21.01.2022 This picture is a ribbon diagram depicting globulin. Fun fact: Globulins and albumins are the most abundant proteins in cashew nuts, where they largely function as seed storage proteins. These same proteins are also abundant in your blood where they play a role in liver function, fighting infection and the transport of other molecules. The building blocks of proteins are amino acids. Globulins and albumins have a good amino acid profile and cashews therefore provide all of the essential amino acids that humans need to obtain through their diet.

20.01.2022 Sweet things to do with ARTISA St Clair cashew cheese (Part 2). Sweeten to taste with icing sugar, add orange rind and Grand Marnier orange liqueur and mix well. Sandwich teaspoonfuls between pairs of Arnotts Ginger Nuts, dip half in melted dark chocolate (optional but highly recommended), and leave in the fridge overnight. The centre goes fudgy and soft, but the outside stays slightly crisp - almost like a lazy persons French macaron. Genius - if I do say so myself!

08.01.2022 Im a day late for world gin day, but can I just say, my home made sloe gin, with hot apple juice, cinnamon and pepperberry syrup is exactly the thing for gloomy afternoons. Served with our pepperberry dusted chvre style kunanyi cashew cheese.

08.01.2022 If you were going to sacrifice a whole wheel of Ben Lomond ashed cashew camembert for just one recipe, make it this one! Pre-heat oven to 250C. Slice strawberries, place in a baking dish in the oven until the juice starts to run. Meanwhile, slice the cheese thinly and arrange on a pizza base. Place the roasted strawberries on top, brush with any juice and a drizzle of olive oil. Grind over some black pepper. Bake, covered, for 10 minutes or so until base is cooked and cheese is softened. Take out of oven, scatter over basil leaves and drizzle with balsamic glaze. Bon appetit!

02.01.2022 If youre lucky enough to stay at the luxurious Saffire Freycinet in Coles Bay, TAS, youll be pleased to know that you will find Artisa cheese on the menu.

02.01.2022 Traditionally, when cheesemakers in the French alps didnt have enough curds at each milking to fill their cheese moulds, they sprinkled ash over the surface to stop undesirable microbes from growing. Next day, they topped up the moulds with more curds, resulting in a layer of ash in the middle of the cheese. For our Ben Lomond, we slice our cashew cheese in half, sprinkle each half with our house made Tasmanian vine ash and press it back together, just because we think it looks cool!

02.01.2022 Coconut cashew cream caramel (For 4 125 ml dariole moulds or ramekins) For caramel:... Add 1 cup of sugar to a heavy based saucepan and place over medium-high heat. Watch it continuously until the sugar starts to melt. Swirl the sugar around in the saucepan until it is all melted and caramelised. Pour carefully and evenly into 4 moulds. For coconut cashew cream. 1 cup coconut cream 1/2 c sugar 1 tsp vanilla bean paste 1 tsp agar agar 125 g cultured cashew cheese ( eg Artisa St Clair) Heat coconut cream, sugar and vanilla over medium heat. Sprinkle agar agar powder over mixture and whisk to combine. Bring to the boil and simmer for 3 minutes. Take off heat and whisk in the cashew cheese until smooth. Divide mixture evenly into four moulds. Transfer to fridge, leave overnight to set. Unmould to serve.
