22.01.2022 This is a tasty way to use up 'seen better days' vegetables - bake them into the top of a fresh focaccia! Thanks The Rhi Rebellion Focaccia Recipe: 2 cups of flour 1/2 tablespoon of salt ... 1 tablespoon of dried yeast 80 ml of olive oil 300 ml of lukewarm water. Preheat the oven to 200 degrees. Step one: Mix flour, salt and yeast together. Step two: Add in the olive oil and water. Mix with a wooden spoon. Use your hands to knead the dough in the mixing bowl for 5 minutes. Step three: Transfer from the mixing bowl to a floured bench top and knead for a further 8 - 10 minutes. You can tell the dough is ready if you push a finger into the dough and it bounces back. Step four: line a rectangular baking dish with some olive oil then shape your dough to roughly the same size, place in the baking dish and cover with a tea towel. Leave in a warm place for at least 45 minutes or until the dough has doubled in size. Step five: Add on your toppings, make sure to push them into the dough slightly so they cook into the bread. Step six: Bake your Focaccia in the oven for 30 minutes, once cooked remove and place the warm focaccia on an air rack IN THE BAKING DISH to cool for 10-15 minutes. Then you can remove from the baking dish and cool further. Store in an airtight container (if it lasts that long!) Topping ideas: - Seen better days tomatoes and balsamic vinegar - Kale stem strips - use a vegetable peeler to create ribbons of kale stem - Herb stalks - I like parsley, basil and sage - Carrot peels - Over ripe banana, cinnamon and honey - Last of the sauce! you can use the last dollops of tomato or BBQ sauce for a tasty topping. 16.01.2022 Satisfy your sweet tooth with these fluffy Strawberry Yogurt Pancakes. Ingredients... 1 1/2 cup self raising flour 1-2 tbsp sugar 1/4 tsp salt 2 eggs 2 tbsp melted butter 1/2 tsp vanilla extract 3/4 cup vanilla, plain or Greek yogurt 3/4 cup milk 1/2 cup chopped strawberries Method Set a large non-stick pan over medium heat. In a medium bowl, whisk together the flour, sugar and salt. In a small mixing bowl, whisk together the eggs, melted butter, vanilla, yogurt and milk. Slowly whisk into the dry ingredients. Fold in the strawberries and mix until a few lumps are left. Lightly butter the pan if desired, pour 1/3 cup of batter for each pancake. Cook for 2-3mins or until the edges peel up and bubbles form on the surface. Flip and allow to cook for 1-2mins. Remove and repeat with remaining batter.
