14.01.2022 No tea at a high tea party?! That’s right, a no tea ‘high tea’ for a hen! What do you normally drink at a hen’s party? Bubbly? Wine? Punch? Or cocktails? English Breakfast or Earl Grey aren’t usually on the menu... ... 03.01.2022 Afternoon tea Miss 4 wanted to have a tea party, but we didn’t have any treats to eat with our ‘tea’. This was our solution, an almost vegan carrot cake. Recipe... Combine: 2 cups grated carrot 1/2 cup sultanas 1/2 cup coconut sugar 1/3 cup almond milk 1 egg 1/3 cup olive or coconut oil (we did 1/2 and 1/2) 1 tbs vanilla extract and mix. Add: 1 cup almond meal 2 tsp each of baking powder and ground cinnamon 1 tsp ground ginger 1/2 tsp ground nutmeg Pinch salt (we used pink Himalayan) 1/2 cup nuts (we used a mix of roughly broken almonds and cashews) Bake in a lined loaf tin in a preheated oven at 180 degrees for 40 - 50 mins. Cool in tin before cooling on rack. We made the ‘icing’ with 1 avocado, raw cacao, maple syrup and a pinch of salt, blended together. To make vegan, sub the egg with linseed meal. This cake was moist and delicious. We adapted a recipe by J.
