24.01.2022 UPDATE: Hi all, I wanted to reach out again and update everyone on what has happened in the past 24 hours since I made my post. First of all, I would like to th...ank everyone for the support and attention that you have provided to my post. I had not expected this to garner the amount of attention it did and was not prepared for the overwhelming positive support that everyone has given to my parents’ bakery. To the best of my ability, I was able to translate most of your positive comments and thoughts to my parents, who are greatly appreciative for everything you have done. I cannot even begin to express how grateful I am to receive such support from not only my local community, but the community at large. I hope we can all continue to support each other, and remain safe in these uncertain times. Secondly, as we had managed to garner enough attention to the situation, the Daily Telegraph has reached out to me through Facebook messenger to advise they had adjusted the title because they ‘appreciate that it’s a difficult time for businesses.’ I would also like to mention that the author of the article never responded to my email to her, or attempted to reach out to me in any capacity. Instead it was brought to my attention from one particular source that had apparently reached out to her and received an immediate response, that she appears to disagree with the situation at hand and is quite unhappy with it. Therefore given the lack of accountability to the situation, and the fact that it had only been acknowledged and fixed due to the amount of attention my post received, I fear for the next small business this occurs to, who may not be as fortunate as I am to receive such overwhelming support. So I would like to implore to the Daily Telegraph to be more cautious with what and who you post on articles in the future. My parents and I don’t want an apology from you. We know we have the support from our community, and our only intention from the start was to clear our name. However I can only hope that this situation will be learning experience for you to be more cautious and provide more due diligence to your articles in the future. [Additional note: For transparency, I would also like to add the I adjusted the original TLDR to ‘falsely accused.’ I understand that the intention of the original title was to indicate that it was a bakery within the Kogarah area and that the use of ‘Kogarah bakery’ was likely incidental and not a intentional malicious act. That being said, the potentially misleading title was brought to their attention the day after the article’s publication on 30 July, evident in them changing the title on their website. Despite this change of their website, the article’s original title was still appearing in online searches up until yesterday night and was being associated with my parents’ business. Additionally, the reason this article was brought to our attention in the first place, was due to a Health Officer from the Georges River Council being sent down to our Bakery to essentially enquire about our supposedly $5000 fine as they had taken the article for its face value and believed it was us.] ________________________ TLDR; Daily Telegraph 'falsely accused' my parent’s business of not following COVID safety procedures and has refused to respond to us or fix their article. Sorry in advance for the long post. For those who know me, know that I’m not normally the one to post things on social media (it took me six years to even update my profile picture) but at this point, Facebook may be the only avenue I have left to turn to. Please, if you live in the local St George area, especially in the Kogarah area, spread or share this where you can. At this point, it has been over a week and I am uncertain whether I will receive a response from the Daily Telegraph,so the least I can do is try to spread awareness that my parent’s bakery is NOT the one mentioned in their article. My parents own a bakery within the Kogarah area, very creatively named ‘Kogarah Bakery.’ It is a bakery that they have owned and worked tirelessly at for almost two decades, which includes waking up as early as 12am most days, for 7 days a week, to ensure that we have fresh bread everyday for our customers. I have always been appalled by their work hours, and have encouraged them to find more people to help out in the business, to help alleviate their workload, especially as they head into their 50s. They had always said no, citing the importance of saving money where they can, to provide for a better future for my sister and I, an opportunity they weren’t given in their childhood back in villages of Vietnam. I respected their choice but tried to help out where possible, especially in areas that they can’t do as well due to their lack of English. This was particularly important in the last couple of months, with new legislations and rules coming out for businesses and Covid safety procedures, something that I ensured was actioned and implemented at my parent’s bakery immediately. So imagine our surprise when it was brought to our attention that the Daily Telegraph had written an article last week titled ‘Kogarah bakery fined over COVID-19 safety fail.’ My parents’ bakery is NOT the bakery within this article, however given the difference in one capital letter; many including our local health authorities have been misled to believe it is. Additionally, given that the article is hidden behind a pay-wall, many cannot view past the title to find details to confirm that it’s not our bakery in question. [Although certain searches of the article online will show an excerpt that says the bakery fined is located on Railway Parade, while ours is located on Montgomery Street]. We have reached out to both the Daily Telegraph and the author of the article the day after the article’s publication but have yet to receive a response from either party. While it appears that the title has been adjusted on their website [prior to us reaching out] to ‘$5000 fine for Sydney bakery after COVID safety failed,’ the original title is still the one appear in online searches in lieu of the revised one, and is still an article that predominantly appears when you try to search up my parents’ business. Given the current and often undue scrutiny that I have seen lobbied against Asian owned businesses, particularly within NSW, I am concerned [and afraid] at the scrutiny that my parents may face against individuals who may not have the ability to see or understand that we are not the bakery in question. This fear has already come into fruition, as I overheard my mum the other day, discussing over the phone how one of our customers, someone who she had been on friendly terms with, advised her to be careful, as people out there are ‘against people who have eyes like her.’ While my mum was able to defend herself, despite her limited capacity to speak fluent English, I can only imagine how much scrutiny she had faced that I had not overheard these last couple of months. Finally, like any small businesses within the current pandemic, our business has struggled in the last couple of months, with our main customers base, office workers, having been understandably regulated to their home offices instead. But my parents persevered, they continued to work hard, believing that they will struggle for a couple of months but that everything will ultimately be okay and return to normal. This has evidently not been the case in the last three weeks, as Sydney is going through a second surge of cases and the possibility of a second lockdown looms ahead. So please, if you live in the local St George area, especially in the Kogarah area, spread or share this where you can. Additionally, if you are in the local St George area, if you ever see Kogarah Bakery on a delivery service near you, please rest assure that we have done everything possible, which includes registering as a COVID safe business, to ensure we are following all legislative requirements to protect you as much as we can as a business, and our only aim is to bring you fresh quality bread. [Finally here are some photos I made my mum pose for because I realised we didn’t have any photos of our bakery. Please excuse her Masterchef pose in one of them.]

