25.01.2022 Vietnamese mint/coriander (Persicaria odorata) So great to have in the garden for food as these are the tastiest leaves to add to Asian dishes, chicken and fish. Also great to add to soups, stews and salads. I use it in our Vietnamese spring rolls (previously posted) and it is also traditionally used in Laksa (spicy noodle soup). Medicinally there are a few uses.... Also called ‘Polygonum odoratum’ this edible plant is traditionally used as an antidiabetic, antimicrobial, anti-inflammatory, and antitumor agent in Asia. (1) One study showed ‘Anti-Salmonella Activity of Volatile Compounds of Vietnam Coriander’ (2) Another study of the leaf extract of P. odoratum showed potent anti-inflammatory and antioxidant activities (3) Apparently it decreases libido so many Buddhist monks grew it in their gardens to heal them remain celibate. . 22.01.2022 Dandelion (Taraxacum officinale) is a valuable herb & FOOD to grow (Not a useless weed) with many medicinal uses. Is highly nutritional in iron, calcium, vitamin A, B6, E, K, beta carotene & rich in antioxidants. There are 3457 papers on dandelion uses on PubMed. The leaves & root are both used but have different properties. Dandelion leaf is used more as a diuretic (for water retention) in oedema ad as a mild laxative The leaf is also choleretic (increase production of bi...le by the liver) so helpful for digestive liver insufficiency, dyspepsia and gall stones. Also good for healing gout. The root has similar properties to the leaf is more of a bitter tonic so useful in anorexia and flatulent cholic. Traditionally used for rheumatism and skin disorders. Any chronic skin issues always need liver support. So easy to grow from seeds and the leaves taste nice in a mixed salad as well as a healthy cleansing tea. Roots can be a healthy alternative to coffee. Dandelion includes potential bioactive components such as sesquiterpene lactones, taraxasterol taraxerol and chlorogenic acid. These components are non-toxic and can be exploited for their potentially anti-inflammatory, anti-oxidative, anti-rheumatic, and choleretic\ properties (1). Dandelion has shown to reduce oxidative stress and decrease cholesterol in animal studies so may be helpful in humans too. 20.01.2022 Healthy Anzac Biscuits Tasty & healthy, I made these with gluten-free oats and no dairy & they are really nice. Together with the seeds they make a great protein snack for mid morning. Ingredients 1 cup uncooked Organic Rolled Oats (I use gluten free)... 1 cup plain flour (I use gluten free) 1/2 cup brown sugar ( I use rapadura) 3/4 cup desiccated coconut (Free of preservative 220) 130g butter (I use or coconut oil for DF), softened 2 tbsp honey 1 tbsp hot water 1 tsp baking powder 1 tbsp sunflower seeds 1 tbsp chia seeds 1 tbsp pepita pumpkin seeds) 1 tsp cinnamon powder & 1/2 tsp ginger powder (Optional for a bit of yummy spicy flavour) Method 1. In a large bowl, blend all the dry ingredients oats, flour, sugar, baking powder, seeds, coconut and spices. 2. Then add the melted butter or oil and water. Mix with a large spoon. 3. Can shape into 15 biscuit shapes and place on a greased baking tray. 4. Bake at 160 degrees C for 10-15 minutes. Cool for 5 minutes before eating. 19.01.2022 Kapok bushes (Cochlospermum) C. Gregorii Saw these beautiful flowers on these shrub trees around the coast of Cape Gloucester near Airlie beach. No leaves on the trees at this time and the flowers just turning to fruit.... A food for Aborigines as the flowers are edible and the roots and taproots of the young shrubs are roasted after the skin is peeled off. The fruits are not edible but the cotton fiber (kapok) was used in ceremonies for decoration. The black and white pods here are the ripened fruit. 