24.01.2022 Recently I worked on my starter. It didn't look very fresh and lively. Last week I've been adding some extra rye flour with water and keep it on my kitchen ben...ch. It looks much better now and guess what, it motivated me to bake bread more often. Yesterday I baked rye bread with a big amount of rye flour starter. It is absolutely great and full of flavour loaf. This one is not so hard to make. You can try yourself. You need 400g refreshed starter. Day before your baking put more flour into your starter or even better do it for a whole week and keep your starter in a glass bowl cover with cling film with some wholes. When you have enough starter next day you can bake this bread. You need 400g refreshed started, 150ml warmish water, 100g rye flour, 300g white spelt flour, 1 tablespoon of salt, 1 teaspoon honey. Mix everything for 6-10 minutes or until your dough will form a ball. Transfer your dough into a big bowl spread with oil. Cover and leave it for one hour to rise. After this time move your dough into a flat surface lightly floured and shape a loaf. Prepare a long tin, brush with butter and sprinkle with some oats on the bottom of the tin. Now transfer your dough into a tin, brush with olive oil, cover and leave to rise for couple of hours or longer. It should double in size. Next step is different. You put your bread into a cold oven. Now turn the oven to 200 degrees and bake your bread for 40-60 minutes. When oven will reach the temperature you can spray your oven inside with cold water to make a steam. When your loaf is nicely brown take it out from the oven and the tin and cool it down. I am enjoying it with Polish quark. I will share the recipe with you tomorrow. The voivodship of today covers most of Podlasie, but not all of it. The origin of the name Podlasie is twofold. According to the first interpretation the name describes location and means a land by the forest. The second one relates to a certain period in history when these lands belonged to the Grand Duchy of Lithuania but were ruled by the Polish law of the land (pod Lachem meaning under the Polish rule). Although the names Podlasie and Podlaskie look similar, they should not be treated as synonyms. Podlasie is a historical land which constitutes only a portion of Podlaskie Voivodship. Podlasie covers the south-western part of Podlaskie Voivodship, eastern part of Mazowieckie Voivodship and northern part of Lubelskie Voivodship. The historical capital of Podlasie is Drohiczyn. Besides a part of Podlasie, Podlaskie Voivodship also includes the Suwaki Region and a fraction of Mazovia. The capital city of Podlaskie is Biaystok. Podlaskie flows with the rhythm of nature. The rhythm, which constantly beats in the regions culture, traditions, architecture and art. There are more protected areas in Podlaskie than in any other Polish region. Its 4 national parks the Biaowiea, Biebrza, Narew and Wigry are the enclaves of biodiversity, unique on European scale. The Biaowiea National Park protects Europes last remaining deciduous primeval forest, untouched by human activity. The Biebrza National Park Polands largest national park is a pristine land of marshes and home to a rare wealth of animal and plant species. Nature is the base for leading sectors of the regions economy: dairy processing (Podlaskie is the largest milk producer in Poland), wood and furniture industry, as well as organic food and cosmetics. If a product was made in Podlaskie, you can be sure it is of high quality and natural origin. Podlaskie is also known for a rapidly growing IT sector, and is nicknamed the Silicon Forest! Most of Podlaskie is a densely forested lowland crossed by extensive river valleys. However, to the north of the region, the terrain gets a bit hilly. How come this diversity? Mother Nature laid foundations for the landform of Podlaskie some 300 thousand years ago. Back then, during the so-called Mid-Polish Glaciation, the ice sheet covered almost the whole area of todays Poland. It retreated some 170 thousand years ago, leaving a typical post-glacial landscape full of hills and lakes. Over the next hundreds of years, erosive processes had gradually smoothened the landscape. This process continued until about 115 thousand years ago when the northern part of the voivodship (the today Suwaki Region) was hit by Scandinavian ice sheet. This period, known as the North-Polish Glaciation, ended about 11 thousand years ago. In consequence, the southern part of the voivodship has an old-glacial landscape with hugely smoothened post-glacial landforms. 12.01.2022 PLUM CAKE Ingredients: 1 and 3/4 cups of flour... 180 g of butter 3/4 cup of sugar 4 eggs 1 teaspoon of vanilla extract 1 teaspoon of baking powder pinch of salt Additionally : plums 3 teaspoons of brown sugar 0.5 teaspoons of cinnamon Cream the butter with sugar, add the eggs one by one, continue to rub. Add the remaining dough ingredients and everything mix together. Wash the plums, divide them into halves, removing the stones. Line a baking tray with baking paper, place half of the dough, put half of the plums on them. Cover with the remaining dough and the rest of the plums Mix the sugar with the cinnamon and sprinkle the cake with it. Bake at 380 F for 45 - 50 minutes.