22.01.2022 Another great idea for Christmas presents!

22.01.2022 So after my last post about trying to bake bread, I’ve received a few messages asking for my best suggestion to make bread from scratch in a pot in the oven. I’ve tried a few different ones over the years, and I have found this one from Nagi at recipetineats is one of the simplest and tastiest. Check it out at ... https://www.recipetineats.com/easy-yeast-bread-recipe-no-k/ All you need is flour, water, yeast and salt, a few hours, a pot, oven and some hungry mouths to feed! 21.01.2022 Week #47. Use a Fan. Most of us know that by using a fan to help cool your home instead of air conditioning is not only most cost effective (better on your back pocket), but uses less power and energy, which in turn is better for the planet. Here's a couple of fun facts for you:... 1 Fans work by using ‘wind chill’ to reduce our body temperature rather than cooling the air in the room. 2 The average ceiling fan uses around 75 watts of energy to produce 140 cubic metres of airflow. 3 Fans use 90% less power than a central air conditioning unit. 4 By using a fan alone, you will keep the room 7-10 degrees cooler. 5 Not all fans are created equal, so it pays to do your homework to ensure you're getting the right fit! So, whether it's a pedastal or ceiling fan, invest in one today and help reduce your energy consumption this Summer. Learn more about fan vs air con usage at makeitcheaper.com.au.

20.01.2022 Excited to spread our message abroad.

20.01.2022 Working from home sustainably. It was the stuff of dreams just 12 months ago. Being able to avoid the hassle of a long commute to work and just work from home. Imagine how much extra work you could get done during the day? In the past six months, it’s become our new norm. Thanks to the impact of COVID19 many of us have been and continue to permanently work from home until further notice.... While it was a novelty at first, it’s a great example of the need to be careful what we wish for! We all know and understand now, that working from home comes with both its benefits and its drawbacks! 17.01.2022 Over a million plastic bread bags are used daily in Australia. Let’s make this statement a thing of the past. Choose to reuse and say no to single use plastic. Be part of the solution. Link in bio.

16.01.2022 What a crazy year 2020 has been so far! Having reached our recent milestone of 10,000 reusable bread bags going out to homes and bakeries all across Australia, we are humbled to reflect on this article written by Broadsheet Sydney about Aussie Bread Bags and our mission to replace one million plastic bread bags with reusable ones by 2024. Still a way to go, but growing everyday because of all our supporters who believe in our mission and share our message. 16.01.2022 Congratulations to all the entrants in Australia’s Best Pie & Pastie Contest. Some amazing work in baking

14.01.2022 We are absolutely thrilled to have just cracked a huge milestone here at Aussie Bread Bags! Just 15 months after opening the e-doors to our humble little business, we have just sold our 10,000th reusable bread bag! We want to thank each and every one of you who have believed in our cause and jumped behind us in support to eliminate single use plastic from bread purchasing and storage.... Even better news is that based on the figures supplied in the link below, those 10,000 reusable bread bags in circulation now can take credit for having directly helped keep more than half a million single use plastic bread bags from being used instead. https://www.roymorgan.com//7198-slicing-up-australias-brea

