18.01.2022 Aussie Spices Ras el Hanout, not that well known in western food culture, this great blend has a mixture of North African, Moroccan and Algerian influences, our blend has more than 17 spices giving it a distinctive flavour. Ras el Hanout is a very versatile blend used in casseroles, tagines, marinades and many more.. Ras el Hanout 500 grams diced Beef, Lamb or Chicken 2 tablespoons Ras el Hanout Blend... 2 large onions halved & sliced fine 2 teaspoons crushed garlic 1 tablespoon crushed ginger 1/4 cup mustard oil or vegetable oil 1/2 cup tinned Italian tomatoes diced 2 teaspoons sugar salt to taste Method Put the diced beef in a dish, add the Ras el Hanout spice, garlic and ginger and mix well. Stand for up to 3 hours. Heat the oil till smoking, scatter in the sugar followed by the onions and stir fry till dark golden brown. Add the meat and continue to stir fry for a further 10 minutes on a lower heat. Add 3/4 cup water and stir, add the tomato, salt to taste. Lower the heat, cover and simmer until tender. About l hour depending on the cut of meat. If it becomes too dry add a little more water. Serve with rice and a cold cucumber raita.

12.01.2022 Aussie Spices Chilli Con Carne, with the cooler weather this is a family favourite, this dish has a great taste that leaves you warm and satisfied! It does have a little chilli powder in the blend but is still mild, using some sour cream is also very nice. Best of all its a cheap meal with left overs you can't leave alone, chilli con carne on toast for lunch so good! Chilli Con Carne Ingredients... 1 tbsp oil 1 large onion chopped into small dice 1 red pepper diced (capsicum) 500g minced beef (or meat of your choice) 25g of Chilli Con Carne spice blend (serves 3 - 4 ) 2 tbsp tomato puree 400g can chopped tomatoes 400g can red kidney beans 1 beef stock cube in 1 cup of hot water Method Heat oil in a non-stick frying pan over medium-high heat. Add onion and red pepper and cook until they soften. Add meat raise heat and brown, stir in Chilli Con Carne spice blend and cook for a few minutes, add tomato puree, can tomatoes and beef stock,stir well. Cover and simmer on a low heat for 20 minutes. Add drained red kidney beans and cook for a further 5 minutes add salt and pepper to taste. Serve with boiled rice, sour cream, corn chips and salsa. Suitable to freeze