17.01.2022 Appraising Parsley (Petroselinum crispum) as this high vitamin C herb is not only a nourishing food but has wonderful medicinal properties. The easiest herb to grow, I find when some other herbs struggle in heat or cold, parsley lives on. Picking it encourages new growth so it’s always abundant. Grows well in pots. High in vit A,B2,B3,C,E & iron, calcium, potassium, magnesium & manganese. I use it as a garnish, in pesto, salads & a nice parsley sauce.... It’s best medicinal action is diuretic to help body get rid of excess fluid build up. Traditionally used as a carminative to ease flatulence and colic pains. This herb is also used as an emmenogogue to stimulate menstruation (1). A recent Pub Med review states it’s uses of parsley Wide range of pharmacological activity including antioxidant, hepatoprotective, brain protective, anti-diabetic, analgesic, spasmolytic, immunosuppressant, anti-platelet, gastroprotective, cytoprotective, laxative, estrogenic, diuretic, hypotensive, antibacterial and antifungal activities have been exhibited for this plant in modern medicine. 15.01.2022 Vietnamese spring rolls: such an easy meal for anyone, especially a family. My daughter makes these often Once all the ingredients are prepared, we all sit together & make our own. Great for packed lunches too and gluten free & dairy free. ... Ingredients: - Pack of rice paper (I use pandaroo, 4 sheets each) - Vermicelli noodles 100g (made of mung beans), cooked or soaked in boiling water for 2 mins - 300g chicken &/or prawns (all pre-cooked) - 100g Mung bean sprouts - Shredded lettuce or baby spinach leaves - Shallots, finely chopped - Cucumber (sliced sticks) - Capsicum (sliced sticks) - Carrots, grated - Soy sauce, gluten free or tamari - Fresh mint (Vietnamese mint if you have it), makes it taste so much better - Fresh chili sauce (optional) use a flan dish or round tray to put the hot water in for the rice paper to soak for one minute each (one at a time). Take out using tongs. Spread out onto plate and add ingredients to the middle. Fold over the sides like wrapping a parcel. 13.01.2022 Made a yummy Chili con carne last night (added chocolate) Here is my recipe: 500g organic beef, minced 1 large, onion, chopped... 3 cloves garlic, chopped 2 tbsp olive oil, extra virgin2 sticks celery, chopped 2, tbsp carrots, chopped 1tbsp zucchini chopped 1/2 tbsp red capsicum, extra virgin4 large red tomatoes or 1 can tomatoes 1 can kidney beans 2 tbsp tomato paste, organic 1 tsp cumin, heaped 1 tsp paprika, heaped 1 tbsp fresh chilli to taste 1/2 cup stock (I use bone broth) 6 chunks dark chocolate, organic 1 tsp salt 1 tbsp pepper to taste 1 tbsp coriander to garnish 6 sprigs oregano, chili to taste Stir fry the beef and onion in olive oil until meat starts to brown. Add garlic, celery and carrots, cook for a couple of minutes stirring well. Next add the tomatoes and zucchini. Cook the veggies and meat for a few more minutes. Now add tomato paste, spices, chilli, salt and pepper. Stir in stock. Simmer for 15 mins on a low heat. Add the oregano and chocolate. Allow to simmer for another 5 mins on low heat until all veggies are cooked. Serve with fresh coriander on a bed of rice. Also great for Mexican wraps or with corn chips. . . 10.01.2022 More Herbs to support your immune system Mullein (Verbascum thapsus) Since some infections effect the lungs it’s a good idea to improve lung health especially if anyone has a weak constitution eg. past or current pneumonia, mould illness, bronchitis, Lyme or asthma. The latest study shows:... The medicinal plant V. thapsus L. can be used for the treatment of different diseases, such as cancer and infectious diseases. (The antioxidant, anticarcinogenic and antimicrobial properties of Verbascum thapsus L. Mahdavi S, et al. Med Chem. 2019.) This herb grows in many places in Europe. I’ve seen it growing wild in Norway, Denmark, France and England. These were growing @goulds_natural_medicine herb farm in Tasmania. The medicinalullein I use in clinic is Verbascum thapsus. Mullein is very helpful with supporting the healing of colds, flus, sore throats, coughs and bronchitis. It maybe a beneficial herb for easing asthma symptoms. It’s actions are expectorant, anti- catarrh and a demulcent so will clear up phlegm, help expel it and soothe the membranes if the upper respiratory tract.It is also used to treat diarrhea and ease peptic ulcers.As a vulnerary herb can be used topically on wounds and to ease the pain of hemorrhoids. Another study shows: Anthelmintic and relaxant activities of Verbascum Thapsus Mullein. (Ali N, et al. BMC Complement Altern Med. 2012.) Verbascum thapsus is used in tribal medicine as an antispasmodic, anti-tubercular agent and wormicide. In this study, we investigated the antispasmodic and anthelmintic activities of crude aqueous methanolic extract of the plant. We detected flavonoids, saponins, tannins, terpenoids, glycosides, carbohydrates, proteins, fats and fixed oils in V. thapsus. Our results suggest that V. thapsus, which is currently used by some tribes in the Malakand region of Pakistan, has anthelmintic and antispasmodic value. 