24.01.2022 This is my absolute go to lunch: Lettuce, broccoli (that’s the standard, but any veg I have going), roast chicken (shredded and frozen in serving sized bags for later use) and dip. Same same every day, but the dip changes every day, so every day is a completely different flavor!... Today I am adding an extra flavor, a delicious spice mix from my friend and colleague Beck Newton. This gives the baba ganoush a completely different taste to the last time I had it (which by the way was yesterday ) FYI: Beck is the Type 1 Family Centres newest recruit, a registered nurse and dietitian. Like me, is a lover of the low-carb approach for all aspects of health. 22.01.2022 A couple of new finds this week (thank you for the heads up Emma!) and on sale too! These back to Basics Vege Crackers may just be my new fave work lunch, for so many reasons! - Not too high in overall calories (and yes, I will eat the whole pack ) - Low in carb ... - High in fibre - Good serve of fat, very low saturated and no trans fats at all With some dip and extra veggies they will be the perfect picky plate while I am at my desk. Also, I may be late to the party, but are these NEW Olinas varieties? Not only does the Moroccan Dukkah sound AMAZING, I like that they are smaller round crackers over the long ones. 21.01.2022 CLINIC MOVING TO TELEHEALTH FEB 1-5 As you are aware, WA has moved into lockdown from today, Sunday 31st January until Friday 5th February. The Type 1 Diabetes Family Centre building will be closed, but as per previous COVID lockdown, the clinic will move completely to telehealth services.... I assure all patients that the service provided and received is the same via telehealth as it is face to face. The Type 1 community has a unique advantage in that much of the data we use in clinic is able to be uploaded and shared online, including pump data, CGM data and bolus calculator app data. I am very customed to online telehealth clinic sessions and actually still run a completely telehealth clinic every Friday to patients interstate and overseas. If you have an appointment this week, we will be in touch to confirm you are happy to move to telehealth. Anyone looking for a telehealth clinic appointment, I will have some additional hours available this week so please get in touch via our practice manager [email protected] to book an appointment. 21.01.2022 Making the most of sunny winter Sundays with bacon and eggs on the BBQ! I love starting the day with a good dose of protein, healthy fat and some veg. Omelettes are my go to most days (I have nailed the art of the 5 minute omelette!) but on a lazy Sunday there is nothing better than firing up the BBQ for this delicious feast. My trick to always being BBQ ready when a slow Sunday shows up is always having some bacon in the freezer that can be whacked in the microwave on quick defrost. We will always have eggs in the fridge, and the veg is absolutely anything I have left at the end of the week.

20.01.2022 Another shout out to The Spice Tailor curry packs, this time in the slow cooker! These packs really are so versatile. This time I simply browned the beef and added it to the slow cooker, along with The Spice Tailor Rogan Josh pack (all 3 sachets) and a (very) roughly chopped cauliflower and capsicum. Three hours on high. Right before serving I added a big dollop of sour cream. To keep mine low carb, I served it on top of some (again, very roughly) shopped broccoli that I ha...d fried in some olive oil. Hubby and Smalls had theirs as is, but with a side of naan bread. 19.01.2022 If you liked the look of my Choc Denada Co. PB smash up last week, then get this in your gob! This week I tried Vanilla Denada with Well Naturally Sugar Free Coconut chocolate (my fave flavour). Again, I let the ice cream melt slightly, added the roughly chopped chocolate, mixed well, back in the container and froze overnight. 17.01.2022 You will either love or hate this one! Brussel sprouts were on sale this week, so naturally I went a bit brussel mad and bought a little too many. Last nights dinner was roasted brussel sprouts with roast pork, and because i still had w hole bag of brussels leftover, I decided that the leftover roast was mine! So today for lunch, I am having raw brussel salad with roast pork and ajvar. After slicing the brussels up last night, I tossed through some of the roasting pan juices for extra flavour, then added the ajvar and diced roast pork. WOW....it is delicious!! A perfect combo.

