25.01.2022 Roasted Hazelnut + Caramel Slice Anyone love roasted hazelnut/choc combo as much as me? Combined with smooth, buttery caramel and covered in a thin layer of crisp chocolate...holy moly! In my humble opinion you cannot beat the hazelnut flavour, however, should you wish, you could use any nut you like. Roasted cashews, pecans or peanuts would also be great! INGREDIENTS: 2 cup (160g) of organic oats... 1 cup (70g) organic shredded/desiccated coconut 120g butter 1/2 tsp sea salt 400g medjool dates 2tsp vanilla 200g Lindt 70% chocolate 100g Chopped roasted hazelnuts. METHOD: 1. Grate chocolate in TM bowl 4 sec/speed 9. Melt for 3 min/50/speed 2. Half way through, remove lid of TM bowl and scrape down any chocolate from sides or any that is on top of blades. Set aside and wash and dry TM bowl. 2. Add oats + coconut to TM bowl and mix 10 sec/speed 5. 3. Add remaining ingredients, except hazelnuts + blend 1-2 min/speed 9, stopping after each 30sec to scrape down bowl. 4. Press caramel into baking paper lined tin (mine measured 27cm x 15cm) 5. Press roasted hazelnuts firmly into caramel base. 6. Pour melted chocolate evenly over base + refrigerate until set 7. Slice in bars + enjoy!

If I was stuck on a desert island and could take one thing, these would be up there Currently making a triple batch to take camping for lunches. All whilst cooking dinner- they are that easy 1 cup almond flour... 1 cup tapioca flour 1 cup of plain thick yogurt 1/3 cup water 1 tsp salt. Whizz it and cook 1/2 cups in a dry pan on low to medium heat (or with butter or ghee if you prefer). You’re welcome

22.01.2022 SALT + VINEGAR CRACKERS These crackers are so EASY to make. If you love salt + vinegar as much as I, then these will go a long way to replacing those salt + vinegar chips! Ingredients: 140g (1 cup) buckwheat flour... 100g (1 cup) almond flour 1 tsp sea salt 2 tbsp Extra Virgin Olive Oil 75g ( cup) water 2 tbsp of vinegar (I used white, but you could use ACV) Extra salt for sprinkling on top Method: Mix all ingredients except water 5 secs / speed 9. Reduce speed to 5 and slowly add water until mixture forms a dough. Add extra tablespoon of water if needed. The dough should be firm and not sticky. Place between two pieces of bleach free baking paper and roll into a rectangle. Place dough still on baking paper onto a baking tray. Cut/heavily score dough into rectangular pieces however big you desire and prick each piece with a fork. Sprinkle on extra salt. Bake at 180c for 20-25mins. Check them after 15 mins. You may need to remove edge pieces and shuffle them around on the tray for an even bake. Remove when crackers are slightly brown. The longer you leave them in, the crunchier they will become!

20.01.2022 BEEF MINCE STROGANOFF Family friendly. Feeds 5 with 1-2 more meals for the freezer. Half it if you like. I love the flavour of stroganoff but the kids dont enjoy the big chunks of beef. So I thought- hey why not with mince! Worked a treat and everyone enjoyed the flavours. I suspect it will taste even better tomorrow. The mushrooms were the hero here. Thermomix is handy but not necessary for this recipe, and it is cooked on the stove top. TIP- If your kids dont like mushroo...ms like mine- whizz them up in the food processor so they are hidden in the meat! We whizzed up half and chopped the other half into big chunks to provide some texture (they were also easy for the kids to pick out this way). Ingredients 1kg Grass fed beef mince 800g Mixed mushrooms (we used swiss brown, portabello and field mushrooms) 400g Organic tomato paste 300g Sour cream 4 Brown onions 6 Cloves of garlic 2 tbsp of sweet paprika 1 tsp Smoked paprika 2 tbs Homemade stock paste (we used chicken) 2 tsp Sea salt -1 cup water 2 tbsp duck fat or other good quality animal fat Method Chop onions and garlic in TM bowl speed 5 / 5 sec. Add 1 tbsp duck fat and cook 100c speed 1 / 5 mins. Whilst cooking onion and garlic, add 1 tbsp of duck fat to large pan and brown mince on stove top. Add onion and garlic to browned mince along with the rest of ingredients (apart from 400g of the mushrooms if you are blitzing them up to hide) Blizt up 400 g mushrooms in TM bowl and add to rest of ingredients. Cook uncovered on medium/low heat for minimum of 15 minutes to let all the flavours come together, stirring occasionally. I cooked ours for probably 30-40 minutes while I prepared the vegetables and pasta. Add sour cream towards the end of cooking time and stir through. Serve with organic brown rice pasta or mashed potato and steamed vegetables. ENJOY!!

