14.01.2022 In June 2007 we left our city life in Sydney with our 3-month-old son Tristan to move to Lachlan, a beautiful village in Tasmania’s Derwent Valley. Arriving in the dead of winter it sure was a shock to our systems.... so much so, that we thought we’d made a huge mistake. But, there was no turning back and lucky for us we didn’t give in as it’s now been 12 years since we opened our home, The Lachlan Old Schoolhouse to just over 11,000 guests to enjoy our paddock-to-plate cooki...ng experiences. It’s sure been a crazy ride of many ups and downs and our little family grew from three to four with the arrival of Chloé in 2013. It’s now the end of 2020 and what a year it has been for our planet. Let’s hope 2021 is better for us all. During these 12 years we have met extraordinary people from all over the world, from all walks of life. We’ve received amazing support from our past and present employees, family, friends, neighbours, fellow small businesses and this beautiful little isle, Tasmania. We thank everyone who has attended classes here with us and believed in our dream. On 1 May 2021 we shall close the doors to our @agrariankitchen Cooking School & Farm as It’s time for our little family to fully enjoy this little piece of paradise as our private residence. We never did find that right work/life balance! However, the GOOD news is that in 2022 we shall open our NEW Cooking School within the same building as our existing @agrariankitcheneatery just down the road in New Norfolk. A wonderful new 1-acre walled kitchen garden designed by our Head Gardener @mitch_thiessen will also be established in Willow Court to compliment our new Cooking School + Eatery + Kiosk. We hope you will continue to support us when we reopen but don’t forget, our Eatery and Kiosk will continue to open to the public as normal. GIFT CERTIFICATES Many of you have a valid Cooking School gift certificate/credit with us. If you are unable to redeem before 30 April 2021 we shall still honour them once the new Cooking School opens even if they have expired. 06.01.2022 NOW ONLY 1 PLACE AVAILABLE : We had to postpone our whole hog class due to COVID-19 earlier this year but have rescheduled another for our fellow Tasmanians before borders reopen. Another will be scheduled for our mainland guests who are currently holding a credit once borders reopen to NSW and VIC. Spanning two days with butcher, Marcus Vermey and The Agrarian Kitchen’s Rodney Dunn, we begin with a whole carcass and learn the ins and outs of cutting and utilising a pig, ...from nose to tail. This class is all about getting to know quality meat and developing a respect for where our meat comes from and the sacrifice that is made on the animal’s behalf in order for us to eat. The pig used for this class has been raised here on our farm. From the initial break down of the pig with Marcus each cut will be discussed in terms of usage to help you understand firstly where it comes from on the animal - then what you can cook with it. We will utilise all the cuts over the two days to cook around sixteen individual dishes and be left with nothing but the oink. There will also be an opportunity to visit our own pigs and discuss our own raising practices for those wishing to take the leap into pig-rearing. If this road proceeds, there will be no more walking, running or riding our bikes along Lachlan Road and our little peaceful piece of paradise will be turned into a loud and polluted area for our kids. This Highway is estimated at costing...: $98 Million for the Jeffery's Track section along and Crabtree Rd + $276 million for the heavy industrial section along Judds Creek Road, to go over White Timber Trail to a height of 840m to join Jeffery's Track and go own into the Derwent Valley along LACHLAN ROAD.