16.01.2022 This felt like an indulgence, chicken thigh, bacon and cheese!! 45 minutes and only 2 baking dishes to clean up (truth: they went in the dishwasher ) I found these beauties in Coles and was pleasantly surprised that they were low in carb. Yes, they are quite calorie dense, but served with some non-starchy veggies such as roasted brussel sprouts, I am more than happy to add these to the menu every now and then. ... Hubby had his with roasted sweet potato, carrot and capsicum. This is not a sponsored post.

15.01.2022 Roast on a Monday!! And not any Monday, a Monday when I walked in the door at 6.10pm! These ready-made roasts have gone from saving me time on a Sunday to becoming my last-minute, throw together, busy night meal! ... This time I have paired the Coles roast pork with the Coles Kaleslaw salad kit. No oven required, I simply heated the roast up in the microwave while I tossed the salad and dinner was on the table by 6.20pm! The pork is one of the more expensive ready-made roast options, but with the salad the meal came to $25, cheaper than any takeaway or Uber eats I could have ordered! This is not a sponsored post.

12.01.2022 If you dont have any dukkah in your pantry, add it to your shopping list! Dukkah is a seasoning made from nuts, herbs, seeds and spices. It adds LOTS of flavour with very little calories or carbohydrates. The Table of Plenty blends are some om my faves. This is salmon topped with their Spicy Cashew Dukkah and baked in the oven for 20 minutes (on top of roasted brussels of course ) Last night I had this one on pork chops, AMAZING! ... 12.01.2022 12 minute dinner!! You read that right, this Chicken Cacciatore took 12 minutes in my new fave kitchen whizz, the Pressure Cooker! If you dont have one, I seriously cannot recommend them enough!! Even with 3 different sides, the total meal took me about 25 minutes from fridge to table. ... Hubby had mashed sweet potato - steamed and mashed with butter, and I had him on mashing duties. I had sliced and roasted brussels - tossed with olive oil and in the oven for 20 minutes. Smalls had steam fresh microwave veg - these are SO handy when I know she wont love what we are having. This is mine - Philips Viva Collection All in One Multi Cooker/Pressure Cooker/Slow Cooker with Anti-Scratch ProCeramic Pot, 6 litre. Hubby priced them in stores for $200-250 and got it delivered from Amazon in 3 days for $169. It came with a recipe book, where this recipe is from. I have used the recipes in there to work out how to transform my personal recipes into pressure cooker versions. This is not a sponsored post.

12.01.2022 New Discovery! This new Sharwoods Malaysian Coconut Curry was super quick and super yum! The packs serve two, and the directions are to brown 300 grams of your chosen meat, add the sauce and serve on top of rice. Of course, I ignored this ... The pack actually made four serves by the time I was done with it. I fried up 500 grams of chicken strips in sesame oil, then added a bunch of veggies. There was certainly more than enough sauce for all of this! I served mine on top of cauliflower rice and Hubby and Smalls on rice. Hubby even has leftovers for tomorrow. Winning! Per serve on the pack there is 9 grams carbs, so 18 grams total. When served between four, it comes down to 4.5 grams carbs for the sauce portion. With a large serve of cauliflower rice, my meal was max 14 grams of carbs. This is not a sponsored post.

12.01.2022 If you havent been to Kapitol Kitchen Restaurant then do yourself the favor!! Hubby and I had the most amazing meals there last night, gave them both a 10/10 (and we dont hand that out lightly ) Mine was the chicken and waffles with maple syrup, a total 7g carbs! ... Hubbys was the bbq pork and waffles with hollandaise, also a grand total of 7g carbs! The menu had plenty of low-carb options including cauliflower rice nasi goreng and meat options with cauliflower mash. Its a bit of a drive for us, up to Wanneroo, but we will be doing it again very soon for sure This is not a sponsored post.

