22.01.2022 Just wanted to share this cute little go to dinner of moine. My simplleeee tray bake pumpkin soup. Heaven Tray bake pumpkin soup 1 Butternut pumpkin, deseeded cut into cubes with skin on ... 1 Large brown onion, peeled and cut into quarters 3 Garlic cloves, peeled 3 Sprigs of thyme 2tbsps Olive Oil salt and pepper 500ml Vegetable stock 100ml coconut cream Pre heat oven to 180C then place cubed pumpkin, onion and garlic into a baking tray. Season with thyme, salt and pepper then coat in olive oil then place into the oven for 50 to 60 minutes or until the pumpkin is soft and the onion is cooked through and roasted. Place the roasted vegetables into a large size pot, cover with stock then using a hand held stick blender, blitz until smooth (add more stock if needed). Bring the soup to the boil over a medium heat then add the coconut cream. Serve warm with a drizzle of coconut cream and some freshly ground black pepper. See more

17.01.2022 Bakemas has started yallllllll - Vegan style My neighborino @likeavegan popped over on the weekend to get into some serious baking. We have joined forced to make this knockout plant based cake - The coconut and Raspberry cake (AND IT LOOKS LIKE SNOOOWW ) Super easy, really quick to make and the recipe is below :) Coconut and Raspberry cake 10g apple cider vinegar... 250g coconut cream 90g oil (preferably coconut oil) 1tsp vanilla 200g S R flour 180g raw caster sugar Pinch salt 1/2 cup frozen raspberries 1/2 cup moist coconut flakes Icing 150g vegan margarine 150g copha - melt / soften 150g icing sugar mixture 1tsp vanilla 1 cup moist coconut flakes Preheat oven to 170C, grease and line two 20cm baking tins 1 - Place coconut cream and apple cider vinegar into a small jug and mix well then set aside for 5 minutes until mixture has curdled. Once curdled, add the oil and vanilla then mixture until well combined. 2 - In a separate bowl mix together self raising flour, raw caster sugar and salt. In 3 batches, mix the milk mixture into the dry mix, ensuring each addition is well incorporated. Fold through the raspberries and moist coconut flakes. 3 - Evenly portion cake batter into the lined cake tins then bake on a centre rack for 30 - 35 minutes, or until a toothpick inserted into the centre comes out clean. Allow cake to cool completely on a cooling rack prior to icing. 4 - For the icing, whisk all ingredients together until a light fluffy icing is created. Generously spread the icing over the top of the cake, layer the cake and repeat until the whole cake is fully iced. Sprinkle the coconut around the cake to give the 'snow' effect. 16.01.2022 Cold weather to me means curry season, and I do love me a good curry (insert CurryBoi ) Below is a cute pumpkin and eggplant curry - its a bit of a go to for me and is super simple. I toasted off some cumin and add it to my saffron rice as it was cooking for a bit more flavaaaaaaa. Recipe below Vegan pumpkin and eggplant curry 1/4 cup canola oil 1 brown onion, diced ... 1 thumb ginger crushed 4 cloves garlic crushed 1 tbsp tomato paste 1 tbsp curry powder 1 tbsp ground cumin 1/2 tbsp ground chilli powder 2 tsp ground coriander seed 2 tsp ground turmeric 1L vegetable stock 1/2 butternut pumpkin, cubed with skin on 1 eggplant, cubed 2 tsp sugar salt to taste lime coriander leaves Heat oil in a large pot, then gently fry the onion with ginger and garlic for 3/4 minutes or until fragrant. Add the tomato paste, cumin, chilli powder, coriander and turmeric and cook for an additional 2 minutes, continually stirring. Add the vegetable stock, eggplant and pumpkin then cook at simmer for about 15 to 20 minutes until the pumpkin is tender. Add the sugar, salt and a squeeze of lime (add more of any of the seasonings to your taste) then garnish with coriander leaves. Serve with freshly cooked rice or flat bread.

16.01.2022 Ok, you guys really got into that raspberry fudge slice I posted so here is a through back to my Dulce de leche chocolate brownie - weekend baking maybe ? Haha 200g Butter 200g Chocolate (dark) 3/4 cup Brown sugar... 3 Eggs 2tsp Vanilla extract 1/2 cup SR flour 1/3 cup Cocoa powder 1 tin Caramelised condensed milk (or dulce de leche) * Pinch of salt 1 - Pre heat oven to 160C, and spray a square brownie tray with non stick spray and line with parchment paper. 2 - In a microwave safe bowl, melt butter and chocolate in the microwave on 30 second burst until melted. Once slightly cooled, whisk in the eggs, sugar and vanilla until evenly mixed through. finally, mix in the self raising flour and cocoa powder ensuring there is no remaining lumps. 4 - Spoon dollops of caramelised condensed milk around tray then cover with the brownie batter 5 - Bake in oven for 35 minutes then cool in the fridge until set. *If you cannot locate caramelised condensed milk or dulce de leche you can simply make it by placing an unopened can of condensed milk in simmering water for 3 hours. Over the 3 hours, the condensed milk will slowly caramelise.