09.01.2022 I know everyone’s hanging out for this one so I’ll cut to the chase. Victoria will move to the Last Step from 11.59pm tonight. That’ll mean more people can get ...together 15 visitors to your home and 50 outdoors in a public place. Numbers at gyms will increase to 150 with group limits of 20 and venue density limits. Hospitality also increases to 150 inside for larger venues and 50 for smaller ones with density limits based on their size. Up to 150 people can attend weddings and funerals. And the number caps will be increased for other venues community centres, galleries, museums and more. I'll put all the details in the comments. There will be a staged return to offices for staff who've spent the past six+ months in Zoom meetings too with up to 25 per cent able to come back onsite at any one time. Everyone else will need to keep working from home. We’re also changing the rules around masks. They’ll still be mandatory indoors and on PT but you won’t need one outside, so long as you’re able to keep a safe distance from others. To put it into context, that means wearing a mask if you’re at a busy outdoor market or event but not if you’re out walking the dog. You'll need to carry a mask at all times for when it's required. I’m sure some people think everything should be thrown open completely now that we’ve gone three weeks without a case. But that’s precisely the point. We’ve only got to zero cases because of masks and distancing and everyone playing their part. Keeping these protections around a bit longer means that if we were to get a case, the risk of it spreading faster and wider will be much lower. And most Victorians would agree it’s a relatively small imposition for a potentially huge benefit. Just finally, to everyone looking ahead to Christmas and planning how many seats at the lunch table you'll be able to have 30 visitors at home, including kids. We'll have more to say on other settings soon, based on the latest public health advice. This has been a year like no other and one most of us would probably rather forget. Victorians have sacrificed so much and done it so tough. But even in the darkest of winter days, we stuck together and supported each other. And for that I am so grateful and so very proud.

04.01.2022 A CLOSER LOOK AT THE MAJESTIC MALBORK CASTLE A year ago I was exploring and photographing Malbork castle in northern Poland, and I shared a sunset photo from... that trip a few days ago. It's now time to take a much closer look at this World Heritage Site, which is the world's largest fortress. It's such a photogenic place and this collection of images (from our February 2019 trip) includes many that I've not shared before. The castle is so huge and complex that it takes several days to explore it fully. At every turn there's art, stunning detail and architectural wizardry. There's also the added attraction of the fabulous Amber Museum and other high quality exhibitions. The castle was badly damaged during World War II, but extensive restoration work in recent decades means that it's now looking particularly beautiful. Take your time to enjoy all the details! There are British-Polish links here too. The castle is situated on the Nogat river, which connects to the Baltic Sea. During the 14th century a powerful trading alliance - called the Hanseatic League - existed between Poland and other European countries, including England and Scotland. Historic records suggest that meetings of the Hanseatic League took place inside this magnificent castle, and boats would have arrived by river, loaded with English and Scottish goods. British visitors to Malbork today will find that hotel and restaurant prices are exceptionally reasonable - a quarter of UK prices and significantly less than the tourist hotspots of Warsaw and Kraków. We've enjoyed dazzling hotel views of the castle in the past, but we now stay with friends in the town during our visits, which gives us the chance to see Malbork from a Polish perspective. Malbork castle is one of those places that creates memories that are forever etched within you.