17.01.2022 BLUEBERRY PASSIONFRUIT CHIA PUDDING Assembly time- under 5 minutes! Make your chia pudding ahead of time + store in fridge to use throughout the week. 1 cup chia seeds... 3 cups of liquid (water, almond milk, coconut milk etc) Add vanilla, cinnamon, maple, honey etc Layer with oats, yogurt, fruit, nuts + seeds. You are only limited by your imagination!
15.01.2022 CHOC JAFFA BARS 225g nuts & seeds (I used 150g cashews, 50g pepitas + 25g sunflower seeds) 300g medjool dates 30g cocoa or cacao Zest of whole organic orange... 200g 70% Lindt chocolate Wild Orange Essential Oil or Orange Essence (optional) Orange zest to decorate Method: 1. Place chocolate into TM bowl and grate 5 sec / speed 9. Add 3 or 4 drops of orange oil (if using). Scrape down and melt 4 mins / 50C / speed 2. Half way through the 4 mins, remove lid of TM bowl and scrape down any chocolate from sides or any that is on top of blades. Set aside. Do not wash bowl. 2. Add nuts & seeds and blend 10 sec / speed 9 3. Add dates, cocoa, orange zest and another 3 or 4 drops of orange oil (if using) and mix 30 sec / speed 9. Repeat until completely broken down and binding together. 4. Push flat into a 23cm x 23cm baking dish lined with baking paper. 5. Pour chocolate evenly over base, sprinkle on some more orange zest and pop the slice into freezer until chocolate sets. We love to eat it straight from the freezer so its nice and crisp + chewy! Can be stored in fridge. Enjoy!
15.01.2022 ~Quick Dinner/Lunch~ broccoli salad Broccoli is in abundance at the moment. We have a fridge full! Spring is that funny time where anything goes~ soups and stews OR salads! We have dusted off the bbq and have been grilling our meat, so I created this salad to use up all the beautiful fresh broccoli we had been gifted by family and friends. I have made this twice in three days and kids have devoured it for dinner and lunch! Its all about the dressing with kids! Enjoy!... To make salad: Head of broccoli (200g) 1 large carrot (100g) 1/2 capsicum (100g) 1/4 cabbage (100g)) Small apple (100g) 3 or 4 spring onions or red onion And if you love it as much as me- a decent handful of coriander Place all vegetables in TM bowl and mix speed 5 / 20 secs or until chopped to your desire. To make dressing: cup sour cream cup plain yogurt 2 tbsp maple syrup 2 tbsp apple cider vinegar 1 tsp sea salt 1 tsp garlic powder Mix speed 5 / 10 secs. Drizzle over salad at time of serving. Served in picture with left over spicy almond meal chicken tenderloins.

