25.01.2022 Delicious Banana Bread (gluten-free) Thank you to one of our naturopaths Angelique for this recipe it’s a winner in her household! This recipe can also be turned into muffins if you prefer. Ingredients:... cup gluten free all-purpose flour 2-3 overripe bananas, mashed cup almond meal 1 tsp. baking powder tsp. baking soda Pinch of salt 1 tsp. cinnamon 1/3 cup butter, melted 2 tbsp. honey or maple syrup 2 eggs 1 tsp. vanilla essence 2 tbsp. milk of your choice Optional: chocolate chips or chopped nuts Method: 1. Preheat your oven to 170C and spray a loaf (or muffin) tin with oil 2. Mix the all-purpose flour and almond meal in a bowl, whisking to ensure there are no lumps. Then add baking powder, baking soda, salt and cinnamon and mix again 3. In a separate bowl combined the butter, honey or maple syrup, eggs, vanilla and milk. Then add the mashed bananas and mix again 4. Fold the wet ingredients through the dry ingredients, add choc chips or nuts if desired & pour into the loaf tin. Bake for 50 mins or until a skewer inserted into the middle comes out clean. Allow to cool in the tin for a few mins before turning out onto a cooling rack

Ingredients:... 1 baguette, sliced into 2cm thick slices cup each of walnuts & hazelnuts 2 tbsp. white sesame seeds 1 tsp. each of ground coriander & cumin Salt and pepper to taste Extra virgin olive oil Method: 1. Add the walnuts & hazelnuts to a large frypan and dry fry over medium heat, constantly stirring until they smell fragrant, around 3 mins 2. Remove the nuts from the frypan and add the sesame seeds, frying the same way until golden on the edges 3. Add the nuts, sesame seeds, coriander, cumin, salt & pepper to a food processor and blitz for about 10 seconds or the mixture resembles coarse sand. Transfer to a shallow bowl 4. Brush olive oil on one side of each slice of bread and dip, oil side down, in the dukkah to cover 5. Store any left over dukkah in an airtight container. Enjoy!

Preheat your oven to 150C and line a flat tray with baking paper 2. In a blender, whiz up the oats until they form a fine flour, then transfer to a bowl. Add the spices and bicarb to the bowl and mix to combine 3. Add the butter, milk and maple syrup to a blender or food processor and mix until well combined 4. Using a spatula, gently mix the wet ingredients with the dry ingredients until a dough forms 5. Roll the dough into a ball and refrigerate for 30 mins. Then, roll out the dough on a clean surface to about 3mm in thickness and cut using a gingerbread man cookie cutter 6. Place your cookies on the prepared tray and bake for 10 mins or until golden, then allow to cool completely 7. While the cookies are cooling, mix up all the icing ingredients until smooth. Decorate cooled cookies to your liking

Spread the cheese mixture onto the pastry, staying within the borders, then top with the zucchini slices and season with salt and pepper. Brush the pastry border with 1 beaten egg 5. Bake the tart in the oven for 15 mins until the pastry is golden. Remove from the oven and top with the remaining feta and a few sprigs of dill, then bake again for another 5 mins
