19.01.2022 Quick 'n' Easy Saturday! Ingredients 1 medium zucchini, grated... 1 medium brown onion, diced bunch parsley, chopped 3 cups cooked Macro Organic spaghetti 2 x 800g cans diced Italian tomatoes 1 tbs olive oil 60g Macro nutritional yeast flakes 1 cup textured vegetable protein 4 tbs Macro sweet potato powder 1 tbs dried oregano 3 cloves garlic, minced 1 x 425g can Macro Organic no added salt lentils, drained Method 1. Place textured vegetable protein and 2/3 cup boiling water in a small bowl. Stir well and let stand for 5 minutes. 2. Meanwhile, heat oil in a non-stick frying pan on medium-high heat. Add garlic and onion and sauté for 2 minutes. Add tomato and cook, stirring, for 2 minutes. Add oregano, lentils, rehydrated textured vegetable protein, sweet potato powder and zucchini. Stir to combine and cook a further 2 minutes or until thick. Stir through parsley and season with pepper. 3. Divide spaghetti amongst bowls and top with bolognese sauce. Sprinkle over nutritional yeast flakes to serve.

16.01.2022 Quick 'n' Easy Saturday! Barramundi & Slaw Bowls Ingredients ... 4 soft white wraps 2 fresh barramundi fillets, skin on 350g avo ranch coleslaw kit 200g sweet cherry tomatoes, halved Method 1. Preheat oven to 180c. Turn 4 x 9cm bowls upside down and spray with oil. Heat wraps as per packet instructions. 2. Press wraps over bowls. Bake, on baking tray, for 8 minutes. Remove wraps from bowls, turn right-side up and bake for 5 minutes or until golden. Cool. 3. Pat fish skin dry. Season. Heat 2 tbs oil in a pan. Cook fish, skin-side down, for 2-3 minutes. Turn and cook for 4 minutes. Cool. Flake. 4. Toss coleslaw with half the dressing from the kit. Fill bowls with slaw, fish and tomato, and feta from the kit. Serve with remaining dressing.

Honey Chicken & Rainbow Vegetables Ingredients... 2 tbs pure honey 11/2 tbs soy sauce 500g chicken thigh fillets, halved 2 x 375g pkts stir-fry rainbow vegetables Methods 1. Preheat oven to 230c. Whisk honey, soy and 11/2 tbs olive oil in a bowl. 2. Place chicken in a baking paper-lined baking pan. Spoon over soy mixture. Season. Bake for 15 minutes or until golden brown. 3. Add vegetables to pan,then drizzle over 2 tbs olive oil. 4. Mix vegetables with cooking juices. Bake for a further 2 minutes or until vegetables are warmed through. Serve.

Chicken Kebabs Ingredients... 375g Woolworths RSPCA approved lemon and garlic chicken kebabs 450g pkt Woolworths microwave long grain white rice 420g can Macro organic black beans no added salt, drained 350g pkt kale slaw kit 1 tbs olive oil Method 1. Heat olive oil in a large frying pan over medium-high heat. Cook skewers, stirring occasionally, for 7-8 minutes or until cooked through. Remove from the heat. 2. Vent the microwave rice packet and microwave for 21/2 minutes. Add rice and black beans to the pan and stir to combine. Season well with salt and pepper. 3. Place salad ingredients and dressing from the kit in a medium bowl and toss to combine. Divide skewers and black bean rice and salad between plates to serve.

Tropical Burger Ingredients ... 340g pkt chicken burger pattie 4 jumbo bread rolls, halved 250g pk whole beetroot, thickly sliced 1/2 x 432g can Dole pineapple slices, drained 1 tbs olive oil Method 1. Heat a large frying pan over medium-high heat and add the olive oil. 2. Add the burger patties to pan and cook for 2 minutes each side, or until golden brown and cooked through. Remove and drain on paper towel. 3. Meanwhile, toast the bread rolls, if desired, cut-side up, under a preheated grill until golden, about 1-2 minutes. 4. Top bases with patties, beetroot and pineapple. Top with bun tops and serve.

Honey & Soy Chicken Stir-Fry Ingredients... 450g Woolworths Cook hokkien noodles 750g pkt Woolworths Cook honey soy chicken kebabs 400g pkt Woolworths Simply stir-fry traditional vegetables 1/3 cup Woolworths dry roasted cashews, roughly chopped Method 1. Place noodles in a large heatproof bowl and cover with boiling water. Stand for 3 minutes or until tender. Drain. 2. Meanwhile, using a fork, remove chicken from skewers. Heat a wok over medium-high heat. Add 1 tbs vegetable oil, swirling to coat. Stir-fry chicken for 5 minutes or until just cooked through. Transfer to a bowl and cover to keep warm. 3. Add 2 tsp vegetable oil to wok. Stir-fry vegetables for 4 minutes or until just tender. Add noodles, tossing to combine. 4. Divide stir-fry among bowls, scatter over cashews and serve.

Thai Beef Salad Ingredients... 100g vermicelli noodles 2 tsp olive oil 300g beef sirloin steak pinch of sea salt 1 avocado, peeled, pitted, cut into 2cm cubes 8-10 grape tomatoes, halved 1 Lebanese cucumber, cut into chunks 1/2 red onion, thinly sliced 1/2 bunch coriander, leaves picked 1/2 bunch mint, leaves picked 1/4 cup roasted peanuts, roughly chopped 1 long red chilli, sliced (optional) 2 tbs fish sauce 2 tbs brown sugar 2 tbs lime juice 1 garlic clove, crushed Method 1. Place vermicelli noodles in a bowl, pour over boiling water and allow to sit for 3 minutes. Drain and refresh in cold water. Set aside. 2. To make the dressing, place fish sauce, brown sugar, lime juice and garlic in a small bowl and stir to dissolve sugar. Set aside. 3. Preheat oil in a medium frying pan over high heat. Season steak with salt and cook for 3 minutes, then flip and cook for a further 3 minutes. Set aside to rest uncovered for 5 minutes. 4. Thinly slice steak. Combine with noodles and remaining salad ingredients in a large bowl and toss to combine. 5. Transfer to serving plates and drizzle with dressing to serve.

02.01.2022 Quick 'n' Easy Saturday! Spaghetti Marinara Ingredients... 500g spaghetti 500g jar tomato sauce with basil 500g thawed marinara mix bunch basil, leaves only Method 1. Cook spaghetti in a large pot of salted boiling water according to packet instructions. Drain well. 2. Meanwhile, add sauce to a deep saucepan over medium heat. Heat for 2 minutes or until boiling. 3. Add marinara mix and cook for 5 minutes, or until cooking through. 4. Stir through basil, season to taste, and serve with spaghetti.
