23.01.2022 We're having a great time meeting some of our northern growers this week - Tex, who has worked for Moore's Farm Fresh in Scottsdale for thirty years, gave us an amazing tour of parts of their rolling 1200 acres of onion, carrot, beetroot, swede and potato plantings today. Look at that rich red soil!



22.01.2022 Spring garlic: if you haven't used this before, here's a handy guide to getting the most out of it! The loose leaves at the end can be usable but just like leeks, they're probably easiest to add to the compost. Trim to the top of the stem, trim off the stringy roots at the bottom, and what's left (see picture on the right) is all garlic! Obviously putting it through a garlic crusher isn't going to be an option, but just chop it up and add it to dishes just like cured garlic.... The bunches of scapes in the $30 boxes are almost completely usable - the only bit that I'd trim off is the conical seed head at the end. (Scapes are actually the long central stem that carries the flowers, which in these scapes is only just starting to form but blooms into a full flower if left to go that far.) The end of the spring garlic with the roots on grows over time to form a large bulb, at which point the cloves start to separate - the stem (by this stage tough and woody) is then removed from this and the bulb is left to dry, during which time the soft layers become flaky and papery, fully separating the cloves.

17.01.2022 A spot of BBQ weather meant finding something to accompany these gigantic sausages from @ziggyssmallgoodstasmania. I knocked up some thyme-infused caramelised onion (four or five sliced brown onions, salt, thyme and pepper all shaken up in a pot with a tight fitting lid then left to cook for an hour or two on low heat with an occasional stir, then finished over high heat with a bit of lard saved from a roast). But the star was the beetroot - diced cooked beetroot (roasted whole skin-on then peeled) dressed with Polish mustard, lots of a sour cherry jam that came home with us from Berlin, neutral oil and a little white wine vinegar. Other jams might work too, but I reckon the cherry jam is a great match for the beets! #beetroot #grilledcos #onion #cookingovercoals #tasmanianproduce

11.01.2022 Pastitsio - a traditional Greek pasta bake - is delicious but a bit light on veg. Here, in addition to a rich lamb and tomato sauce mixed with macaroni, I've included a layer of fried eggplant above and below, crowned with lemony garlic silverbeet and a topping of yoghurt, pecorino, eggs and nutmeg instead of the usual bechamel. The silverbeet stems went into the lamb sauce in much the same way as celery is used in a mirepoix. #pastitsio #tasmanianproduce #comfortfood

09.01.2022 Making the most of the last cauli for the season with a triple-decker cauliflower cheese risotto! The top of the cauli was rubbed with a BBQ rub (garlic, thyme, mace, mustard, smoked paprika, olive oil and salt) and baked in a pot half full of chicken stock so the top roasted and the bottom steamed/boiled. I used the infused chicken stock to make the risotto, finished it with butter and smoked cheese and cheddar. Underneath the risotto is a puree of the steamed part of the cauli (using almost all the stem too!), and on top is the top bits of the cauli, split and reroasted for even more roasty notes. #cauliflower #seasonaleating #tasmanianproduce #cauliflowercheese

08.01.2022 Winter meets summer... a Thai-inspired cabbage salad (shredded raw cabbage, picked mint, cashews + chilli, mustard greens and Vietnamese mint from the garden, with a dressing of fresh lime juice, fish sauce, maple syrup, grated ginger and finely sliced spring garlic from the garden); chargrilled beef burger with finely chopped shallot, toasted jasmine rice powder (just brown in a dry pan then grind), toasted coconut, lemongrass from the freezer, some reserved lard and a couple of heaped teaspoons of store-bought red curry. #redcurry #cabbagesalad #cabbage #mint #burger #chargrilled #bbq

06.01.2022 Skordalia (from the Greek "skordo" meaning garlic) is part of the family of "sauces" made by emulsifying olive oil and garlic, of which true aioli (which isn't garlic mayo) is the more ubiquitous cousin. Unlike mayo, skordalia doesn't use eggs; instead, olive oil is whipped into a puree of garlic and a base ingredient, often potatoes or stale bread, lightening the texture like butter does in mashed potato, but in a much healthier way! This smoked cauliflower skordalia starts ...with a puree of smoked cauliflower and garlic lightly cooked in milk (I had a stash of old garlic that needed picking over and using. After pureeing, keep the food processor running and slowly pour in enough olive oil to get a fluffy, mayo-like consistency (at least 200mL for half a cauli). Season with salt and vinegar; if you don't have garlic you could replace some of the olive oil with garlic oil. I beefed up the smoky flavour with some liquid smoke, but a plain, unsmoked skordalia would be equally delicious. See more

03.01.2022 Garlic season round three: after the scapes are harvested the fully-formed bulbs are dug and then dried. However, it's not necessary to dry them unless they're being stored; this week's lovely purple garlic from Tasmanian Garlic Company is still fresh - the layers of skin in between the cloves have yet to dry into the familiar papery "wrapper". The skin is not great eats, but if you're keen to avoid waste it could be used for flavour in stocks and other infusions. #garlic #seasonaleating #tasmanianproduce

02.01.2022 Roasted cauli on beetroot hummus! Combining cauli and beetroot can be a challenge; this, however, was excellent. For the hummus, I put a tin of drained chickpeas, a heap of tahini, lemon juice, and finely chopped garlic scapes, brought that together and poured in a generous amount of olive oil with the motor running - salt and a bit of honey for balance. I roasted the cauli simply with olive oil, salt and cumin seed; I then added almond slivers, pine nuts, pepitas and a knob of butter for the last five minutes. #beetroot #cauliflower #hummus
