25.01.2022 Have you ever tried to eat Sashimi or Sushi of a blue-fin tuna( not yellow-fin tuna) ? A blue-fin tuna basically has 3 different parts of meat in terms of taste, colour and texture. Akami (, Red meat ) is what many sushi lovers outside of Japan know as maguro or simply tuna. ... Not so expensive and is used in a variety of non-sushi dishes. Chutoro( , Medium-fat tuna) is the fattier variant of akami, with noticeably lighter color (light red to pink). Often consumed as sashimi (sliced raw fish) as well as sushi. Ohtoro(, pink fat tuna) is the fattiest part of the tuna with a clearly marbled appearance (similar to how Kobe beef and other domestic steaks are marbled in fat)and allegedly can only be taken from the fattiest bellies of Kuromaguro and Minamimaguro Tunas. You know ? It's the season for eating a blue-fin tuna in Sydney until September Also, our chef's picking it up from the Sydney fish market everyday.

"Rice" and "Fish" are the two basic ingredients when you talk about Japanese cuisine and culture. Sushi is the combination of rice and fish. Sushi's first appearance in Japanese history was recorded in the eighth century(Yoro Code). At that time, it was not the taste as much as its ability to be kept for long periods through the fermentation and salting process. Nigiri Sushi we see today started in the nineteenth century(Edo era). "I want to eat sushi quickly and conveniently." 19.01.2022 3 Tips on how to enjoy Sushi How to order: There are basically 3 ways to order your sushi at a sushi restaurant "Omakase," "Okonomi" and "Okimari." "Omakase" is the chef's choice of the day. You will decide what you eat if you choose "Okonomi." "Okimari" is a present course. Please notify the sushi chef if there is anything you do not like in advance.... How to eat Nigiri Sushi: Sushi was meant to be eaten by hand in the 19th century(Edo era). However, it is fine to eat it either by hand or with chopsticks today. You may choose to use soy sauce depending on the topping of sushi. Sushi chefs will notify you which sushi you are supposed to eat without soy sauce. Eating Order: There is no strict order for eating sushi, however, some fish could leave flavor and fat in your mouth and possibly affect the taste of the sushi you eat after that. So, it is considered wiser to start with plain ingredients and move on to rich and strong ingredients. You can also neutralize your mouth with Gari(fresh ginger slices pickled in sweet rice vinegar) and Japanese tea after you eat a strong flavor. If you do not know what to order, try "Omakase," and you will be surprised by the chefs' creative and amazing food presentation, and most likely with the fantastic taste of the Sushi and Sashimi.

Sushi rice is called Meshi in Japanese, and often called Shari() by the Sushi chefs. It is made by adding Sushi-su( mixed with vinegar, salt, and sugar) and other ingredients to boiled rice. Its name "Shari()" is believed to have been named after that shape of rice. There is a rice bone shape...d on Buddha's Adam's apple called Shari." Among the different types of Japanese rice, Koshihikari() is one of the best for Sushi rice. 01.01.2022 What is Sake? In Japanese, the word "sake" can mean any alcoholic beverage. But in English, people generally use it to mean a specific type of rice alcohol, also known as Nihonshu. We have categorized sake into 5 sections as Nihonshu, Shochu, Awamori, Umeshu and Japanese Beer. Nihonshu is a traditional Japanese fermented alcohol and so-called SAKE in English. We will call Nihonshu SAKE to make things less confusing for you. Sake is sometimes called rice wine, but this expre...ssion is not quite right.
