22.01.2022 Good morning! It's Top 8 Challenge day! We'd love you to share your #Top8Challenge meals with us! What did you eat for breakfast? We made Cinnamon Polenta... Ingredients: 400ml tin coconut milk 100ml water 1/2 cup corn polenta 1 teaspoon ground cinnamon In a saucepan heat the coconut milk and water over medium heat until nearly boiling. Stir in the polenta and cinnamon. Lower the heat and simmer stirring regularly for 20 minutes. 20.01.2022 Bini is taking our #Top8Challenge in support of her son Felix. Felix was diagnosed with EoE at 18 months old after a long journey. Finally, he is doing better after multiple tests, surgeries, endoscopies, biopsies and elimination diet for more than three years and these are ongoing as there is no cure. 17.01.2022 James signed up to take our #Top8Challenge and has already raised $1,443! What a champion effort James! James says he's taking the challenge because... 'I have EoE and I would like to stop it. It's really annoying and agitating to go through an elimination diet or for some kids to have to go on steroids and I want to find a cure for this disease. Only 1 in 2,000 kids have it and it's my goal to fundraise enough money to get it eliminated and find a cure.' We all live in hope... for a cure and funding medical research takes us one step closer. 10.01.2022 Olivia and I were out and about today so had to find a #Top8Challenge lunch on the go. Woolworths has their sushi ingredients listed so made it the ideal choice. No soy sauce today for us!

09.01.2022 Dinner tonight on the #Top8Challenge was chilli con carne. I made it in the Thermomix but it would be easy to make on the stove top too. What was on your menu today? Lentil Chilli Con Carne Ingredients:... 1 carrot, cut into quarters 1 brown onion, halved 2 garlic cloves 2 tablespoons of rice bran oil - 1 teaspoon of chilli powder - 1 teaspoon smoked paprika 400g tin of lentils, rinsed and drained 400g tin of black beans or kidney beans, rinsed and drained 400g tin of diced tomatoes or passata 2 tablespoons tomato paste 2 tablespoons of vegetable stock paste or 1 Massel stock cube salt and pepper to taste Place the carrot, onion, garlic into mixing bowl and chop for 3 seconds / speed 7. Scrape down the sides of bowl. Add oil, chilli powder and paprika and sauté for 5 minutes / varoma / speed 1. Add the tin of lentils, black beans, tomatoes/passata, tomato paste and stock and cook for 15 minutes / 100 degrees / reverse / speed 1. Served with steamed rice, jalapenos and plain corn chips. #wheatfree #dairyfree #eggfree #soyfree #nutfree

04.01.2022 Dessert tonight on our #Top8Challenge was one of our easy favourites, modified to make #Top8Free Apple Crumble Ingredients:... 1 large tin pie apple Cinnamon to taste 1 cup coconut cup raw sugar cup brown sugar 2 tablespoons Nuttelex Spread pie apple along base of dish, sprinkle with cinnamon. Mix your crumble ingredients together and spread over the apple. Cook in moderate oven for 10-15 minutes until browned on top. #wheatfree #dairyfree #eggfree #soyfree #nutfree

02.01.2022 Tannielle shares why she signed up for ausEE Inc.'s Top 8 Challenge... 'My amazing 2 year old has EoE, he will be undergoing his second endoscopy later this month. Ari struggles daily with eating as he gags, chokes or vomits nearly every meal. He has since developed a food aversion and prefers pureed foods. I am still so proud of him as every meal he will still try and eat his solid foods. Ari has 12 allergies but is full of life and smiles. Riley was diagnosed with EoE in 2011 and he is about to have his 12th endoscopy.
