24.01.2022 Due to Covid-19 BBQ classes cant operate. Queen Victoria Market is still trading, however, only for food retail. We are working with marketing partners and will extend any unused vouchers due to expire at least in proportion to any break in operation. As soon as we have a clearer picture about how things are moving or any indication of a return to regular operation we will open for bookings. The safety of our customers, staff and community is paramount, and whilst we want ...to get back to normal operation as soon as possible, we will only do this safely. We are very fortunate to have the support of QVM during the shutdown period, and as a TAFE teacher my day job is still in full swing. So whilst this is a pause, we are lucky not to be in the position of so many hospitality businesses. We know many of our customers, community and suppliers will be going through tough times. I hope this passes quickly. We thank our customers for being patient, and we are excited to welcome you back later this year. We will post details about our service resumption and plans once there is enough information to make them. 21.01.2022 Its pretty chilly this time of the year, so I moved a BBQ closer to the house so I can see whats happening from the warmth of inside. It snowed last week, Im not a total softie. It seems one of the many local Kookaburras like the @primoceramicgrills @primoceramicgrillsaustralia as much as I do. The only American made ceramic grill, and the an Australian bird with a name Americans just cant pronounce! Hint: it aint kook-a-burro They are quite tame around humans, and they... have great taste in meat. Ive had one sweep down and take a slice of steak right off a serving tray. 20.01.2022 UPDATE 17 MAY 2020 (Previous updates below) We welcome the news that pubs, cafes, and restaurants are able to begin reopening in a limited capacity from June 1. This means we are getting closer to resuming classes, however, we are not quite there yet. Classes require close proximity to others for an extended period of time. Managing social distancing obligations is something we take seriously, and this is a major factor that will determine when we can recommence.... 16.01.2022 It is wonderful to hear today that we can expect a gradual easing of restrictions that have been in place to combat COVID-19. It is great to see a light at the end of the tunnel. At this stage, we are not able to confirm a resumption date, as soon as we can we will post it on our website and on social media. Our plan will consider the logistics of gathering a group of a viable size for classes, and the safety of touring the market as a group. We are looking at how techn...ology or other methods can help us to bet back to business safely as soon as possible. 16.01.2022 Over the years Ive filled my bookshelves with hundreds of cookbooks. Its a joy to add this beautiful book by Natalie Paull @beatrixbakes after I snaffled the last copy from @booksforcooksau more stock on the way I am sure! Amazing recipies,. delightful narrative and a lifetime of knowledge and work shared in a seriously cute book. Pretty sure I will be making Potato brioche doughnuts this weekend.... It is awesome to see retail and hospitality getting back to normal, things are getting closer for cooking classes, but social distancing and the challenge of touring the market make it tricky to deliver the classes we love. We dont have a date yet, but we are itching to return when we can. How dearly I miss the @vicmarket.... @lakehousedaylesford sourkraut and @moutardemeauxpommery Blitva, a Croatian staple of spuds and leafy greens. Comfort on a plate. 10.01.2022 Remember that Saffron Goat I did the other day? Well today it went inside flat bread. Wow. The saffron permeated the bread as it baked and the whole thing is incredibly perfumed.... 07.01.2022 Hi All, The news in Victoria today is not good, lets hope things get back under control soon. With a significant part of Melbourne in lockdown, brining people together from all over Victoria for a BBQ class is not on the cards. We have great respect for the need to keep transmission numbers low, and understand the importance of social distancing and other measures in place for hospitality businesses. Unfortunately while there are still significant restrictions in place ...we cant operate. Classes run for an extended time and involve a group tour, sharing food, handling condiments, passing ingredients, even with some changes to suit the COVID requirements this stuff is such a core part of our classes we need to resume once there is a significant relaxation. Another reminder that any vouchers due to expire during the shutdown will be extended inline with the shutdown times. You dont need to email to confirm this, it will be processed automatically when we get back to trade. With no clear certainty around when we can resume, we do not want to start taking bookings and cross our fingers that things will be fine- this is difficult to track and a logistical nightmare when things like todays announcement occur. So we are still in the stage of bunker down and wait this out. We wish we did know a date, but we just dont. As soon as bookings are open we will be singing it from the rooftop, and you will be able to book online. 