12.01.2022 Lucky at this stage to be at work. Picked our 108wines 1st ever shiraz. Grown by our winemaker at our leased vineyard in gippsland. Sensational numbers in the lab and great flavour. Unfortunately about 75% down on quantity but the quality will be worth the wait. 108wines shiraz available in 2021.

10.01.2022 Tough year in the vineyards this season. Poor fruit set, low yields, our gippsland fires, lots of rain/disease pressure and now a virus. Our sauvignon blanc from one of our gippsland growers sadly succumbed to botrytis so we lost that fruit. Dont worry sauvignon blanc fans I have some beautiful fruit from south gippsland being picked at the end of the week. We picked our two rows of sauv blanc from our leased vineyard (which was destined to bulk up our lost gippsland fruit). ...What we got was beautiful fruit. Great acid and flavour. But the quantity was to small for our press. So we thought we'd have some fun for us and the kids and do a traditional press and make some sauv blanc for our personal use. 06.01.2022 Our 2017 Pinot Noir has won gold!!!!

04.01.2022 Some steps of the process from juice to wine. Once whole bunch pressed the solids of the chardonnay juice are settled and the clean juice racked off to a new tank. Adds and adjustments are made to the juice before the yeast addition which will begin the ferment. Once the yeast is active, close attention and monitoring is required to ensure a smooth and successful ferment resulting in a wine with a profile specific to its desired style.

02.01.2022 2020 has been the toughest and for some the most heartbreaking in our great gippsland wine region. But for 108wines, these challenging times have steered us into the exciting world of Rose'. An early decision in November was made after a disastrous fruit set(very low yield) to pursue rose'. It will be made in the French style from our cab sauv fruit (from our leased vineyard). Expect a serious, dry rose. Fresh and crisp, with a complexity gained from a well managed wild ferment. Bottles will be limited due to the reduced yield. 2500kg reduced to a mere 220kg due to mother nature wrath. 108wines. Serious wines for serious times. https://108wines.com.au/

01.01.2022 MASSIVE DESTRUCTION | HUGE WINDS Mother nature's fruit selection 2021. A few jobs completed by mother nature (leaf plucking, trimming and some shoot thinning). Everything looks ok. Just a lot of cleanup was needed. A few posts broken, some roof gutters amoung the vines, wires fallen, some shoots stripped and many broken. Early days so no harm to grape quality.... We continue on, towards vintage 2021. See more
