21.01.2022 The humble frozen chip. Just potato right? NOPE.... Well 91% of it is potato. Ingredients of golden crunch frozen chips. Potato (91%), canola oil, *wheat* flour, thickeners (1400, 1420, guar gum), salt, corn starch, acidity regulators (450, sodium bicarbonate), rice flour, dextrose (from maize), natural colours (carotene, turmeric). Can we just cut a potato up ourselves, takes the same amount of time in the oven people.

08.01.2022 FOOD FLAVOURINGS Can be ARTIFICIAL, meaning entirely man made in a lab. or... NATURAL, meaning they originate from a natural source, but still made in a lab. Flavours are added back into foods to provide uniformity across a product when its actual flavour is destroyed through processing, regardless of the source of ingredients or the season they are grown. Natural flavours are in a vast majority of processed and ultra-processed foods and are the fourth most common ingredient listed on food labels. Added flavourings could contain anywhere between 50 to 100 ingredients, with most of these ingredients being emulsifiers, solvents, preservatives, flavour modifiers and other adjuvants. Only 1% of a flavour is actual flavouring ingredients. Food manufacturers are not required to list all flavour ingredients on a label and can just use umbrella terms like NATURAL FLAVOUR ARTIFICIAL FLAVOUR or just FLAVOUR. ARE FOOD FLAVOURINGS HEALTHY? Typically food flavourings constitute a very small amount of an overall processed food ingredient list, however, some of the processes and ingredients used in the manufacture of food flavourings can lead to endocrine disruption, pesticide exposure, carcinogenesis, heavy metal toxicity, behavioural, developmental, reproductive, and neuro toxicity, and environmental damage. IS A BANANA FLAVOURED FOOD WITH NATURAL FLAVOUR FLAVOURED WITH ACTUAL BANANA? Not likely, it is more likely a complex of other natural flavours that when combined taste like banana. These elements could come from any plant or animal origin. HOW DO I AVOID FOOD FLAVOURINGS? Read your food labels. Minimise processed and ultra-processed foods. Eat real food - It comes with its own natural flavour. Learn to cook - It’s not difficult to learn how to enhance the natural rich flavours of foods by the way you cook and prepare them.



08.01.2022 Big lunch today. To give me fuel and brain power for this afternoons clients. The beauty of doing online consultation is that I am at home for lunch, with access to the veggie garden for supplies.... Sautéed kale from the garden with purple Brussels sprouts and feta, the feta gives that saltiness that the brassicas sometimes need to balance their bitterness. Some delicious butternut pumpkin - high in vitamin A. Two scrambled eggs for protein to keep me satisfied all afternoon. Lightly sautéed tomato - cooking releases its heart healthy lycopene. Purple cabbage sauerkraut - gut bacteria diversity. All cooked in olive oil as the healthy fats will also slow down digestion and keep me satisfied for longer. Do you like a hot lunch or a cold lunch?
