25.01.2022 The Red Dragon Niacin Flush. On a recent fast, trying out a few different protocols, some of Bernard Jensen's, some of my own, I came across Niacin, vitamin B3,... a circulation stimulant on turbo would be the understatement of the century. It is absolutely insane what it does!! Chasing B3, I purchased Nicotinamide initially by mistake, which is a form of B3, but does not initiate the flush. Niacin on the other hand is absolutely insane, I have never experienced anything like it. Initially it is used to drive blood into all cells that are lacking oxygen and nutrients. It turns your circulation on fire, your hands heat up, your back, your feet, your head, you start changing colour, you start feeling hot as if your body is generating enormous amounts of heat. After a month of incubation in my fridge, my German sourdough starter (Claus), has been reunited with fresh stone ground flour ground yesterda...y instore at Garden of Eden. I was waiting to supply him with the best flour in Australia, local and freshly ground. Now it's 4.30am, bakers time, we just have to wait for him to fully rise, before baking. Early in the new year we will be running a sourdough making workshop, enquire now if you are interested.

I celebrated my first Shabbat on Friday night with some great friends, I can honestly say, I haven't seen anyone put that much effor...t into a meal in a very long time. An absolute amazing job Kate and Mason, you really turned it on!!! This was only a fraction of the food. Dining is an entirely different experience from simply eating, it is about great company, chewing your food slowly, taking your time, having a conversation and a good laugh, unwinding and sharing your day with others. Enjoy the food, taste it, sip your wine, savour each mouthful Make it a goal to aim for at least one dining experience a week, and watch your health and life improve. Turn on the appropriate music, your heart rate will follow the amount of beats per minute of a song, set the ambience, set the lighting. You deserve it!!!

19.01.2022 On Saturday mornings at Garden of Eden the chef's like to experiment and have a little fun, this week we made two activated nut milks, our flavours were Arabia...n dream (medjool dates with vanilla pods) and Cacao twist (Cacao, medjool dates with a hint of cinnamon) I will be making these next Saturday so come and sample one. We have nut milk bags and all the ingredients should you require a little guidance to whip up your own. Fresh is best!!

06.01.2022 Trialing something a little new. A raw cacao banana sorbet, an activated buckwheat berry muesli and a coconut yogurt with a hint of maple and vanilla. These are... the breakfast bomb!! They're amazing, they're both gluten and dairy free, raw, vegan and delicious!! In our cabinet now, these won't last long.

04.01.2022 Most bakers will not use a 100% wholegrain flour because it is hard to get a perfect rise. Personally I will always make a sourdough loaf with 100% wholemeal fl...our, milled on the day fresh with local grain. Taste buds like high nutrition. Don't compromise!!! Claus is being served with a Nimbin cheese from grass fed cows, a cultured butter, a wild sauerkraut, wild dandelion from my herb garden and local cherry tomatoes. The flour was milled yesterday live at Garden of Eden, combined with my 120yr old German sourdough starter, I'd call it a win. It's in its own class.

02.01.2022 I just cracked the seal on a 120yr Heirloom sourdough bread starter from Germany. First step was to mix it into flour and water, and keep it in a 33-37 Celcius environment for 24hrs. Watch this space!!
