul and I agree that it is time to let it go... not to nurture it anymore. Most of the time, that will be a late night affair, as I do spend a lot of time on my designs, and tend to push late hours in the studio. However, there is a secret in my kitchen: I never make a decision until I wake up, and with a fresh and rested mind and body, I walk in my cake studio, and the beautiful morning light shows me what I need to see to be happy, or to decide to keep going on developing the design. Yeah guys, this cake affair is much more than you can even imagine! I dream and dream about my designs, and the funny thing is that sometimes I get to conclusions on how to achieve some finishes while sleeping! And yes, now I’m happy to call myself a cake geek! 06.01.2022 So, here I am, with my tail between my legs, ready to throw at you beautiful people that follow me, a big apology for not being able to keep up with letting you guys know what I am up to, through socials. As some of you may know, this little cake business has been full time for the last 3 years. Hubby used to pick up the slack when wedding season was upon us, cooking, looking after the kids, picks ups and drop offs, while I was deep in cooking and designing for wedding season... deliveries. But this year, Simon decided to take on a full time contract, which means he is stuck in front of the computer for 8 hours. So, day by day family duties are back on me! And man oh man..... The struggle is real!!!! So, something had to give and it was less time on my screen, which means less time with you guys, which makes me feel a little flat. You see, you guys have no idea how important your role is in my life: your feedback, your interaction, your interest, play massive roles on my creative process, because you guys pump me up, you make me feel I can continue on my path, and you give me hints of what is an eye catcher on what I design! You are awesome! Thank you so much for being here with me! And.... hang in there hey, I might not be able to answer to all the messages (thank you for all your care towards me, it means the world to me!) And sorry if I don’t respond to you! I wish I was as self confident as this cake, so full of itself, to the point that it simply exists to show its beauty. No effort, just being supreme and bold. No need to show off, no need to scream. The cake was born to be striking, fearless and unafraid, also daring and distinct, effortlessly. And... my aim for today is to be as bold and brave as this cake! 05.01.2022 Omg it is Christmas Eve!!!!! In Brazil, the tradition is having a massive family gathering for a midnight feast, a lot of alcohol, dance and all the yummy food each mum would cook! I’m talking about 100 people gathering guys!!!!! My aunt Martha used to host the Christmas Eve party, and...oh boy... that woman can cooooooook! She had a catering business and patisserie back in Brazil, and I still dream about the yummy sweets she used to make for us! Our cousins from all around t...he country would travel to Belo Horizonte, and we would all purposely starve for the day, so we could eat with no shame the amazing food from Christmas Eve... I can actually taste it... and that is what food does to us.... it bonds us, it creates memories, it triggers the senses and it brings us together! So, yes! Let’s create memories this Christmas guys... the beautiful smells of the food, the giggles from the kids, the so cute expectation they have for all the festive season, the smiles, the sharing, the surrendering to the joy that is enjoying this time with our loved ones! Then, treat them with love... always respect the ingredients. And be thankful for what Mother Nature is providing to you!! . In pastry, one very important skill is to know how to prep your fruits. Making sure you focus on seasonal and local produce to get the best flavour, and to know how to perfectly prepare that fruit, to achieve a striking wow factor when people look at it! 03.01.2022 So, this week I had the absolute pleasure to make a second cake for David and Bec. They eloped at the amazing @thecalilehotel and had one of my cakes. And today, was meant to be the second wedding celebration with friends and family and they requested the exact cake, same flavour but bigger! This morning I got a call from David touching base about the immediate restrictions in QLD. What a bummer! Unfortunately, they could not have their party due to the max of 10 people gath...ering restriction immediate and effective. I felt for them, so much! I asked Bec and David what they had in mind, giving them some options to try to make things better and the answer was.... bring the cake! We cannot wait to eat it!!! . I got there and had the MASSIVE PLEASURE to cut the cake in portions (I don’t know about you but, being a cake designer, I wish I could cut all the cakes I make as I love seeing how the cake guts turn up! ). I got very proud of the layers of buttercream, marshmallow and gelée looking pretty and yummy, and I enjoyed myself listening to the sounds of joy of them eating cake around me! I’m so sorry guys you didn’t have your party today! But, I truly have to thank you for the cutting cake experience and for sharing the cake love with me! I’m giving myself more time to think about what I am doing and the anxiety of rushing around like a crazy human is fading away more and more. Kind of peaceful! And I love it!!!! All sorts of challenges appear from time to time, we just have to take a deep breath, think it through, and smash out scenarios with new solutions! That is what we do hey! So, I have been busy behind the scenes, getting ready for a whole heap of fun in my studio! And today is the day to thank the people I am surrounded by, people that help me with an open heart, that are able to share their knowledge with me freely! 02.01.2022 What a day I had today with special friends! It’s that time of the year that we just surrender to enjoying every minute of it intensely. Times when everything can wait, because all we want is to nurture smiles on our beloved ones faces and to fill our hearts with love and joy!!!! So.... HO HO HO... let the fun begin!!! And don’t forget carrot for the reindeer’s and milk and cookie for Santa.... a little brandy - if you fancy, might help the old fella to get Christmas done in style!
