12.01.2022 Camp Oven doughnuts with Jo Clews In case you missed it on ABC Mid West and Wheatbelt Saturday Breakfast this morning. Jo Clews made doughnuts in the Camp Oven. Here is the recipe. ... Ingredients 2 cups SR flour 150 mill Pouring cream 150 mill Lemonade a little Cinnamon 1 litre Oil Method Add pouring cream to dry ingredients and combine. Add Lemonade a little at a time until you have a good dough that you can touch with your fingers with out it sticking. You may not need all of the lemonade to achieve this. Heat oil in camp oven for ten minutes then reduce temperature. Shape dough into doughnuts by taking a little more than golf ball sized balls and put your finger through the middle to make a ring or shape into logs whatever takes your fancy. Test the oil with a small amount of dough. You want it to hit the bottom of the pan and bounce back to float at the top of the oil. You will need to sacrifice the first doughnut. Fry until it looks cooked remove from oil and cut in half to test. When the oil is a good temperature and not too hot cook your doughnuts turning at least once. To finish coat with cinnamon sugar in a snap lock plastic container or serve with jam & cream, chocolate sauce, sprinkles or any combination you can dream up. Enjoy!

07.01.2022 Humans of Geraldton. Most mornings you’ll find Peter Nelson, 59, swimming along Geraldton's foreshore at the break of dawn. "The ocean excites me every time, Peter says as he watches the sea.... I'm not someone who just sits in the ocean and flops around, I'm genuinely swimming." Peter's family moved from a small coastal town of Lorne in Victoria to Geraldton when he was five years old. "Supposedly it was a move over here because I was meant to be an asthmatic, and I've never really had asthma since I've been here due to the dryer climate, he says. Peter grew up in Beachlands and recalls a very happy childhood. "As kids we pretty much had free reign, we used to go and get our crayfish over at Separation Point. I used to set my rabbit traps around the old fuel depot and spent most Friday and Saturday nights at the wharf fishing. As kids we would run amuck and it was a great place to grow up. The Beachlands crew tend to stick together a bit and there's still plenty of Beachlands crew around that you bump into and no-one has a bad word about the way they were brought up. Not as many toys as what kids these days have but it was a great time and place to grow up." Peter left school in Year 10 and became a diesel mechanic before becoming a mechanical fitter and eventually having his own business servicing fixed plants around Australia. Peter had been married for 35 years to Julie, but unfortunately Julie passed away three-and-a-half years ago from a brain aneurysm. "It took a while to re-gather ... but that happens in life and you’ve got to get on with it," he says. "She (Julie) certainly wouldn't want me to be moping around doing nothing, and so that created an opportunity to go and try a few other things. I spend a bit of time on the Leeuwin and I'm on the committee with Variety in Geraldton and getting involved with disabled and under privileged kids and so they're real eye openers - you take stock of your own life and go, 'well life's pretty good really’." Peter smiles and says he's never been busier since retiring. "If your life's pretty good, there's other people that haven't got it so good. There's plenty of organisations out there that need a hand. It's no point being miserable. You need to go out there and do stuff that makes you happy and interact with people because that's the best part of it." Peter has been involved with Surf Life Saving for 45 years and is part of the NCKC club - which stands for No K (Kilometre), No Cake. "So we swim most days on the foreshore and on weekends we swim and then eat cake," he says with a laugh. "Go out and experience life and enjoy people. There's plenty of good people here and so enjoy where you live. If you're not happy with your life, go and make changes."

05.01.2022 Camp Oven Expert Jo Clews has done it again sharing a delicious camping recipe with us on Saturday Breakfast. In case you weren’t fast enough to write it down here is the ingredients and method enjoy. Beef in Red Wine with Olive Damper Dumplings ... Ingredients Beef and Red Wine 800g to 1kg of Chuck Steak chopped into bite size pieces 2 Medium Brown Onions roughly chopped 1 Bottle Red Wine (drinkable) 2 Tbs Olive oil for browning Salt and Pepper to taste You can add veggies if you like. Add root vegetables like potatoes at the beginning with the meat softer veggies can be added later in the cooking process. Olive Damper Dumplings 1 Cups of SR Four 2 Tbs Olive Oil Pinch of salt cup of finely chopped Black or Kalamata Olives Water to make a dough Method Beef Heat up your camp oven on the hot coals or gas stove. Brown the meat and onions in the camp oven before adding half the bottle of wine. Cook for one and a half to two hours topping up with red wine as needed. Soft vegetables should be added in the last half hour. Dumplings Combine flour, olives and salt into large mixing bowl. Make a well in the middle and olive oil and then a little water. Mix with a knife and add little bits of water until you have a stiff but not sticky dough. Evenly divide the dough into six or eight balls and arrange on the top of the camp oven when the meat mixture is almost cooked. Take the heat away from the bottom of the camp oven. Make sure the meat mixture retains a liquid consistency because the dumplings will soak up some liquid. Put the camp oven lid onto the fire to heat it up nice and hot. Put the damper dumplings into the meat mixture and place the hot lid back on the camp oven, place some hot coal on top of the lid so the heat will radiate down to cook the dumplings. The dumplings should take about 15 minutes to cook. Make sure to check on them a few times. If they are cooking too fast take coals away and if they are cooking too slow replace old coals with hot ones from the fire. Serve with roast veggies or as a one pot wonder if you have added them during the cooking process. Thanks to Jo Clews. https://www.joclewscooking.com/
