Serves: 1 Prep Time: 10 min | Cook Time: 20 min Ingredients: Oil spray (3/4g) 100g lean beef fillet steak thinly sliced 1 small red onion thinly sliced 1 red capsicum sliced 1 carrot sliced 1 teaspoon ground ground cumin 1/2 teaspoon smoked paprika 50g cherry tomatoes quartered 2 pieces Rye Mountain Bread (25g each) Method: Spray wok well with oil, add beef and stir fry over a high heat until browned, remove. Add the onions, capsicum, carrot and 1 tablespoon of water and cook until soft. Add spices and tomatoes and cook for 5 minutes or until the tomatoes start to lose their shape. Warm the tortillas in a non-stick frying pan over a medium heat. Fill tortillas with the fajita mix, serve and enjoy! 06.01.2022 Protein Cookie-Dough Bites to satisfy those cravings Makes 18-20 teaspoon sized cookie-dough bites Ingredients... 3 tbsp coconut oil 1 tsp vanilla 2 tsp honey cup almond flour cup pulverised oats (or oat flour) 1 scoop vanilla protein powder 1 heaping tbsp nut butter of choice 2 tbsp cacao nibs, mini chocolate chips or carob chips Method 1. Mix coconut oil, vanilla, and honey in a medium bowl. 2. Add almond meal, pulverised oats and protein powder. 3. Stir in nut butter. Continue mixing until thoroughly combined. 4. Add chip of choice to dough mixture. 5. Using a heaping teaspoon, form dough into balls. 6. Freeze dough bites (minimum 2 hours). 05.01.2022 #TASTYTHURSDAY SUPER EASY - BLACK BEAN CHICKEN CHILLI Makes 8 generous servings... Ingredients: 2 large chicken breasts 400g can diced tomatoes 2 cups salsa 1 large onion, diced 1 green capsicum, diced 3 cloves garlic, minced 2 stalks celery, diced 2 cups frozen corn 2 cans black beans, drained and rinsed 1/2 teaspoon salt, plus more to taste 1 teaspoon dried oregano 2 Tablespoons chilli powder (this is for a mild chilli; add more if you like it spicy) 2 Tablespoons ground cumin 1 cup plain Greek yogurt Directions: Combine the chicken breasts, tomatoes, salsa, onion, bell pepper, garlic, celery, corn, black beans, salt, oregano, chilli powder, and cumin in the basin of a slow cooker. Cook on high for 4-6 hours or low for 6-8. With 30 minutes remaining before serving, turn the heat off the slow cooker and shred the chicken using two forks. Leave the lid off and let it cool. Just before serving, stir in the Greek yogurt. Serve topped with your favourite chilli toppings (e.g. coriander, shallots, cheddar cheese, diced avocado, sour cream). Notes: At very high temperatures, Greek yogurt disintegrates and becomes curdledthat’s why it’s important to let the chilli cool for a half hour before stirring it in. Whole fat or low fat Greek yogurt tends to curdle less easily than no fat. Frozen chicken breasts are fine; no need to thaw before putting in the slow cooker.
