24.01.2022 Make yourself a creamy ‘green goddess dressing’ It has the texture of silk and a taste of freshness that lifts any dish to the next level!! 1/2 cup cashews - blitz till ground finely. 1 inch of ginger peeled... 1/2 an avocado Juice of 1/2 a lemon 2 tablespoons of apple cider vinegar. 6 tablespoons of olive oil 1 heaped teaspoons honey A bunch of basil leaves A bunch of coriander leaves 1/2 a chilli 1 tablespoon of coconut yoghurt/natural yoghurt Season with salt and pepper Use as a delicious dip Or add a little water until it’s smooth and pourable and it’s a dressing! Keep the extras in the fridge and use within a few days. Yes there’s a heap of ingredients but the basics to a good dressing are always the same. Remember... 3 parts oil to one part acid. Don’t be afraid to put your own spin on it - use what you have handy! And for bonus points... plenty of fibre good healthy fats ACV and lemon to aid digestion Ginger to calm, reduce gas and inflammation. coriander and basil both aid digestion and are anti-inflammatory. yoghurt for a probiotic hit. 22.01.2022 Quick choc muffins Ok - everyone needs a treat sometimes. Today’s shearing morning tea! ... You can amp up the goodness in the humble muffin easily with a few upgrades I use different flours to increase the variety of fibres and nutrients to make up the original 1.5 cups of gluten free flour - they all behave a little differently so if you have questions around what to use comment below. I love to add chia seed into the nuts before I grind them - always results in a beautiful moistness. I reduced the sugar and replaced it with a nutrient dense version like rapadura sugar. Choose raw organic honey. Replace milks with nut milk, yoghurts etc Fermenting the fruit first reduces the sugar and carb content. This recipe is so beautiful for a delicious treat! Dry mix 1/2 cup buckwheat flour 1/2 cup chickpea flour 1 heaped tbsp chia ground With 1/2 cup almonds - grind to a meal. 1/2 cup cacao 1/ 4 cup rapadura sugar 2 heaped teaspoons baking powder Wet mix 1 cup mashed banana ( or pumpkin/ sweet potato or cooked apple etc) 1 cup non dairy milk or yoghurt 1/2 cup honey/ maple syrup 2 large eggs 3 tablespoons olive oil Combine the wet and dry mix gently Add in nuts or a few dried fruits Cook in a fan forced oven set at 180 for around 20/25 mins When you press the top of the muffin and it bounces back up - it’s ready! 15.01.2022 A weekend at a day spa or a weekend with girlfriends, which one would you choose?? For me, it’s time with my beautiful friends that trumps every time! In a world where women are called on to exercise their male energy more and more with relentless commitments outside the home but statistically still maintaining the lions share of roles inside, no wonder life gets hectic! ... We stretch ourselves paper thin, to the point of fragility. With life’s crazy expectations- we don’t take time to hear or feel warnings when our body sends them ... Tight chest, racing heart, pounding head, upset belly, frantic mind, poor sleep...so many signs that we choose to ignore! Prescription.. Take some time to just be with your girlfriends, immerse yourself in that feminine energy we are so missing in everyday life. Try ... no schedule no expectations no deadlines no pressure... Just rest, reset and replenish. It is such a joy to just be, drink tea, and talk life through. 06.01.2022 1 kilo of mince = a tonne of options! My favourite staples are these super easy rissoles for fridge grazing 1 kilo of mince... 2 onions chopped finely Fresh herbs chopped finely ( I grab whatever is in the garden, parsley, coriander, basil, mint) throw in extra flavour with salt, pepper, turmeric and ginger ( dry or fresh) Mix together thoroughly. Split mix into 10 equal portions. Roll each portion into 2 equal sized rissoles. Pour a generous slurp of olive oil in the pan, and cook on a medium heat. The best tip here is to let the first side cook until they lift easily off the pan before turning to brown the other side! Simple healthy options ready in the fridge will help you keep on track! Plan ahead and make it easy for yourself. You can grab easily these and top with pesto, salsa or my favourite @gevityrx mayonnaise for extra deliciousness! Throw onto a pile of salad and a beautiful balanced meal is on the plate in seconds, they also make great lunchbox food! 04.01.2022 What a nourish bowl looked like before before it was trendy and instagram-able A bowl of grass fed beef, pressure cooked with last weeks veggies ...the ones almost destined for the chook bin! It’s a warm, fulfilling and nourishing meal and so easy on your belly! ... Served up with sautéed greens with garlic, some rice cooked (absorption method) in some @gevityrx bone broth, and some of the weeks pre cooked roast veggies. So in the bowl, in our belly’s - and a stash in the fridge for leftovers! Make your week easy, drag that pressure cooker out from the back of the cupboard and kick it into action If you don’t have one, think op shop! I had a friend who found herself one for just a few dollars and ticked the recycling virtue box too Loose recipe A kilo of diced steak, dusted with gluten free flour and browned in olive oil. 2-3 onions Some root vegetables (I used carrots) Any forlorn vegetables from the fridge chopped 3 chopped tomatoes 1 cup of broth Salt, pepper and Herbs of choice -today I used liquorice powder, garlic powder and cumin. 02.01.2022 Just a little add on to my tangent on loving yourself up by getting in your protein! I made an easy warm salad for lunch with the focus on hitting a 30g protein target in each meal and to include a stack of leafy greens! Making a one pot wonder with all the greens I’ve gathered from the patch including some of the lettuce, all washed shredded and stir fried gently in olive oil. ... Yes you can cook lettuce! Pile on to some reserved raw lettuce leaves, spoon on some sardines (ridiculously tasty, not like I remember sardines to be at all!) sardines 23g of protein plus a boiled egg around 7-8g and ... Viola - I’ve met my brief, my tastebuds and my appetite
