After weeks of experimenting in the kitchen...and feeding my failed recipes to the chooks I have adapted Mum and Nana's original coconut chocolate slice recipe to suit lentil flour!!!! Yes it gluten free AND uses 100% lentil flour - think of all that extra protein you get whilst you are having a cuppa and enjoying this delicious treat!... I'm so excited this recipe ACTUALLY works as I'm NOT a recipe developer nor do I claim to be. I just enjoy experimenting with old family recipes. He cooked these a few nights ago - see picture in previous post! Using our lentil flour in sausage roll fillings or patties really help to hold all the ingredients together. We mill our home grown lentils into a fine gluten free flour so you can add all this goodness into MANY baked treats and evening meals! 13.01.2022 SAVE this recipe my friends! It is the most scrumptious schnitzel crumb which doesn’t require bread!!!! If you are craving a simple meal (after all your Christmas food ) which can be cooked on the bbq or eaten cold the next day, give this one a go! The very talented Clarissa from The Nourished Chef @thenourishedchef has created this Almond Crunch Schnitzel crumb for all our lentil flour lovers out there ... Ingredients 5 Chicken Breast 3/4 Cup Lentil Flour 3/4 Cup Almond Meal 1/2 Cup Finely Grated Parmesan 2 tsp Garlic Powder 2 tsp Onion Powder 2 tsp Dried Parsley 2 tsp Dried Oregano 1 tsp Dried Thyme Sea Salt + Freshly Ground Black Pepper 60g Lentil Flour (for coating) 2 Eggs (organic free range) 2 Tbsp Coconut Milk or Organic Cows Milk Coconut or Grapeseed Oil (for frying) Method 1. Place the chicken between two sheets of baking paper and pound with a meat mallet to 1 cm thickness. 2. In a bowl, whisk the eggs and coconut milk/cows milk until well combined. Set aside. 3. In a second bowl, combine the (3/4 Cup) lentil flour, almond flour, ground parmesan and dried spices in a shallow bowl and mix well. Season with salt and pepper and set aside. 4. In a third bowl, place the remaining lentil flour (60g). Dust the pounded chicken with the lentil flour, shaking off any excess. Working with one piece at a time, dip the chicken in the egg mixture, then evenly coat with the almond meal/lentil mixture. 5. Heat the coconut oil in a large, deep frying pan over medium-high heat until it reaches around 160C (To test, place a tiny piece of chicken in the oil if it starts to bubble around the chicken immediately, the oil is ready.) Shallow fry the crumbed chicken for 3 minutes on both sides, or until golden and cooked through. 6. Remove the chicken from the pan and place on paper towel. Enjoy! Ps - I also use this crumb for chicken strips in a garden salad or I make nuggets for the kids

These pancakes are not only Gluten Free but have the most amazing texture and rise. Cook up a few, get stacking and give them a good drizzle with your favourite pancake syrup. Get flipping! ... Low Carb Vegetarian Gluten Free Dairy Free Makes 6 Pancakes 3/4 Cup Fine Blanched Almond Meal @nutsaboutlifeaustralia 1/4 Cup Red Lentil Flour @thepinnaroofarmer 1 Tbsp Coconut Flour @nutsaboutlifeaustralia Cup Almond Milk @califiafarmsau 3 Large Organic Eggs 2 tsp Pure Vanilla Extract 2 tsp Baking Powder (gluten free) Unsalted Grass Fed Butter or Virgin Coconut Oil (for frying) To Serve Lakanto Monk Fruit Maple Syrup Blend @lakantoaustralia Fresh Berries Method 1. In a medium bowl, using an electric hand mixer combine almond flour, red lentil flour, coconut flour, eggs, almond milk, vanilla extract and baking powder. 2. Heat up your butter or coconut oil and spoon approximately 4 Tbsp of batter into a non-stick pan over a low-medium heat. Cook for approximately 2 - 3 minutes or run a spatula under the lip of the pancake, once browned it’s time to flip. 3. To serve, top with blueberries and a good drizzle of Lakanto Maple Flavoured Syrup. Cook’s Tip: * These pancakes are naturally low carb and do not contain sugar so your sweetness will need to come from syrup toppings and your choice of berries. Give them a good drizzle! * These pancakes are best made small to medium, making it so much easier to flip.

