When choosing your own meal prep method, its important to make sure you utilise one thats suitable to your individual schedule and needs.

12.01.2022 BBQ Chicken & Rice Bowls Perfect meal for the weather slowly warming up INGREDIENTS 1/3 cup soy sauce... 1/3 cup fresh lemon juice 1 tablespoon light brown sugar 4 cm-piece ginger, peeled, finely grated 1 teaspoon sesame oil 4 Chicken Thigh Fillets trimmed 1 tablespoon vegetable oil 3 cups freshly cooked medium-grain brown rice 2 small avocados, peeled, halved, pitted, thinly sliced 2 Lebanese cucumbers, chopped 200g baby tomatoes, halved 2 spring onions, thinly sliced 1/2 cup fresh coriander leaves METHOD Step 1: In a small bowl, whisk the soy sauce, lemon juice, sugar, ginger and sesame oil until sugar has dissolved. In a seal-able plastic bag, combine chicken, vegetable oil and 1 tbs of the soy dressing. Turn chicken in bag to coat. Marinate in the fridge for at least 15 mins and up to 1 day. Refrigerate remaining soy dressing. Step 2: Prepare a barbecue for medium-high heat. Remove chicken from marinade. Barbecue chicken for 5-6 mins each side or until cooked through. Set aside to rest for 5 mins. Slice the chicken. Step 3: Divide rice among 4 bowls. Top with chicken, avocado, cucumber and tomato. Spoon remaining soy dressing over the chicken and veggies. Sprinkle with spring onions and coriander leaves. Enjoy

03.01.2022 Spiced Chicken Flat-breads INGREDIENTS 1/4 medium red onion, chopped 1/4 c. fresh lemon juice... 2 tbsp. olive oil, divided Kosher salt and freshly ground black pepper 1 lb. small boneless, skinless chicken breasts 1/2 tsp. ground sumac 2 Persian cucumbers, thinly sliced 1/4 c. pomegranate seeds 1/4 c. fresh flat-leaf parsley, chopped 1/2 c. hummus 4 flat-breads or pitas, warmed 1/2 c. crumbled feta DIRECTIONS 1. Toss together onion, lemon juice, and 1 tablespoon oil in a bowl; let stand 10 minutes. Season with salt and pepper. 2. Heat remaining tablespoon oil in a large skillet over medium heat. Season chicken with sumac and salt and pepper. Cook until golden brown and cooked through, 6 to 8 minutes per side. Transfer to a cutting board and let rest 5 minutes; slice. 3. Add cucumbers, pomegranate seeds, and parsley to onion mixture and stir. Spread hummus onto flat-breads and top with chicken, cucumber mixture, and feta.

01.01.2022 Grilled Chicken with Lemon and Thyme Serve 4 Ingredients 3 Tbsp. plus cup extra-virgin olive oil, divided, plus more for grill 4 skin-on, bone-in chicken breasts... Kosher salt Freshly ground pepper 2 lemons 4 garlic cloves, crushed 3 large sprigs thyme 1 cup torn pitted Castelvetrano olives Step 1 Prepare a half a grill to medium-high heat and half to low. Lightly oil grate. Pat chicken breasts dry; season generously all over with salt and pepper. Place on a rimmed baking sheet; let sit at room temperature at least 30 minutes and up to 1 hour. Step 2 Thinly slice 1 lemon crosswise into rounds; pluck out seeds. Place half of lemon slices in a small bowl. Add garlic and 1 Tbsp. oil and toss to coat; season with salt and pepper. Set remaining lemon slices aside for serving. Slice remaining lemon in half and squeeze juice into another small bowl (you should have about cup). Set aside. Step 3 Pat chicken dry again (the salt will have drawn out more moisture) and rub with 2 Tbsp. oil. Grill oiled lemon slices over hot side of grill, turning once, until charred in spots, about 3 minutes. Transfer to a plate. Grill chicken on cooler side of grill, skin side down, until skin is browned and starting to crisp, 1520 minutes. Turn chicken over, cover, and continue to grill until an instant-read thermometer inserted into the thickest part of breasts registers 160, 810 minutes longer. If desired, uncover grill, move chicken over to hotter side, and lightly char a minute or two. Transfer to a cutting board and let rest 1015 minutes. Step 4 Pull chicken meat from bones and slice " thick. Place on a rimmed platter, shingling slices. Scatter thyme sprigs, olives, grilled lemon slices, and reserved fresh lemon slices over. Season with more salt and pepper; drizzle reserved lemon juice and remaining cup oil over. Let sit at least 15 minutes and up to 1 hour before serving. Credit Bon Appétit Magazine
