24.01.2022 Good evening all, The Bellening Community Markets are on tomorrow!! While it still a little early for our sensational blueberries we have loads of Low Sugar blueberry Jam and sauce as well as our blueberry hot sauce! I will be also selling some frozen blueberries to get you through until next month. So come on out and enjoy a market as we have had far to few this year and I can’t wait to see you all again!

21.01.2022 #Blueberry Ripple Cupcakes Ingredients 125g butter melted 1/2 cup caster sugar 2 tsp vanilla extra... 3/4 cup milk 2 free range eggs 2 cups self-raising flour 50ml blueberry greens low sugar sauce Method Mix all ingredients (except the blueberry sauce) together in an electric mixer until smooth. Gently stir blueberry sauce through mix swirling do not over mix. Spoon into muffin tin lined with 12 cases and bake in a pre-heated oven at 180*C for 15-20mins or until a skewer inserted into centre comes out clean.

16.01.2022 Blueberry Greens will be returning to Newcastle Growers Markets tomorrow the 2nd Feb 2020, after a year away! we will have loads of freshly picked premium blueberries as well as our large bags of 2nds berries, and of course our delicious jam and Sauce! so come on down to Newcastle show ground 7am -1pm. Whether you are after a bargain or just the chasing the most sensational fruit; no food you’ll every eat! We look forward to seeing all there and catching up with old friends see you then!

15.01.2022 Deep Dish Baked Blueberry Cheese Cake Ingredients Crust... 125g butter snap biscuits 50g butter very soft Filling 500g cream cheese 1 cup sugar 4 large eggs 1 cup cream 290ml Blueberry Greens Blueberry Sauce Method Line a 20cm spring pan with baking paper one round piece on the base and a strip for around the sides. Crumb the biscuits by putting them a plastic bag and crushing them with a rolling pin. Mix the crumbs with the soft but not liquid butter. Press mixture into the base of spring pan, using a the back of a spoon. To make the filling, sieve the cream cheese and beat until soft. Using a rotary beater, mix beaten cheese with sugar, eggs and cream. Pour mixture gently into the crumb crust. Pour 2/3 of a bottle of Blueberry Greens blueberry sauce and use a knife to swirl in. Bake at 200*C for 15mins, then at 180*C for 30minutes glaze top with the remaining blueberry sauce and cook for a further 15 minutes until firm in centre. Serve at room temperature. 14.01.2022 Sizzling Prawns in Blueberry Hot Sauce Shell & devein prawns & place in a large bowl Coat with olive oil and the juice of 1/2 a lemon Salt and pepper Then marinade in generous amount of Blueberry Hot Sauce, enough to coat without too much excess. ... Place in fridge for approximately an hour to marinade Pre heat BBQ to a medium heat Drizzle olive oil on the plate then pour prawns and marinade on to hot plate Cook for several minutes constantly moving to stop from sauce burning. Once caramelised place on pre heated hot sizzling plate and drizzle with some more blueberry hot sauce and serve immediately Enjoy we did!! See more

A big thank you to Jenny for making it possible for Blueberry Greens being able to add more variety to Bellingen local food and farmers markets to bring more diversity. Blueberry Greens follow sustainable environmentally friendly farming practices we don’t use any pesticides and only spray fungicides when she have too not spraying the fruit only prior to flower set and after they have been picked, for these reasons I believe Blueberry Greens Blueberries will make a valuable addition to the Bellingen farmers and produce market.

05.01.2022 Dad’s Scones 1938 @ Riverview Nandi QLD Joe Woods (my great Grandfather) a farmer running on a sheep farm in Nandi, outside Dalby QLD; while his wife Marie was away in Toowoomba with their ill daughter Shirley decided to cook the Scones for the shearer’s how hard could it be it’s woman’s work! Well Betty his daughter aged about 9 years at the time found him in the back yard burying that first batch he looked up and and said to Betty I’ve made stones not scones but he wouldn...’t be beaten he persisted until he got the perfect recipe! Passed down through the family I share with you! Ingredients 4 cups of self raising flour 1 cup caster sugar 125g salted butter 1 cup Milk Method Mix four and sugar Massage butter in, until light and fluffy (Or mix with a electric mixer for about 3-4 mins) Add milk and mix until combined should be quite dense Flour a board put mixture on flour roll in flour mould until about 4cm thick. Using a scone cutter, cut and place into a deep dish pan close together about 1-2cm apart. Cook in a preheated oven 200 degrees for 15-18mins until golden. Allow to cool and enjoy!
