17.01.2022 Cold Brew Coffee How to recreate my cold brew at home. . WHAT YOU’LL NEED 200g of filter roast coffee... 2lts water or adjust to 10:1 (brew water:coffee) . TOOLS Toddy Cold Brew System (A French Press and filter paper will do the job) Scales . METHOD 1. Insert felt filter into the brewers and rubber plug. 2. Grind 200g of coffee on a course setting slightly courser than French press 3. Measure 2litres of water 4. Add coffee grounds and water to Toddy brew system (if you’re using a French press start here) 5. Set aside in a controlled temperature, I use a fridge, for 14hrs. 6. Release the plug to drain and filter into a carafe. (French press, filter brew through paper filter into a carafe) 7. Enjoy over ice. Its great as a base for cocktails, desserts and soda. See more

11.01.2022 Tiramisù One of my favourite coffee things, a simple and delicious recipe. INGREDIENTS 500g Cold brew coffee 20ml Amaro (AVERNA)... cup Caster sugar 500g Thickened cream 250g Mascarpone 24 Savoiardi (ladyfingers) Your Favourite Chocolate . RECIPE PREPARATION Whisk cream in a medium bowl until smooth, then fold in mascarpone and sugar to incorporate, set aside. (I like to add chocolate shavings to the cream mix). Combine coffee, amaro and a pinch of salt in a bowl, whisk until salt dissolves. Chill until ready to use. . Working one at a time, dip savoiardi (ladyfingers) into cold brew coffee mixture and let soak just long enough for them to soften, 12 seconds per side. Lay biscuits at the base of you serving dish (it’s okay to smush and break them up to fill the gaps). Spread one-half of the cream mixture over the first layer and then place another layer of soaked savoiardi on top then spread the remaining cream mix. Add chocolate shavings and cover with cling film, chill tiramisù until firm for at least 6 hours and up to 12 hours if you can wait that long (longer is better, you’ll get a fully set slice). 08.01.2022 How to brew a Moka Pot at home WHAT YOU’LL NEED TOOLS Moka Pot ... Scales Boiling water 20g Coffee (My tip for the right roast) Espresso roast if you prefer milk Filter if you prefer it black TARGETS: TDS: 4.0-4.5 (this brew was 4.06) METHOD 1. Grind 20g of coffee (slightly courser than espresso) place grounds in the filter 2. Fill base of brewer up to the base of the screw with boiling water 3.Fit filter in place 4.Screw Moka together 5.Place brewer on a small hob, set to medium heat bringing water back up to the boil, steam pressure will begin to build in the bottom chamber forcing water up and through the filter, through the brew bed and to the top chamber 4. When coffee liquor reaches the top chamber the brewer will just begin to make a bubbling sound, turn off hob and bring brewer over to the sink to rinse base under cool water this will eliminate over extraction and bitterness. 5. Enjoy your delicious old school brew. Hot tip: Using hot water will speed up your brew and reduce the risk of over extraction.
