Article by Marian Macdonald, Stock & Land Every time one of Stephen Koch's cattle is processed, he heads straight into Broadford to examine the carcase directly with the butcher, Victor Bonacci. In return, every 12 weeks or so, Mr Bonacci wanders through paddocks to view and discuss the next batch with Mr Koch.... "We look at what's on the ground, what's coming along and what needs more finishing," Mr Bonacci said. It's an informal partnership between Victory Meats and Atriem Murray Greys that looks set to blossom into something bigger. "The grain of Steve's Murray Greys is really fine and the temperament of his cattle is great," he said. "I can walk amongst the herd and pick out what I want. "They're not flighty, they're not highly strung, they're very placid, and that shows in the meat." Of course, those paddock assessments only start with temperament. All Atriem Murray Grey cattle are weighed at birth, which also provide the very first grading of the new born's temperament. They're weighed again at weaning aged around 200 days to track growth rates. As yearlings, they are scanned for rib fat, rump fat, eye muscle depth and intramuscular fat as well as being independently assessed for structure. "It means we know what is under the skin," Mr Koch said. "And because we run contemporary groups of our females of at least 20, we're comparing 20 raised under the same conditions, and then they're scanned at the same time. "Independent scanning gives us a clear idea of what that animal is genetically. "And we will select based on their temperament, their structure, and their carcase qualities as shown by that scan." Those that don't make the grade for breeding are finished on grass and local hay before being processed at around 12 to 15 months, depending on the season. When they reach Victory Meats, breeder and butcher discuss each carcase. "We have a look and say this one was good, he was on better feed or came from this bloodline," Mr Bonacci said. The carcases are MSA-graded by the local abattoir, which provides useful feedback for Mr Koch but the butcher is confident of quality, irrespective. "We don't have to have them certified because we know they're yearling beef, grass-fed; I know what they are, I go and pick them myself," Mr Bonacci said. Mr Bonacci is now also dealing directly with producers who have Atriem Murray Greys bloodlines and is looking at expanding the wholesale arm of his business. The meat already goes to Melbourne, Kilmore, Flowerdale, Heathcote and a host of other towns. A new processing facility would allow Victory Meats to grow beyond the five to six bodies a week he currently butchers to around 20. "I'm actually going to try to brand them, it's an Australian breed of cattle and it makes sense to have Australian, grass-fed, natural beef," Mr Bonacci said. Photo by Marian Macdonald, Stock & Land

01.01.2022 An idea 1.5yrs ago has finally become a reality for a former West Australian, Greg Smith, from Seven Day Rd in Manjimup WA. He had Murray Greys when living here... and also growing up. He wanted to import the first Murray Grey Semen into Colombia, South America, so with the help of a West Australian Murray Grey Breeder the process was starting finding something Export approved. Semen availability was at a minimum for South America. Wallawong genetics were found to be suitable and approved so a consignment of Bottlesford Kudos and Wallawong New Kid on The Block was sent. Today the first calves hit the ground, and with a bang......Triplets!! The Murray Grey Genetics were used over Brahman cross cows and heifers with 16 PTIC to Murray Grey Genetics.
