22.01.2022 You Are The Greatest Project You Will Ever Work On.

22.01.2022 Last week I made a post calling for hope. This week, I try to keep my hope alive. For someone who has been loyal to an industry and it’s people for over 15 years, to say that the past few days have been rough is an understatement. I have staff members who are stranded, locked down, financially stripped, and emotionally wrecked. I have a family calling for direction, and a team of staff who are just as confused as I am. I, along with our nation, am unsure of the future, with n...othing but history to compare to when I try and find some rational answers. Sleepless nights, relentless days, with nothing but news that seems to be spiralling out of control. The only thing that brings me back to centre is that call for hope. I have an anchor in my heart that I tap in to when I have to lay my staff off work, when I have to close down restaurants that entire teams have worked so relentlessly to get off the ground. This anchor in my heart is the hope for our future that we will survive, and that we will grow out of the weeds to bring light to a time which seems to only get darker right now. When my heart breaks by news of closures, deaths, financial breakdowns and economic turmoils, I call for hope. Unfortunately, my hope is not enough. I implore all people out there to join me join me in a relentless and unwavering sense of hope. For my beloved chefs, waiters, sommeliers, artisans, producers, and farmers in the hospitality industry, to dive deep and give hope. Because this is all we’ve got, because this is what we can give. Sadly, we closed our beloved @estatecoogee and @yugo__melbourne yesterday indefinitely. We will be back. Until then! Mb

21.01.2022 Food - family, community, connection. Since I was a child, food is what gave me a sense of purpose. Preparing, cooking, presenting meals brought my friends and family together in ways that changed my life. It shaped my career, took me on paths which I can never forget. It introduced me to people, to an industry which is now what I call home. Everyone right now is shaken. Our hearts are broken and we are scared. Our futures seem to be at the hands of the unknown. All that we... do know is that we have now. We have those around us, we have laughter, and we have love. I can speak to the hundreds of people that I have hired, the gallant staff who take stride in coming to work every day for the greater good, the people that put on a brave face simply to evoke a sense of strength and a can-do attitude. I will talk about this until my mouth falls apart, but right now, on this medium, I want to talk about hope. I have hope for our children, and our children's children. I have hope for our community and for human nature's ability to survive. My hope is for our future, and the future of an industry which has created incredible resilience and fed our nation. With this hope I pledge to dedicate my 'now' to formulate a way of bringing love back to our everyday. Me and my incredible team are working on ways of bringing a different light to the new normal for our near future. Watch this space! In the meantime, @estatecoogee and @yugo__melbourne are both open to public and operating with the strictest of hygiene standards available. Lets support locals and fight this battle together. Mb