11.01.2022 I know it's a burning question! There are a 3 stages in this process. I'm going to post about each stage once a week. We are farmers who grow wheat, barley and lentils. Whilst lentils themselves don't contain gluten, we are very aware of potential cross contamination. ... I've been with a friend who was 'glutened' and from this experience, we are VERY passionate about being honest and transparent about how we safely produce your food. Stage 1 All our machines you see in the photos above, are cleaned twice prior harvest and then inspected. Lentils are the first crop to be harvested on our farm. Once the lentils are done, we then move onto wheat and barley. We allow at least 80 tonnes (80,000kg) of lentils to move through the machines before we keep the required amount of lentils for our flour. The lentils are then stored in a clean silo which is dedicated to our lentil flour. Yes they have their own home and do not share it with ANY wheat or barley. To be on the safe side, our allocated lentils are then professionally cleaned at a facility which has a designated gluten free seed cleaner. They do an amazing job! Stay tuned for stage 2 and 3! 10.01.2022 Harvest has started! Today we begin our Oaten Hay program. This is our only Hay paddock which is about 110ha or 250 acres. Our mower cuts it down at 4ha per hour, travelling at 15km/h, so it’s not a quick process. In 2021 Lentils will be grown here.

10.01.2022 The wait is over! I'm so happy with the way this fluffy delicious and nutritious cake has turned out! I hope you enjoy baking this recipe and eating it as much as we do! Thanks Nan!... Ingredients: 125gm The Pinnaroo Farmer red lentil flour 4 eggs 125gm soft cooking butter or you can use olive oil 1/2 cup caster sugar or rice malt syrup 1 tsp baking powder 2 oranges - grate the rinds & squeeze 1/2 a cup of juice Sauce: 100ml water 2tbs caster sugar or rice malt syrup Method: 1 - Oven at 170 degrees C, line a square cake tin 20x20cm 2 - Separate the egg whites, beat the yolks with the butter. Add the sugar and beat again. 3 - Sift the flour & baking powder into the wet mixture 4 - Beat the egg whites for 10min 5 - Add the orange rind & juice - Mix well 6 - Fold in the egg white 7 - Pour into the tin and cook for approx 40min or until golden and a skewer comes out clean. Once the cake has cooled, boil the water & sugar for a few minutes (you can add an extra squeeze of orange juice in her too if you want) Drizzle the sauce over the cake! Random Tip: I left my cake to cool in the tin for 10min. It got stuck so my cake landed upside down on the cooling rack! HOWEVER, it worked out perfectly as the firm top of the cake held the sauce well and didn't make the bottom of the cake as soggy! 05.01.2022 How do we ensure there is no gluten cross contamination in our delicious lentil flour? Stage 2 - Milling Once the lentils have been cleaned, they are then stored in 25kg bags.... Milling time! Our mill is ONLY used for lentils and therefore has NO contact with any wheat or barley. We mill only what we need so our flour is fresh for you. Once milled, we send our flour samples to a food lab in Adelaide (SAALS) to get tested for gluten. This is our final check for traces of gluten in our flour. This testing is done for every batch of flour that we mill. 05.01.2022 My 1st go at a savoury, gluten free, lentil flour pastry base!! Verdict: - used mum’s classic pastry recipe - dough held together reasonably well...room for slight improvement as it tore in a few spots when trying to roll it out thin enough. In the end it was a bit too thick!... - cooked it for 10min prior adding mince filling. It hardened nicely - tasted lovely with my mince filling! - pastry didn’t got soggy and I could serve it up very easily If anyone has any gluten free pastry tips, feel free to let me know!!

05.01.2022 I know many of you who follow us also follow @_sarahwilson_ I Quit Sugar @iquitsugar WELL I’ve been playing around with a few of her recipes and incorporating our delicious lentil flour into them for a sneaky bit of extra protein ... I made this slice yesterday...oh my gosh!! Kids had second helpings and hubby couldn’t believe how it tasted. It looks rich and heavy BUT it’s light with a burst of sweetness when you bite into the thin chocolate layer on top The coconut middle has a subtle hint of peppermint & the biscuit type base is lentil flour, almond meal & raw cacao powder. This is going to be a new festive favourite of ours. I’m sure you can find this recipe on her website @iquitsugar Enjoy! 02.01.2022 Stage 3! If you have followed along so far, thanks! We hope this information has been helpful for you. Our final stage is here as to how we ensure there is no gluten cross contamination in our tasty red lentil flour. Stage 3 - Packing Once we receive our lab results confirming our four has nil gluten detected, then we get to work stamping that batch number onto our labels. ... We keep a sample of flour for every batch we mill and attach it to our lab results - for our own records. We have hired out a commercial kitchen in Pinnaroo (see the pic above) and this is where we package your flour. We follow the normal food and safety standards/practices when using this kitchen. Our packets are then heat sealed and posted off to you! AND there you have it! An insight as to how our farming and flour business work together to ensure our lentil flour is a safe gluten free product for you.