08.01.2022 Thuja Occidentalis : Another anti viral herb I have been prescribing a lot more lately, in herb formulas to support the immune system. The leaves and twigs of this evergreen conifer are used. A wonderful antimicrobial, anti viral, anti fungal, expectorant (clears mucus) as well as a depurative to improve detox. Thuja is indicated for viral Infections, common colds, catarrh type coughs (not dry coughs), sinusitis, and topically for warts. Can be used topically for fungal inf...ections such as tinea, ringworm and candida. I often use Thuja for patients with mould illness or SIFO (Small intestinal fungal overgrowth). 03.01.2022 Feta and olive scones (GF) (These are what I served with previous soup recipe) 3 cups buckwheat flour or other gluten free flour 2 tsp baking powder tsp bicarb soda... 1 tsp sugar 2 eggs 1/3 cup butter cup natural yogurt 1/2 cup chopped feta (can be cow or goat's) 1/2 cup chopped olives 1. Mix 2.5 cups of the flour & dry ingredients into a large bowl (keep 1/2 cup flour to the side) Then add the eggs, butter, yogurt, feta and olives 2. With hands fold in the ingredients and mix into a dough. If you need to add more flour then you can. Dough needs to be firm but pliable to be able to roll into 10 balls. 3. Place the 10 balls on greased baking trays and flatten each one down to an inch thick. 4. Bake at 160 degrees for 15-18 mins or until just browning. Serve with butter and hot soup. 01.01.2022 Made a yummy Chili con carne last night (added chocolate) Here is my recipe: 500g organic beef, minced 1 large, onion, chopped... 3 cloves garlic, chopped 2 tbsp olive oil, extra virgin2 sticks celery, chopped 2, tbsp carrots, chopped 1tbsp zucchini chopped 1/2 tbsp red capsicum, extra virgin4 large red tomatoes or 1 can tomatoes 1 can kidney beans 2 tbsp tomato paste, organic 1 tsp cumin, heaped 1 tsp paprika, heaped 1 tbsp fresh chilli to taste 1/2 cup stock (I use bone broth) 6 chunks dark chocolate, organic 1 tsp salt 1 tbsp pepper to taste 1 tbsp coriander to garnish 6 sprigs oregano, chili to taste Stir fry the beef and onion in olive oil until meat starts to brown. Add garlic, celery and carrots, cook for a couple of minutes stirring well. Next add the tomatoes and zucchini. Cook the veggies and meat for a few more minutes. Now add tomato paste, spices, chilli, salt and pepper. Stir in stock. Simmer for 15 mins on a low heat. Add the oregano and chocolate. Allow to simmer for another 5 mins on low heat until all veggies are cooked. Serve with fresh coriander on a bed of rice. Also great for Mexican wraps or with corn chips. . . 01.01.2022 Red lentil mushroom bacon soup A good hearty immune boosting soup. Easy budget recipe, great for bulk cooking in a slowcooker & freezing if needed. 2 cups red lentils, rinsed well... large red onion, chopped finely 5 rashers bacon (or can use ham), preferably organic, preservative free, cut 3 tbsp olive oil, extra virgin 2 sticks celery,finely chopped 2 carrots, finely chopped 2 cloves garlic, rushed 2 cups mushrooms eg. shitaki, finely chopped 1 L bone broth or chicken or veg stock (Amina's bone broth recipe) 2 cups chopped fresh tomato's or tin 300g, tomato paste, organic 1 tbsp freshly chopped herbs, rosemary, thyme, oregano or can used dried herbs 500 ml+ extra water if needed to add to slow cooker 1 tsp pepper Don’t need salt if using bacon Stir fry onion, bacon and olive oil for a couple of minutes then add lentils for a couple more in the olive oil Add the garlic, celery and carrot until celery slightly transparent In a slow cooker, add the content of the pan and all other ingredients, stir well. N.B. You can use a large saucepan but you will need to stir regularly else the lentils will stick. May need to add more water too as the lentils will swell when soaked up the water. Allow to cook for about 6 hours in a slow cooker or until the lentils as soft and squidgy. This can be made quicker in a saucepan. Add more water if lentils are soaking it up.