15.01.2022 Vegan Sausage Rolls!!! FriYAY this week is allllll about the vegan goodies. Again, this recipe is super simple and honetly has me questioning if these are even vegan. MAKE SURE YOU TRY THESEEEEEE YUM. Vegan Sausage Rolls 200g Roasted sweet potato 100g Silken Tofu... 1/4 cup Wallnuts 1/2 cup Brown rice cooked 1/2 Brown onion, rough dice 1/2 cup Sage and onion mix 3 sheets Puff pastry (Vegan) Wash Plant milk Nigella seeds (or poppy seeds) Preheat oven to 200C Place all ingredient besides the pastry into a processor then process until a rough mixture is formed (should resemble the texture of ground mince) Cut the puff pastry sheet down the centre to create two rectangles. On the short edge of the rectangle, spoon your filling along the edge. Roll up to enclose filling then continue with remainder of the pastry. Cut each sausage roll log into thirds then place onto a baking tray seam side down. Brush with plant milk then sprinkle with nigella seeds. Bake for 20 - 25 minutes or until sausage rolls are golden brown. Serve warm with condiment of your choice. YUMMMMMMMMMMMM @megannevans.photography

10.01.2022 Vegan recipe, coconut scones . Honestly, the first time I made these scones I stood there in shock. The combination of the delicate scone with the hint of coconut is a winner in my eyes. Recipe:... 3 cups Self raising flour 1 cup Coconut cream 1 cup Lemonade 3tbsp Plant milk Pre heat oven to 200C Sift self raising flour into a large mixing bowl. In a seperate bowl mix together the coconut cream and lemonade then, pour over the sifted flour. Using a butter knife, mix the ingredients until the scone dough comes together then turn out on to a lightly floured work bench then very lightly knead the dough for about 2/3 turns or until it just comes together. Roll dough into a large 3cm thick round then using a 5cm ring cutter, cut out scones (should make approximately 10 to 12 scones. Place scones onto a baking tray just touching on each side, brush scones with plant milk then into the oven for 15 minutes or until golden. Serve with some whipped coconut cream and some your favourite jam. @megannevans.photography

09.01.2022 What a morning! Had a blast on @studio10au this morning making a super dense and delicious Guinness cake with a cream cheese icing. Thanks @whatsarahsnapped and @tristanmacmanus for helping me whip up this show stopper of a cake Recipe Stout Cake... 250g Butter 1 cup Guinness 3/4 cup Thickened Cream 2 cup Self Raising Flour 2 cup Raw Caster Sugar 1/2 cup dark cocoa powder 2 eggs Cream Cheese Icing 250g Cream Cheese 250g Icing Sugar * Preheat oven to 170C, spray and line an 8 inch cake tin * Place butter into a small saucepan then on a gentle heat until the butter is melted. Add the Guinness and cream then whisk. * In a large mixing bowl, combine the flour, sugar and cocoa powder. Once the butter mixture is cooled, whisk in the eggs then slowly incorporate the wet mixture with the dry. * Bake in the oven for 45 to 50 minutes or until a skewer can be inserted and removed without any cake batter attached. * Allow the cake to cool before icing. * To make the icing, whisk both ingredients in a bowl until a light fluffy well incorporated icing is made. Once the icing is nice and smooth, ice the top of the cake generously with the icing. * @ Channel 10

01.01.2022 Okkkurrrr I have another friyay recipe for your weekend of baking This one is probably one of my most requested recipes - Rum Baba! Thats right, the cake that I made for @katyperry on @masterchefau. The cake that gave me the nickname The tits which people still find the need to shout out to me from their cars recipe below Also, thank q @megannevans.photography for taking these lovely snaps. Rum Baba recipe 110ml Cream, warmed for 30 seconds in the microwave ... 2 tsp Active yeast 10g Sugar 220 g Plain flour 2 Eggs 70g Butter, melted 1. pre heat 180C 2. Combine cream, yeast and sugar in a bowl then place aside for 10 minutes to bloom 3. In a stand mixer place the cream mixture, along with the flour and eggs then with a hook attachment, kneed for 5 minutes. Once mixture is soft and elastic, add the melted butter then mix to combine. 4. Divide mixture between greased moulds then place in a warm place for 30 minutes or until doubled in size. Then place into the oven and bake for 15 - 20 minutes or until golden. 5. Once baked, cool babas then soak in rum syrup to absorb the flavour. Rum Syrup 350g Caster Sugar 75g Spiced Rum 500ml Water 1 drop vanilla bean paste 1. Place all ingredients into a saucepan, whisk together then bring to the boil. Boil syrup for 5 minutes to infuse the flavours. Orange and Vanilla Chantilly cream 200g Thickened cream zest of 1 Orange 1 drop Vanilla bean paste 2 Tbsp Icing sugar mixture 1. Place all ingredients into a bowl then whisk together until firm peaks are created.

01.01.2022 My favvvvvvvv veg to pop into a cake, pumpkin !! This is my Pumpkin Bread recipe, give it a crack and make sure you let me know how you go :) Also, its the cake that that I made during my first immunity win on MasterChef. 1 1/2 cup roasted pumpkin puree (approx 1 quarter of a large pumpkin) 2 whole eggs 1 cup sugar... 1/2 cup brown sugar 1tsp. salt 1/2 cup olive oil 2 cup self raising flour Mixed spices of your choice. I used 1 tbs each of cinnamon and cardamom however you can add spices like nutmeg and clove. Pumpkin seeks or crushed walnuts to sprinkle on top 1. Pre heat oven to 170C 2. Cut pumpkin into 1 cm cubes and place onto a baking paper lined roasting tray. Give the pumpkin a light oiling then place into the oven for 20 minutes or until soft - try not to colour the pumpkin. remove pumpkin from the oven then using a masher puree the pumpkin then set aside. 3. Place sugar, salt, vanilla and eggs into a bowl then mix to combine. Add the olive oil and pumpkin then mix well. Finally, add the flour and spices then mix until no lumps remain. 4. Place into a lined bread tin then bake for 50-60 minutes or until a skewer inserted in the centre of the bread comes out clean. 5. Let the bread cool for a few hours before slicing because otherwise it will crumble and not be as moist.