14.01.2022 Earlier in the week, South Australia announced that they are looking to ban single use plastics, starting in 2021. The state successfully passed the Single-use and Other Plastic Products (Waste Avoidance) Bill 2020 through Parliament on September 9, 2020. This will prohibit the sale, supply and distribution of certain single-use plastic products, starting with plastic straws & cutlery, along with polystyrene cups and bowls. Items including takeaway coffee cups and plastic b...ags could also be added to the list in the future. A big win for the environment and here’s hoping the other Australian states follow suit. Tag your favourite South Australian bakery to let them know that Aussie Bread Bags are their sustainable alternative to single use plastic bread bags. 14.01.2022 So proud of my other half and first born boy. This was a frame of a GT BMX bike, usually priced around $600, found on the side of the road. 14.01.2022 There’s a wise old saying you never know the worth of water until your well runs dry. While not many people have wells now-a-days, the essence of the saying still applies. This is particularly valid when we live in the driest populated continent on Earth. Australia’s average rainfall is a scant 470mm per year... continue reading here: https://www.aussiebreadbags.com.au//tracking-your-water-us

14.01.2022 Week #34. Lighting. The simplest of ways we can all help the environment is by switching off lights and electronics when not in use. Check out my lastest blog to read about how your electricity are ran by burning fossil fuels and why we should do all we can to lessen our consumption.... https://www.aussiebreadbags.com.au//a-year-of-weekly-susta

13.01.2022 Who’s keen for a nurdle hunt?

13.01.2022 Week #37. Standby electronics. Next time you have chance to, go around your home with a pencil and paper and jot down the electronic appliances you have in each room. Mine is 28 and the Australian average is 30 according to Click Energy. Now let's times that by the nine million households that are around Australia which gives us a total of approximately 270 million idling appliances Australia-wide. ... And how many of them are in use ALL the time? Never little. But even when not in use, many of those appliances still use power. In actual fact, they cost Aussie households an estimated $860 million each year, and accounting for 5.9-10% of power bills. See more about these figures as well as some great tips at the Click Energy website. And please, consider switching unused appliances off at the wall to save yourself unnecessary electricity bills as well as the unnecessary use of energy.

12.01.2022 Week #36. When you go on hoidays... School holidays are just around the corner. And even then you can still reduce you footprint AT HOME while you're away. How?... By the very simple act of increasing the temperature in your fridge and freezer just slightly. As you're not home, they are not being opened and shut all day every day, thus easier to maintain its temperature. Increased temperature in these appliances uses less energy and helps to reduce your homes footprint while you're not there. You can also consider switching off appliances at the wall. Things like the TV, dryer, washing machine, kitchen appliances like kettle & toaster, digital clocks, lamps, chargers, heaters, basically anything that's plugged into a wall, can be switched off (at the wall) whilst you're not home. Again saving yourself the unnecessary electricity bill for while you're not there as well as the unnecessary energy the use.

12.01.2022 Love the size love the reusable products can't wait to bake.

11.01.2022 Multi-purpose bags!

11.01.2022 The national competition for Australia's Best Pie and Pastie starts today! Brought to you by the Baking Association of Australia, over the next 3 days, bakers from across Australia will flock to Randwick to compete for this honour in baking! Aussie Bread Bags will be there to support the competitors and applaud them all at the end. ... Good luck everyone! FitNish Media on Unsplash

11.01.2022 Week #33. Buying the right appliances. Following on from last weeks post, when appliances do eventually come to the end of their life, it's important to look for new ones that are efficient with energy as well as water (if applicable). The easiest way to check this is to check the little sticker on the unit that displays the stars. The more stars (up to 5) the better it is, saving both you and the environment in the long run.

11.01.2022 Week #35. Check your insulation. Having your home properly insulated, will directly result in maintaining the temperature inside your home. Whether it be keeping the heat of the day outside and the coll in, or the warmth from your heater inside and the freezing night out, your heating and cooling costs will be kept to a minimum. ... If the insulation in your home is old or damaged and needs replacing, put it on the list to get it done ASAP. It's better for your wallet and for the environment.

10.01.2022 You asked and we listened. Now announcing our new range of Bulk Goods Bags! Perfect for collecting and storing any dry goods from your bulk store. ... Rice Pasta Legumes Seeds Nuts Flour You can even use them for fruits and veggies in smaller quantities! Never need plastic again for your groceries

10.01.2022 Week #32. Maintain your appliances. You're in the store on a mission and decide to buy the prettiest, sparkly new fridge, oven, washer or dryer. It's beautiful. You watch it be placed into your home and love it's shiny new lines. You admire it when you load it with groceries for the very first time. Or perhaps when you first cook a meal in it, or a load of washing. How fortunate we are to have such technology to help with everyday chores/tasks. ... But as time goes on, that machines hard work soon becomes forgotten and is taken for granted... that is, until something goes wrong with it and it stops working. Maintaining our appliances is not only important for their longevity, but also for their productivity, efficiency and through it all, the environment. How?? Learn more about how maintaining our home appliances can help not only the planet but your back pocket too here https://www.mrappliance.com//the-importance-of-maintenan/. This can also apply to any water sources you have around your home. If any taps, spouts or showers around your home have a leak, no matter how small, you should get it fixed as quick as you can. This not only saves you $$ on your next water bill, but helps to save water for when we truly need it.

