25.01.2022 The colours in this fudge is what attracted me first, and then I realised it had white chocolate in it which I also love - but I know not everyone does! Worth printing off a copy to try at some stage ... dare I do that? Worried I might end up eating the lot on my own! xo

23.01.2022 Steaming animal proteins in the Varoma: I’ve cooked this 1kg piece of fillet which is destined for an Asian salad for tonight’s dinner ... being able to use the Thermomix Varoma means I don’t heat up my kitchen using the oven, or can use my oven for other things ... like making blueberry pie for dessert (family dinner night) When using the Varoma to cook any type of animal protein I take it out of the fridge 30 minutes before cooking, I always - regardless of which Thermom...ix I have - fill the TM bowl with a litre of water, then cook the protein for anywhere from 12 minutes (fish) to 25 minutes (chicken breasts, pork or lamb fillets) to 35 minutes (for denser meats like today’s fillet) on speed 3. I test it after the cooking time and if I think it needs it I cook another 2 minutes. Remove the Varoma and allow the protein to rest for at least 10 to 15 minutes before cutting and serving ... today I let the fillet sit longer because I want the meat at room temperature ... it’s such a great way to cook and saves a lot of messing around xo #thepassionatepantry #perthfoodie #perthfoodblogger #foodbloggerperth #thermomixtm6 #thermomixtm5 #thermomixtm31 #varomasteaming See more

16.01.2022 Apple Spice Cake ... such an old recipe which I dig out every now and then when time is against me ... I don’t normally include toasted walnuts when making for the family due to nut allergies, but this cake isn’t for the kids so it’s included ... which is how I prefer it! What I love most about this recipe is that it can be prepared to a large extend the day before and then brought together quickly the next morning. I needed this to be ready to cut by 10am, so last night I ...toasted my walnuts, mixed the dry ingredients together, and lined by tin. This morning I melted the butter lightly, mixed in the eggs and vanilla and added that to the tin of pie apple in my mixing bowl, folded in the walnuts, then the flour mix and into the oven ... it took less than 5 minutes! Baking time is 1-1/2 hours which is a while but I had this in the oven by 6.30am so plenty of time to rest before cutting and serving. I know kale is a polarising ingredient but if you know how to prepare it, its delicious (process is covered in the recipe) ... this has become my familys favourite salad ... 09.01.2022 I was recently asked "What is a sheet-pan meal?" ... and this is a good example ... everything is put into a roasting pan and baked together. I love the idea of this recipe, but I wouldnt toss it half-way through its cooking cycle of 15 to 20 minutes ... personally I would bake at 200 degrees fan forced for 20 minutes, but then check it and perhaps increase time for another 5 to 10 minutes if the veggies needed a bit more "char". such a lovely idea! Serve with a thick slic...e of toasted sourdough or other bread of choice and you have a delicious, light, easy dinner ... perfect for the weekend with a glass of red! xo

04.01.2022 GF FLOUR BLEND: I love seeing what others do for their flour blends, and this GF version comes to us from Sophia. For those that would wish to mill their own flours, Sophia has confirmed in the comments section:... "You can definitely measure whole rice and buckwheat (into the bowl) and then mill 1 Minute / Speed 10" ... before adding the starch. This will save you having to buy those flours (white rice flour, brown rice flour, and buckwheat flour) already milled. 02.01.2022 This was such a good read on the weekend ... it is true in so many ways. Having said that however, it is so hard sharing recipes ... there is a fine balance between writing too much instruction where you put someone off trying a recipe, or leaving too much out that there is risk of failure. But I do understand exactly what this article is saying, and lament at how the home cook (all of us!) can achieve the same end result as the "picture" that inspires us to try a recipe in t...he first place. Whatever you do, dont give up ... use what you learn to create your own masterpiece ... as the old saying goes: "Necessity is the mother of invention" xo
