23.01.2022 Heres another one of our soba tagliolini with katsuoboshi and truffle, for all you pasta lovers out there Feeling thirsty from the carb loading? What better to wash it all down with than a beverage that also pays homage to Japanese cuisine and culture, and one that harmonises with the delicate, umami laden flavours in this dish? We are talking sak of course! Our non alcoholic pairing was a fake sak, made from aloe, lime zest and salt. We wanted something to replicate th...at cool feeling of drinking sak, and think our fak really hit the spot! For the heavy hitters we went with the Kasumizuki Junmai sak, from producer Houraisen in the Aichi prefecture. Its savoury, floral, earthy and mushroom undertones stood up to the fragrance and flavours of the truffle, buckwheat and katsuoboshi, the high acidity made for a pleasantly dry and lengthy finish. 06.01.2022 One thing we love is quality Aussie produce, like these Western Australian Marron. These bad boys featured on our last menu, they were cooked over charcoal on the Japanese BBQ, and served with mushroom, madeira and tarragon It was @tatumrumbles favourite pairing of the night, going with the 2017 Adelina Nebbiolo ros (SA) or a kooky house made mushroom latt (better than it sounds, trust us!!! ) Any guesses as to what seafood will be starring on our upcoming spring m...enu?? 04.01.2022 @lorenzo.librino s main course of David Blackmore wagyu tongue with fermented celeriac and bone marrow with burnt onion. We paired this with a rich and supple Syrah by Eden Road, that was laden with generously ripe, rich and plush dark plum fruits and rounded out with sweet baking spice and an ever so slightly peppered finish. Our events are structured as an 8 course menu with snacks and petit fours, and includes your choice of alcoholic or non alcoholic beverage pairing.
