25.01.2022 Before getting into bed tonight, give this yoga pose a go - Viparita Karani (or legs up the wall pose). Getting in to this position: Bring your buttocks up against the wall sideways and then swing your legs gently up on the wall. Lie back and relax. Put your arms out to the side, palms up or down. Feel your body grounding in to the earth . For extra comfort lie on a yoga mat, rug or blanket. You can also pop a blanket, pillow or bolster under your hips and a pillow ...under your head. Stay here for 5 - 20 mins. Benefits: This is a calming pose that helps ground your nervous system and reduce stress. It can help treat stress-related headaches and even insomnia . MEL’S SALTED CARAMEL SMOOTHIE Ingredients:... - 1 cup coconut milk (or other plant-based milk) - 1 1/2 cups coconut water - 1 medium cold roasted sweet potato - 2 pitted dates - 1/2 tablespoon of maple syrup - Pinch of salt - 1 tablespoon peanut (or other nut) butter - 1/2 teaspoon cinnamon - 1 frozen banana - 1 teaspoon Chia seeds - 1 teaspoon Hemp seeds Method: Blend all ingredients together on high speed, pour in to glasses and serve with pepitas, goji berries and nuts or toppings of choice. Renee’s Scrambled Tofu Ingredients:... 1 x cup sliced mushrooms 1 x sliced/diced tomato 600g silken tofu (less for 1 or 2 people) 1 x teaspoon of butter 1 x teaspoon of sesame seeds A dash of turmeric Salt to taste Salad Ingredients: 1 x bunch of continental parsley 1 x red chilli A handful of crushed walnuts 1 x red onion 1 x lemon A drizzle of olive or avocado oil Salt to taste Method: 1. Heat pan and add teaspoon of butter. Once melted and bubbling, add mushies! 2. Add tofu, tomatoes, seasonings and sesame seeds. Gently stir and let it sauté until it’s nice and hot. 3. Serve immediately with side salad. 02.01.2022 Check out this healthy plant-based beauty of a meal from Mel ... Mel’s Plant-Based Goodness Bowl Ingredients:... Potato Apple cider vinegar Olive oil Water 1 x can chickpeas 1 x bunch broccoli 1 x handful button mushrooms 1 x punnet cherry tomatoes 1 x bag mixed salad leaves Hemp seeds Parsley Mint leaves 1 x lemon Directions: 1 Cut up desired amount of your favourite type of potato. 2 In a shallow bowl mix a cap full of apple cider vinegar, a few drops of olive oil and 1/3 cup water, salt and pepper and mix. Throw potato into the bowl and toss till covered. 3 Cook potato on a lined baking tray in the oven for 30-45 minutes until golden. 4 Rinse a can of chickpeas, place on lined baking tray and cook in oven for 20-30 minutes until crispy. 5 Steam some broccolini or broccoli (or your green vegetable of choice). 6 Cook button mushrooms in oven for 10 mins. 7 Cut up tomatoes and prepare a green salad. 8 Layer your ingredients in the bowl. Use Mel’s (pictured) for inspo. 9 Sprinkle hemp seeds, chopped parsley and mint on top. Squeeze fresh lemon over the top (and add a vegan aioli or your favourite dip for an extra flavour hit). This bowl is packed full of plant-based goodness and is a perfect option for a healthy, nourishing lunch.