11.01.2022 Thursday night is salmon night in my house. Don't ask me how or why this started, it just somehow did! I generally buy plain raw salmon and top it with dukkha, pesto, parmesan or herbs but I have recently discovered the Coles Lemon an Herb marinated salmon from the deli section. It is absolutely delicious, and saves me one step in my dinner prep. Tonight I served Hubby's a lower-carb meal, with baked pumpkin, brussels and asparagus and a low-carb version for me, roasted brus...sels of course! Small's whines every Thursday night about having to eat salmon, but alongside some raw veg and tomato sauce she gobbles it up no fuss! This is not a sponsored post.

10.01.2022 Lazy Sunday lunch deliciousness. Fridge cleanup this morning and surprise surprise, I have lots of brussels left! Brussels, generous drizzle of olive oil, roast chicken, garlic and onion powder and smoked paprika. In the oven on 200 for about 20minutes. Still crunchy!

09.01.2022 Between work, school, art lessons and beauty and puppy appointments the last two days were HECTIC! So to cross one thing off my things to stress about while I lay in bed tonight I spent about 45 minutes Sunday evening prepping for the two days ahead. Every time I dread meal-prepping I remind myself that the next 2-3 days I will look back and thank myself for doing what at the time felt like torture. ... I had work breakfast and lunches sorted with omelette lunch boxes (all the ingredients ready to dump in the pan) and broccoli salads with dips and roasted chicken (frozen in convenient individual servings). Mondays dinner was sorted with some diced capsicum and beans for a 12 minute pressure cooker miso chicken (YES, 12 minutes!). I will walk in the door at 6pm and this will be on the table by 6.30pm latest, accompanied by the pre-chopped cauliflower and pre-cooked onion which will be quickly fried into cauliflower rice. Tuesdays dinner was sorted with a super simple spag bol using the Keep it Cleaner Grocery primavera pasta sauce. All I needed to do when I walked in the door was cook up the Slendier edamame fettuccine, which takes no time at all to cook. All that was done while my Sunday pork roast was in the oven and I multi tasked watching the news! Not too torturous, and I slept much better Sunday night. So if your work/school days are hectic, at least give yourself some breathing room Monday and Tuesday by spending some time on Sunday afternoon getting two days of dinner sorted. Whack a roast in the oven at the same time and you will feel like the superman/woman of the kitchen! This is not a sponsored post.

09.01.2022 I LOVE a roast but tend to only have time to do one on a Sunday. That was until I discovered these beauties! Both Coles and Woolworths have a great range of ready to serve roasts that look and taste like you have been slaving away in the kitchen for hours! I literally cut this one in half and plonked it on top of my fave 20-minute roasted brussel sprouts, half for me and half for hubby! ... I am working my way through the varieties on offer, including roast pork, lamb and flavoured chickens. This is not a sponsored post.

08.01.2022 Smalls new favorite snack is making me beam! She has been resisting peanut butter her whole life (who doesnt like peanut butter ) but mixed with raspberries she thinks it is AMAZING! I think its AMAZING because I get to fill her tummy with a healthy, high fibre, vitamin rich, protein serve before bed.

03.01.2022 Roast on a Monday AGAIN!! Why not when it is this easy! This time Im using the Coles Pork Roast with a roast veggie salad. For mine, I diced up red, green and yellow capsicum and some red onion. A drizzle of olive oil and sprinkle of garlic salt.... For Hubby, diced capsicum and sweet potato plus olive oil and garlic salt. 20 minutes in the oven at 200 degrees. Meanwhile I microwaved and shredded the ready to go pork roast, which just fell apart under the knife! Once the veggies were ready, I tossed them through some green leafy salad and added the pork. For flavour, I added a big dollop of Ajvar to mine and pesto to Hubbys.

01.01.2022 I had so much fun facilitating the The Type 1 Diabetes Family Centre FlexIT workshop on Saturday. This group are an awesome bunch to spend a Saturday with! Looking forward to the second half this weekend.
