Mexican Tofu Tortillas Try this vegetarian treat from our at Home Digital Membership AVAILABLE NOW Only 15minutes prep for two 513 Calories but 27g Protein, 55g Carbohydrates, and 18g of Fat 1 Preheat the oven to 160C. Drain 300g tofu, slice and press gently between two pieces of paper towel to remove the excess moisture.... 2 Combine tsp cumin, oregano, 1 tsp paprika and chilli in a medium bowl. Crumble the tofu slices into the spice blend and stir to coat. 3 Wrap the tortillas in foil and pop into the oven to warm. 4Spray a frypan with a little olive oil and place over medium heat. Add onion and whole capsicum to the pan and saute 2 minutes. 6 Spray a little more olive oil in the pan if needed then add the spiced tofu. Cook for 3 minutes or until heated through and starting to brown. Season to taste with a little salt and pepper. 7 Divide the spiced tofu and vegetable mixture, lettuce and tomato across the tortillas. 8 Top each with a dollop of yoghurt, serve with lime wedges and fresh coriander. Alternatively, pop everything in bowls in the middle of the table and allow each person to make up their own! 20.01.2022 Thursday Thoughts... requested profile. Hey team, for those of you who havent met me I was born and bred in the small NZ town of Whanganui. It was there I started Freestyle Karate at age 9, gaining my 2nd degree black belt by 16.... Soon after my Diploma in Exercise Science I then moved back home to live in, coach, and fight out of local Muay Thai gym. Although it would have been nice to have then finished my Degree in Chiropractic, including Auckland Hospital work, marriage and family took priority before moving back to Wellington. There I worked in Les Mills, as well as became one of the first NZ qualified and nationally ranked CrossFit coaches. By far though my most rewarding roles have been as a Healthy Lifestyle Coordinator for Sport Wellington, before recently jumping the Tasman to coach and manage for 12RND Boxing, and 9R Kickboxing Fitness. In summary other than coaching and getting my butt kicked regularly, I enjoy outrigger kayaking and spending as much remaining time as possible promoting complimentary nutrition, wider cultural, and family health. 07.01.2022 Thursday Thoughts... requested profile. Hey team, for those of you who haven’t met me I was born and bred in the small NZ town of Whanganui. It was there I started Freestyle Karate at age 9, gaining my 2nd degree black belt by 16.... Soon after my Diploma in Exercise Science I then moved back home to live in, coach, and fight out of local Muay Thai gym. Although it would have been nice to have then finished my Degree in Chiropractic, including Auckland Hospital work, marriage and family took priority before moving back to Wellington. There I worked in Les Mills, as well as became one of the first NZ qualified and nationally ranked CrossFit coaches. By far though my most rewarding roles have been as a Healthy Lifestyle Coordinator for Sport Wellington, before recently jumping the Tasman to coach and manage for 12RND Boxing, and 9R Kickboxing Fitness. In summary other than coaching and getting my butt kicked regularly, I enjoy outrigger kayaking and spending as much remaining time as possible promoting complimentary nutrition, wider cultural, and family health.