14.01.2022 Many cereal advertisements love to boast how theyve added iron to their cereal for energy! Enriching (sounds good doesnt it?!) our food with iron is NEVER a good idea. In fact, its touted as "the most serious mistake in the history of human nutrition" by Jym Moon PhD, metal toxicologist and Nutritionist and Author of Iron, The Most Toxic Metal. The act of enrichment is most often carried out when the original nutrients are removed or destroyed during processing. The nu...trients are then added back to the food. 13.01.2022 BREAKFAST-DESSERT is my favorite! DAMN!! this breakfast is good!! I had it again this morning. If you love lemon curd you will be in heaven! The beauty of this breakfast is that all components can be made well in advance and left separately OR you can assemble a number of bowlfuls and leave in fridge for an easy get away in the morning.... *Overnight chia oats topped with lemon curd, apple, toasted almonds & freeze-dried raspberries.* LEMON CURD Ingredients 60g lemon juice Zest of whole lemon 60g grassfed butter (coconut oil for dairy free) 40-60g pure maple syrup 1 free range egg + 1 yolk Method Pop it all in the TM bowl and cook 4 mins / 80c / speed 3. Refrigerate. Will set as it cools. OVERNIGHT OATS + CHIA Ingredients 1 cups organic oats (I blitz in TM on turbo for a few seconds) 1/3 cup Chia seeds 2 cups Almond milk (or water, or milk would work) Method Mix together + soak overnight in fridge (or if youre impatient like me, 15-30mins should do it if youve blitzed your oats). If you leave them overnight and they thicken too much and become gluggy, simply add some more liquid and stir through. TO ASSEMBLE Scoop your desired amount of oat + chia mixture into bowl. Dollop on lemon curd. Thinly slice some peeled apple into sticks and lay over the lemon curd. Generously sprinkle toasted almond flakes on top (I toasted these in fry pan while curd was cooking). Then pop a small handful of crushed freeze dried raspberries on to finish. Recover for a day or maybe two. And then get back out there. It's a cycle. Sure we throw in some "self-care". But not too often, no no no, that would be selfish! We live in a society where the game is rigged. The cards really are stacked against us staying healthy. We need to support our emotions, our spirit and our physiology. But first we need to recognise and then acknowledge that we are in fact stuck in this cycle. 11.01.2022 CRISPY + CHEWY PEPPERMINT BARS! 200g of Chocolate (I used Lindt 70%) 100g Organic Medjool Dates (approx 8) 100g Raw Honey (1/3 Cup) 7 drops of Peppermint EO (or Essence)... 12 Thin Organic Rice Cakes To melt place chocolate into TM bowl + grate 5 sec / speed 9. Scrape down + melt 4 mins / 50C / speed 2. Half way through the 4 mins, remove lid of TM bowl + scrape down any chocolate from sides or any that is on top of blades. Set aside. Without washing bowl add dates + honey and blend 1 min / speed 9. Heat 30 sec / 50C / speed 2. Add chocolate back in + peppermint oil and blend 1 min / speed 5. Taste mixture + add more peppermint oil if you want a stronger flavor. Break 3 rice cakes into very small pieces, add to mixture + blend 30 sec / speed 9. Repeat step with rest of rice cakes. If you want the pieces of rice cake bigger for more crisp, then blend less! Press in to baking paper lined slice/cake pan. Refrigerate and cut into bars once set. Keep in Fridge. Enjoy!

03.01.2022 Why am I so proud of this BIG hole? Because I have just moved 15 wheelbarrow loads of beautiful compost from this hole onto my veggie garden!!! This photo doesnt do the hole justice. Its quite deep. I told my husband I was digging it for him if he didnt behave Do you compost? If you have property just dig yourself a big old hole and start dumping food scraps, paper, and other green matter in and let the worms do the work. If you are in town or on a smaller block you can get yourself a portable compost bin. Food scraps should never end up in the rubbish bin!

Is this what you want done to your fruit and veg? FSANZ have referred to this as a glazing agent, the additive in question is 471 Mono and Di glycerides of fatty acids. Usually used in food as an emulsifier or stabiliser.... This will be used as a processing aid and you wont know its being used. This additive can be derived from animals )so if you are vegetarian, vegan you may be unknowingly consuming animal products) It can also be derived from palm oil or GMO. Please comment below your thoughts. I can prepare a submission to FSANZ if the AFK community feels strongly about this. Do you want your fruit and veges to have this additive applied to it to extend the shelf life of the produce?!