09.01.2022 Oh this is just so great! And accurate!

09.01.2022 Week #38. Clothes drying. It's a pretty common way to save yourself some dollars from the power bill, but did you know there's other benefits of drying your washing on the line rather than in the clothes dryer? Here's our favourite reasons:... 1 It's environmentally friendly. Less need for power = less use of energy and better for the planet as well as your wallet. 2 Saves your clothes. Dryers can be tough on clothes. Rigorous tossing and tumbling of clothing in high heat causes strain and wear and tear on fibres. 3 Laundry consciousness. Hanging clothes out to dry takes longer than chucking them into the dryer, therefore we naturally become more aware of how much washing we're doing and exactly how necessary (or unnecessary) it really is. 4 Naturally whitens and disinfects clothes. The suns UV rays can help not only whiten your whites and remove stubborn stains, but further disinfect any nasties that may be lingering. 5 Reduces wrinkles in the clothing. The weight of slight water in the washing when hung, helps to stretch out any creases and wrinkles = less need for ironing, energy and power. With the much warmer weather on the way, there's really no reason to not be utilising Mother Nature's gifts for all your clothes drying needs.

08.01.2022 BA has welcomed the exposure draft of the Plastic Reduction Bill 2020 tabled in the ACT Legislative Assembly. This Bill begins the implementation of the promise...d phase-out of certain single-use plastics. The ACT is the 3rd government in Aus to introduce a ban on certain single use plastics commonly littered. It is taking a leading approach and includes plastic cutlery, stirrers and significantly a phase-out of expanded polystyrene food and beverage containers such as plates, cups and 'clam shell' containers.' This legislation is a welcome start, and we urge the ACT Government to maintain a continuous improvement schedule and, as promised, ensure all problematic plastic packaging is phased-out by 2022. 06.01.2022 Week #39. Phones and Ipads. Here's a simple one. 05.01.2022 With the recent increased restrictions again effecting many places and states in Australia, it’s safe to say, people are back to spending a lot of time at home. If you’re like me and trying to make the most of this time, why not try your hand at bread baking? If you’re not keen on doing it from scratch, ... with the kneading and waiting for it to rise, invest in a home bread maker, which simplifies the process! I personally have a Breville one (pictured here - don’t judge, it’s old), that also makes jams too, which are fantastic! But there’s all sorts of brands out there including @sunbeamaustralia, @panasonic_au and @kogandotcom to name just a few. With these handy little machines, you can often select to make bread either from basic ingredients yourself or from a ‘pre-made’ type pack like the guys at @lauckeflour provide here https://www.laucke.com.au/home. Give it a try and tag @aussiebreadbags in your pictures! We’d love to see what everyone’s baking in their spare time and of course keeping fresh in their Aussie Bread Bag! 03.01.2022 Do bread bags actually work for keeping bread fresh? This has got to be the number one question I’m asked about Aussie Bread Bags. So I thought I’d summarise and share with you all some tips to help keep bread fresher for longer... 1: Keep your loaf unsliced. Let the crust do its job and keep the insides of the bread soft and fluffy. Only slice your bread when you're ready to eat it.... 2: Keep the sliced side face down. Once it's sliced, the inside of the bread will start to stale if left exposed. The easiest way to avoid this is by standing it up on its end. Aussie Bread Bags were designed with this in mind and why they have a squared bottom at the base to make for easy standing. 3: Store in a breathable fabric, such as an Aussie Bread Bag, on your benchtop out of direct sunlight. You can also check out my recent blog which includes an independent test that compared multiple bread storage methods and reveals their results here! https://www.aussiebreadbags.com.au//do-linen-bread-bags-ac #linentest #freshbread #handytips

03.01.2022 We’ve heard a lot about microplastics. Some people say they are harmless and too small to do any damage. Others say that because they are so small, they cause more damage. Microplastics have been a point of debate due to a lack of research and understanding of their impact. But in recent years this has changed. We now have a better understanding of their impact and the real cost of these small evils to the environment. So, what are they? What are they in? How do they really impact our environment?