07.01.2022 Stay safe Victoria. Lets hope this knocks this thing back down to safe levels. We are lucky to have the support of the City of Melbourne and Queen Victoria Market, we look forward to returning when we can. As we have posted many times all vouchers will be extended in line with shutdown periods to ensure no one is disadvantaged.... We didnt rush back as the first restrictions began to ease as we didnt feel certain it was safe to do so. it is time to acknowledge that there will probably be some change to class formats and we may need to restructure things to ensure that we can offer a safe experience. Without a crystal ball I cant say exactly what this will entail but we will be looking at staggered class times possibly using some self guided components, adding some supplementary online materials. During the coming weeks and months we may reach out with a survey or some questions to help structure a post covid offering. It looks like most businesses in Victoria are going to operate differently after the pandemic then they have before. We are committed to providing the same awesome food and a terrific experience that kept us busy for 5 years. We will be doing everything we can to get back to running classes in a way that is safe and viable. We ask let you remain patient, and we would like to take this opportunity to thank you all for the support extended so far.

06.01.2022 We are close folks. We expect to have dates released for booking by the end of the first week in November. We are working through logistics of the tour, serving food, preparing food as a group etc and this takes some time to get right. ... We are also working on creating some specific dates for people with 2020 gift vouchers and cancelled bookings to ensure they are prioritised and have access to dates along side new business we get for 2021. Unfortunately with the world of COVID we can't simply throw the doors open without plenty of planning and thought. I hate to even think about it, but we need to consider things may change again, so we will probably release bookings a month or so at a time to keep it manageable. I am sharing my thoughts and process here to keep you up to date, but as with everything about 2020 things might need to change, so your understanding is appreciated. I can nearly taste the BBQ, but need to get things right to ensure the future of classes as we enter our 6th year of teaching BBQ at Queen Victoria Market. As soon as I have news, dates and you can book, it will be posted here, on our website and google business listing. 04.01.2022 Wishing everyone a Happy Fathers Day. Ive always loved these old family pictures. The first late 50 the second early 50s. Swan Valley Croatians, including my Dad, uncles, Grand Father and Great Uncle, cooking lamb on a spit. Glad Ive kept up the tradition and hopefully added a little to it. On a day like today its hard not to think of the struggles faced by generations of migrants all over the world, and the immense challenges that face people from countries less safe... and stable than Australia. This year I made the tough call to run no promotion for Fathers Day, our second busiest sales time of the year, we need to keep space for all those who still havent been able to attend in 2020. Covid-19 has been a mongrel and seems especially tough here in Victoria. Im sure its got a few kicks left in it. I still feel lucky that compared to those whove come before us or those in other parts of the world, even though things arent perfect, they could be much worse. 03.01.2022 Converted an old cold smoker into a fermenting chamber, no fan so its perfect! The addition of a home brew warming belt and a thermostat for the fridge and the heater and we have stable temp! Green tomatoes, coriander / cilantro salsa and two chilli ferments for hot sauce. Ive hot wired my @fowlersvacola jar cause the airlock was too tall for this set up, and putting some @ballpreservinganz jars I got as a gift with lowline silicone airlocks to use.... 02.01.2022 When you really miss yum cha, it's my not so secret favourite thing to eat out, so you make dumplings... The the reason you teach BBQ classes isn't because you are delicate with small hands. I made enough for dinner and the excess filling that was to be destined for the freezer has been repurposed Croatian style... Pork and Ginger and other goodies dumpling filling converted into steamed cabbage rolls to go with Korean noodle salad and soft eggs! I'm ok with being a dumplin...g quitter cause this is Gunna be delicious and it was easy!
