23.01.2022 This International Women's Day we salute all the female chefs around Australia - and give a shout out to Team Australia 2019 Commis Chef, Laura Skvor. As well as her star turn in Lyon last year assisting Chef Michael Cole, Laura was awarded 'Best Commis' at the 2018 Bocuse d'Or Asia Pacific. After the 2019 Bocuse d'Or, Laura spent the rest of the year gaining more culinary knowledge in France, and is now working with chef Simon Rogan (pictured next to Laura) at two-star L'Enc...lume restaurant in UK. 20.01.2022 Today we celebrate the life of Paul Bocuse, who passed away on this day three years ago. This picture was taken at a lunch with the revered chef at his restaurant after the Bocuse d’Or 2017 Grand Finale. The event will stay forever in the hearts of the lucky guests. "We all felt so privileged and humbled to share some time with M. Paul, says Philippe Mouchel, who worked with Bocuse for many years.... 18.01.2022 Today Bocuse d'Or Australia joins the nation's culinary community in mourning the passing of John Mangan Miller OAM. John was our first ever President and lead the early teams to compete in Lyon. He remained a solid supporter of Team Australia throughout his working life and retirement. A celebrated educator and culinary leader, John had a lifelong association with William Angliss Institute, first as an apprentice and then an educator. He was an Honorary Life Member of Les To...ques Blanches, a life member of L'Acadmie Culinaire de France [Australie], and was the first Australian to be awarded the distinction of wearing a Black Chefs Hat. In 1998 France awarded him the title Chevalier [Knight] de l'Ordre du Mérite for involvement in the promotion of French Cuisine. John retired from William Angliss Institute in 1992 and earned an Order of Australia medal for service and dedication to French Cuisine and Cookery in food education programs in 2006. It was t...he only international culinary competition to take place during this pandemic crisis. What an incredible adventure for all of us! After a long and dramatically tricky path for all the teams, we have made together the proof that nothing can stop the mighty Bocuse d'Or spirit in his quest to stand for the chefs, for their ability to make us dream and imagine the future. We also showed that the Hospitality and Restaurant Industry is still alive and kicking! We are so proud of you all, candidates and teams, chefs from the organization committees, partners, and of course our friends from Estonia behind Dimitri Demjanov. Your outstanding commitment, the values we share together made it happen. 08.01.2022 Here are some of the incredible platters and plates presented on day one of the Bocuse d’Or Europe, being held in Tallinn, Estonia. This year the competitors had to prepare two courses with these requirements: Theme on a plate: prepare 14 servings of catfish with vegetable garnish, present to judges 5 hours after the start of the competition.... Theme on a platter: prepare 7 whole, boned Estonian quails, keeping the liver and heart, along with 3 mandatory garnishes. One must include a quail egg, the others must only use vegetables, grains and cereals. Day one featured Spain, Denmark, Iceland, Netherlands, Sweden, Georgia, Poland and the home team, Estonia.
