24.01.2022 Dumplings Party I had lotsa fun in the kitchen yesterday with friends making traditional handmade dumplings. It looks easy on the recipe, but it definitely takes time to acquire the skills on how to make the dough from scratch, roll and flatten the dumplings dough into fine round pieces, and fold them up into different shapes. Thanks to my beautiful friend Lainey Liu who is highly skilled in making dumplings . This is something that you would appreciate more learning f...rom someone rather than watching YouTube. I couldn’t remember how many dumplings I had last night. It was so yummy and refreshing especially when dip the dumplings with the sauce. Aww Let me indulge once more!!!



19.01.2022 Crispy bottom Veggie Buns - made with a simple no yeast dough & filled with crunchy green beans. Tag some friends who love Asian foods. Sending loads of healthy vibeson this beautiful day. love, @bbdiet_dietitian Recipe (makes 10 buns) Dough ... - 300g [~2 1/2 cups] all-purpose flour (see notes below if using cups) -175ml [3/4 cup] hot boiling water - pinch of salt Filling: - 1/2lb (250g) green beans, chopped - 16oz firm tofu, pressed & mashed - 1 small carrot, finely chopped - a handful of chopped cilantro - 2 teaspoons toasted sesame oil, 1 teaspoon salt, a few shakes of white pepper Other ingredients: oil for cooking, sesame seeds, chopped green onion To make the dough, mix flour & salt in a large bowl until well combined. Make a well in the middle & pour in hot water. Using a spatula, fold in all flour until a shaggy dough forms with no dry spots of flour in the bowl (if it does, add cold water, 1 tablespoon at a time). Transfer flour to a cleaned surface & knead until a smooth dough forms, about 10mins. Cover with a damp towel & rest for 30 mins. Meanwhile, place tofu in a cheesecloth bag & wring out all the liquid. Saute chopped green beans with 1 teaspoon oil in a pan for about 1-2 mins. Add green beans into a bowl along with tofu, carrot & seasoning ingredients. Mix well & divide the mixture into 10 portions & form it into a patty-like shape. When ready, dust flour on the surface, roll dough into a log & divide into 10 equal balls. To assemble, take one dough, flatten it with your palm & roll into a wrapper, about 4.5 inches diameter by keeping the middle part thicker Place one filling patty in the middle & pleat to seal. Dab the smooth side with water then gently press in some sesame seeds. Note: To measure flour in the cup, I used the spoon & sweep method. Spoon flour into a standard measuring cup, then level the top with a knife without packing the flour, which I had about ~63g in 1/2 cup. 17.01.2022 Today is a special day for me and I’m counting countless blessings in my life. I’m so very thankful that God has given me the opportunity to make my dream as a dietitian comes true. Over the past 8 years working as a dietitian, I’ve helped thousands of people transform their health through getting back to basic diet (BBDiet) and lifestyle changes for optimal health. Have I ever tired of working as a dietitian??? I absolute answer is NO (at least not for another 20 years or ...it’d never happen ). The sense of achievement, happiness, and satisfaction that I’ve experienced every time when my clients come back telling me that they are feeling better each day and empowered through understanding how to nourish their bodies from inside out has given me the greatest boost (despite the challenges I face each day) to keep me going. Those who are constantly on a restrictive diet no longer need to starve themselves but learning to eat more and making sustainable lifestyle changes and lose weight naturally without dieting. I’ve seen firsthand the power of food as medicine in transforming one’s health, not only physically, but mentally and emotionally. This is one of the recipes I love the most as it’s very easy for me to prep in advance by incorporating rainbow colours of veggies in a wrap and eat whenever I feel like. ... Nutrition tips: 1. When rice papers are used in salad, you can literally eat as much as you can as the calories are negligible. You can use different wraps as desired. Yes, for this recipe, you can eat as much as you like. The more veggies you eat, the better nourished you will be without worrying about gaining weight. 2. 04.01.2022 Thai Red Curry Ramen Noodle Bowl An easy and flavourful bowl worth trying! Recipe below: . Recipe... 1 pkg ramen noodles (a pkg includes 4 ramen noodle "bricks") 2 T. sesame oil. 8-10 shiitake mushrooms, washed, dried and sliced. 1 inch fresh ginger, grated. 2 garlic cloves, crushed. c. red curry paste. 1 qt. low sodium vegetable stock. 2 T. peanut butter. 2 T. tamari. 1 14 oz can full fat coconut milk. 1 red bell pepper, sliced into bite-sized pieces. 2-3 bunches broccolini, washed and trimmed. Limes, optional as garnishment (but highly recommended). Scallions, thinly sliced, optional garnishment. Sriracha, optional as additional spice. Directions: Prepare the ramen noodles al dente in accordance with package directions. Set aside. In a large stockpot, heat the sesame oil. When shimmering, add the mushrooms and saute until golden brown. Add the garlic and the fresh ginger. Saute for 1-2 minutes more being careful not to burn the garlic. Add the red curry paste and saute for about 1 minute, stirring constantly and allowing the paste to toast slightly. Add the vegetable broth, the peanut butter and tamari. Bring to a simmer. Allow to simmer for 5-8 minutes. Add the coconut milk, red bell pepper and broccolini. Heat until hot, allowing the broccolini to become bright green. Add the noodles to your serving bowls. Spoon the ramen noodle broth over the noodles. Top with sliced scallions. Squeeze fresh lime juice over the broth and add sriracha for some additional spice. I was very impressed with the #wholesome ingredients added into all the recipes. Just tried some of the newer creations - kale pizza and macadamia cookies. The pizza tastes absolutely amazing!!!
