FULL RECIPE BELOW 8 chicken thighs, skin removed, cut in half 2 tbsp peanut oil or vegetable oil 1 x 3cm piece of ginger, minced 1 tsp finely minced lemongrass 1 clove garlic, minced 1 tsp AYAM Curry Powder 2 tbsp AYAM Light Soy Sauce cup toasted peanuts 1 long red chilli, finely sliced 1 cucumber, sliced A few small sprigs each of Thai basil and Vietnamese mint, to serve Steamed rice, to serve 2 tbsp AYAM Red Curry Paste 270ml AYAM Coconut Milk cup crunchy peanut butter 1 tsp AYAM Fish Sauce 1 tsp sugar 1 lime, juiced In a large bowl mix together 1 tablespoon of oil with the ginger, lemongrass, garlic, curry powder and soy. Coat chicken in the marinade. In a large non-stick sauté pan heat remaining oil over medium heat and add the chicken. Cook for a few minutes on each side, turning regularly so it does not burn. Remove chicken and rest on a plate. In the same pan add the curry paste and, using a wooden spoon stir to release any caramelised bits. Add the coconut milk and then whisk in the peanut butter, splash of water, fish sauce and sugar. Simmer for 3-4 minute until a smooth thick sauce forms. Add lime juice and then check the seasoning. It may need a little soy or salt or extra sugar to balance. Return the chicken pieces to the sauce to warm through. Serve with a garnish of peanuts, chilli, herbs, cucumber and steamed rice. FULL RECIPE BELOW 6 eggs, at room temperature cup plain flour 1 cups panko breadcrumbs Vegetable oil to deep fry 2 tbsp AYAM Black Bean Sauce 1 tbsp black or rice wine vinegar 2 tbsp honey 1 tbsp AYAM Sesame Oil Fresh coriander leaves, to garnish 1 long red chilli, deseeded and finely chopped, to garnish 1 spring onion, very thinly sliced, to garnish For the dressing, combine all the ingredients in a bowl and set aside. Bring a saucepan of water to the boil over medium high heat. Add 4 eggs and cook for 5 minutes then remove and place in iced water to stop cooking. Beat the remaining two eggs in a bowl and season. Place the flour and panko in two other bowls and season each. Working one egg at a time coat in the flour then the egg then the crumbs then back in the eggs and a second coat of crumbs. Repeat with remaining 3 eggs. Half fill a saucepan with oil over medium heat and bring to 190C degrees. Gently lower in each egg and fry for 3 minutes or until golden. Drain on a wire rack or paper towel. HERE'S HOW YOU MAKE IT 1/3 cup large Tapioca Pearls 1 cup Almond Milk 1 tsp Vanilla Extract cup Maple Syrup tsp Cinnamon 1 pinch of Salt (optional) To Serve 1 Mango, diced 1 Passionfruit In a bowl soak the large tapioca pearls in 1 cup of almond milk (any non-dairy milk) for at least an hour or even overnight. Pour the soaked tapioca pearls and almond milk into a medium saucepan over medium heat and add the coconut milk, maple syrup, vanilla, cinnamon and salt and bring to the boil. Reduce heat and simmer for about 15 minutes, stirring occasionally to stop the mixture from sticking. Pour into two serving glasses and place in the fridge to set for about two hours.
