25.01.2022 It’s a GRAIN BREAD BONANZA this week. We’ve spent all week working on our grain breads to satisfy the many requests of our customers. We still have WHITE, WHOLEMEAL AND RYE available as well as our WHEAT FREE AND GLUTEN FREE PRODUCTS. Keep an eye out for our Gourmet Add in’s for something special. See you bright and early on Saturday, we close at 2pm.

23.01.2022 Compressed Yeast v Instant dry yeast: Bread machines are designed to only use instant yeast because of the settings built into the machine with rest periods and the delay programme. Instant yeast should be kept in the refrigerator and will last 4-5 months and sometimes longer. Sachets of yeast have a use-by-date of approx 18 months. Compressed yeast has a very short shelf life, is not recommended for bread machines. Instant yeast is 3 times stronger than compressed yeast so r...emember to do your maths: 30g of compressed yeast equals 10g of instant yeast. these two types of yeast are interchangeable in recipes if you get the conversion right. Instant yeast is much easier to use and keeps much better that's why it is all we sell

20.01.2022 Flour Bins are ideal for flour storage and hold either 7kgs or 15 kgs. The use of flour bins will go a long way to preventing infestation and will also reduce the risk of flour absorbing moisture and odours from other products. Alternately it may be stored in the container in its original bag. (Remember to keep the label to identify the product and to access the correct mixing quantities) Flour Bin 20 litre holds 15kgs of flour (loose) and will take a 10kg bag of flour (bag as well). The 7kg flour bin can easily be refilled and is also suitable for storing 3x 2kg bread-mix packs.

13.01.2022 Gluten Free or Wheat Free? It is not uncommon for many people with an intolerance of the gluten found in normal wheat to conclude they have an intolerance to all gluten. (Bloating, indigestion, rashes etc) Unless you have been diagnosed as suffering from coeliac disease there is a possibility that the intolerance is not to all gluten but only to that gluten found in common wheat. Medical advice regarding your intolerance is recommended.... There are a number of alternative grains and flours available in this situation and it may well be worthwhile examining the options. They produce excellent loaves most people would find difficult to distinguish from normal wheat in taste, texture, crust and crumb. 11.01.2022 VEGEMITE SCROLLS Use Supersoft White weigh ingredients for large loaf on label Set machine to DOUGH only Allow to finish cycle... Remove dough Lightly knead Rest dough 10mins Lightly flour bench Roll dough to 1- 1.5cm thick Shape to 40cm x 50cm Smear with Vegemite (lots but not heaps) Grate 250g cheese spread over dough Roll up dough (not too tightly) Use sharp knife to cut into 4cm sections Place sections on greased baking tray Top with more cheese Allow to prove for 30- 50 min Preheat oven 200deg C Bake for 30mins See more

07.01.2022 DID YOU KNOW Diastatic Malt is the secret ingredient used in Sourdough baking by many artisan bakers in Europe, US and Australia. It promotes better fermentation, stronger rise, good texture and a golden/brown crust with improved oven spring. It is added to the final dough and not to the culture. It is a completely natural product made from sprouted barley or wheat which is dried and milled finely. It contains sugar breaking active enzymes (mainly amylase) which assist dur...ing an extended ferment. This is available at All About Bread in Greenwood in 100g $4.90 and 300g $12.90 Diastatic Malt is extremely powerful and care should be taken in respect to the amounts used. And after much testing and a lot of feeding and deciding and dividing, we now have available to you, a live, and working, 12 year old Sourdough culture to purchase for $12.00 It started out as the Boss' own culture to make bread at home and is now the mother of all sourdoughs. This particular culture dates back to the heady days of 2009 when Barack Obama was sworn in, Michael Jackson died and Avatar wa...s the hottest movie going around. Needless to say this culture has some culture... but not POP Culture. It was born of great flour and fed nothing but the best ingredients...It has been cared for and babied, It has been put to sleep and been dormant for periods of time and at other times it has been extremely active in the community providing loaves for family and friends. It's a proven ;) and known quantity... (200g to be exact) All you need to do is care for it and feed it. It’s ready to go! Just ask at the counter and we'll fetch it from the fridge and provide you with all the instructions to care for it.
