10.01.2022 There’s a lot of trial and error in baking.. and especially in pastry! I must have made about 20 batches of eclairs over the last two weeks, and while most of them were successful, the first two batches were not The first one in this photo was one method I tried, that caused them to completely deflate. The second one was better, but still not usable. The third eclair in the photo was from the third batch I tried with a new method where I had basically given up, befo...re deciding to give it one more go. They worked a treat, and have worked every time since then!
